Raw Mango Rice / Maanga Sadham / Quick Mango Rice

Belated Friendship Day Wishes to all My Readers & Blogger friends. Hope you all had a lovely Weekend, mine too went well. I know Mango Season is almost over but only a month back we got Raw Mangoes from Indian Store and tried few recipes with it. Last week posted Instant Mango Pickle recipe. And today I am here with Raw Mango recipe which i made a month back but for some reason other recipes took the priority. Today decided to share this Instant and Quick Mango Rice recipe. A mild tangy and delicious rice with only two simple steps. Perfect for lunch box or you can prepare this for quick Nevadiyam on Fridays. Now off to the quick & easy to make Mango Rice recipe...
Ingredients
  1. Cooked Rice    2 cups (i used Basmati Rice)
  2. Grated Raw Mango    1 cup
  3. Turmeric Powder    1/4 tsp
  4. Ginger    1 tsp (finely chopped)
  5. Dry Red chilli    2 no.s(broken)
  6. Salt    to taste
To Temper
  1. Oil     2-3 tsp
  2. Mustard seeds    1/4 tsp
  3. Urad Dal   1 tsp
  4. Chana Dal    1tsp
  5. Peanuts      2 tsp
  6. Curry Leaves     1 sprig

Method
  • Cook rice and spread it a plate and allow to cool.
  • Wash and peel mango skin and grate it using vegetable grater. Chop ginger and keep everything ready.
  • Now Heat oil in a pan, when it gets heated add mustard seeds and wait till it splutter, then add peanuts and roast till golden brown and add channa dal and urad dal and fry till light golden brown
  • Then add ginger, dry red chilli, curry leaves and stir fry well and add grated mango and turmeric powder and stir fry for a minute, do not saute for long time.
  • After that add cooked and cooled rice, enough salt and stir fry for 1-2 minutes.
  • That's it..Tangy & tasty Mango Rice ready. Serve With fryums or potato fry.
