Badam Katli Recipe | Almond Burfi Recipe | Diwali Special Sweet Recipe - Badam Burfi !

Badam Katli/Badam Burfi recipe with step by step photos. Badam Katli is another easy and equally addictive sweet like Kaju Katli. I wanted to try this Badam Katli for long time and finally last week gave it a try. The first attempt wasn't successful, the burfis turned out too sweet and hard crisp due to more sugar i think. Then again tried with little less sugar quantity and the burfis turned out pretty good. I followed the same recipe of my Kaju Katli and only difference is instead of raw Almonds / Badam I used Blanched Almonds. If you have blanched almonds in hand then you can make this burfi in 15 minutes or less. My kids loved it a lot and I am planning to make it again for Diwali.

Makes 20 katlis
  1. Blanched Almonds  1 cup
  2. Sugar   3/4 cup
  3. Water  1/4 cup
  4. Ghee or Butter  to grease
Follow this recipe to make Blanched Almonds and also dry it well.
Once the almonds are dried, blend it in a blender to a fine coarse powder.
Don't try to get it smooth and do not run the blender for long time and pulse it on and off, else the oil/fat will come out from nuts and make it not suitable for making burfis.
Now in a pan, add sugar and water and cook in medium heat.
Stir well and allow the sugar syrup to rolling boil.
When it started boiling, drop a sugar syrup in a small bowl with water, you will see the syrup forming fine threads.
Then add the ground badam powder and turn the heat to lowest and stir well without any lumps.
And then again turn the heat to medium heat and keep stirring until it form a thick solid mass.
To check whether the burfi is done or not, take a small portion from the solid mass and roll it, if you able to roll it without sticky.
Then it is the right consistency and remove the burfi dough from stove and transfer to a grease parchment paper.
Let it set for few minutes or until it cools down bit.
When it is cooled to warm, grease your hand well with ghee and start kneading the dough.
Initially, it will be sticky but grease your hand with generous ghee and knead well to a smooth dough.
Then slight flat the dough and keep another parchment paper over it and using rolling pin roll it to a 1/4" thick big disc. And then cut into square or diamond shape.
That's it..Yummy Badam Katli/Burfi is ready.
I made the blanched almonds previous day morning and dried it the whole day and overnight, then started the recipe next day morning.
If you fry the blanched almonds in oven, make sure it is not roasted and also cool it completely before grinding.
I didn't grind the almonds to smooth powder, instead a fine coarse like rava/sooji/semolina.
Do not alter the sugar or water content in the recipe, the above recipe will give you a perfect or slightly sweeter katlis.
You can also add pinch of cardamom powder for flavor and saffron for flavor and color.

    1. Yes.,you can use blanched almond flour and start from boiling syrup. Make sure you stir the flour well with syrup without any lumps.
