Broccoli Chapathi Stir Fry


    This is a yummy stir fry with chapathi pieces...a kids loving recipe which perfectly suits for their lunch box..I packed this stir fry for my H's lunch box n he said it was so good to eat for lunch also,remains soft n fresh n tastee too.So you also try this delicious stir fry your Kids.Hope you all like this recipe.You can also try this recipe with Idly n Parotta also. The recipe as follows...



Ingredients
  1. Chapathi    5 no.s(8")(cut in to small pieces)
  2. Broccoli    1 medium size (cut into small florets)
  3. onion   1/2 (sliced)
  4. Cabbage  1/2 cup(thinly striped)
  5. Tomato   1 small (diced)
  6. Cashew nuts   6-7 no.s
  7. Cumin seeds   1/2 tsp
  8. Chilli powder   tsp
  9. Turmeric powder  a pinch
  10. Soy sauce   1 tbsp(i used dark soy sauce)
  11. Tomato sauce    1/2 tbsp
  12. Salt   to taste
  13. Pepper powder    to taste(optional)
  14. Coriander leaves    few finely chopped
  15. Oil     1-2 tbsp
Method


  • I made this stir fry with freshly prepared chapathi,can also use left over chapathis.Cut the chapathi in to small
  • pieces using kitchen scissor and keep aside.
  • Heat oil in a large sauce pan,add cumin seeds wait till sputter and add cashew nuts and fry lightly ,then add onions and saute for a few seconds and add cabbage and stir fry for a minute.
  • After that add tomatoes and saute lightly not  mushy ,followed by broccoli flortes n turmeric powder.
  • Stir fry the broccoli florets for 2-3 minutes and add chilli powder n sauces .
  • Keep stirring and then add about 1/2 cup water and enough salt n bring to boil.
  • When the broccoli sauce gravy starts boiling stir well again n add the chapathi peices and turn the heat to medium and fry the chapathi pieces nicely along with broccoli sauce.
  • Keep frying till all the mositure leaves and chapathi turns light crispy .
  • Lastly add some coriander leaves n pepper powder n turn of the stove.
  • Yummy stir fry is now ready .Serve hot or pack to your lunch.
