Chickpea Kebab

Chickpea Kebab/Chane Ke Kebab Recipe with video, this chickpea kebab is an easy and healthy vegetarian starter that can be prepared quickly and tastes so delicious and filling. You can also serve this Chickpea Kebab/Tikki as a meal along with some lettuce salad & Green Chutney yogurt Dip. If you have cooked or canned chickpeas in hand then the recipe is so easy to make or you can even make the chickpea kebab mix ahead and store them in the refrigerator and make it next day within 10-15 minutes and serve your family. I haven't used mashed potato or plain flour or breadcrumbs to the kebab, chickpea itself binds well and to add little moisture added a tablespoon of Yogurt/Dahi. Chickpea Kebab Recipe/Chane Ke Kebab Recipe

Ingredients

  1. Cooked Chickpeas    1 and 1/2 cup 
  2. Green chilli 1 no.
  3. Carrot, shredded    1/4 cup 
  4. Bell Pepper, finely chopped   2 tbsp
  5. Ginger, finely chopped   2 tsp
  6. Cilantro, finely chopped    2-3 tbsp
  7. Red chilli Powder     1 tsp
  8. Cumin Powder    1/2 tsp
  9. Garam Masal Powder    1/4 tsp
  10. Pepper Powder      to taste ( I added less than 1/4 tsp)
  11. Sesame seeds     1 -2 Tbsp
  12. Corn Flour    2 tsp(I used Yellow Corn Flour)
  13. Thick yogurt   1-2 tbsp
  14. Salt    to taste
  15. Oil    to cook Tikkis/Kebab

Notes:
Use Pressure cooked Chickpeas not the Raw/uncooked ones.
Adjust seasoning to your taste. Adding vegetables makes it the kebab juicy as chickpea tend to dries up.
If you want, can also add 1/4 cup of mashed potato.
Chickpea & Corn Flour itself enough to get nice crispy outer but to make it more crispy and tasty feel free to add 1/2-1 cup of bread crumbs.

Method

  • Soak dried chickpeas/kabuli channa or kondakadalai for 8 hours or overnight, then pressure cook the chickpeas with enough water to 3-4 whistles.
  • Then wait till pressure cools down, allow the chickpeas to cool before grinding.
  • After that take 1 & 1/2 cup of cooked chickpeas and one green chilli in a blender and pulse it to a coarse mix do not add water, just pulsed it for few seconds.
  • After that, transfer the ground chickpeas to a mixing bowl and add carrots, bell pepper, ginger, and all other spice powders, sesame seeds, corn flour, salt, yogurt and combine everything to a smooth dough.
  • Then cover the bowl using cling wrap n refrigerate the dough for 20-30 minutes. This refrigeration helps to bind so that the kebab/tikkis will be firm to cook if not it will crumble while roasting the tikkis( I forgot to chill the dough, the first batch was bit crumbly and delicate to handle but the refrigerated ones holds well and easy to cook.
  • After refrigeration,  divide the dough in to 12 small lemon sized balls, gently press between your palms and keep the kebab/tikkis ready.
  • Then heat a frying pan(cast iron or non stick works bset), add 1-2 tbsp oil spread them evenly all over the pan using a brush, then place 3-4 kebab/tikkis at a time, based on the pan size....and allow to cook for 3-4 minutes after that turn the tikkis other side  and cook until crisp and turns golden brown on both sides.
  • That's it, Chickpea Kebab ready. Serve them hot with Green Yogurt Chutney.

For Green Chutney 
  1. Mint leaves from    3 stems 
  2. Coriander leaves    1/4 small bunch 
  3. Ginger   1/2 inch piece 
  4. Green chilli   2 or 3 
  5. Jeera powder   1/4 tsp 
  6. Chaat masala   1/4 tsp 
  7. Lemon juice     1 tbsp 
  8. Salt & Sugar     to taste 
  9. Yogurt   as needed.
Method
Blend in all the above ingredients to a smooth chutney and Mix it with Fresh Yogurt/Curd and serve this Dip for Kebab/Tikkis/Pakoras.
