Eggless Brownie Recipe / Easy Homemade Brownie Recipe - Eggless Version

Eggless Brownie Recipe
More than a cake with frostings, kids and V loves Muffins & Brownies a lot. Recent times I prefer Eggless Baking more than with Eggs. So, I wanted to try Eggless Brownie for long time, after 3 failure attempts finally got it right this time. First  time the brownies were dry, because of less fat(used half butter & half oil) and then next time I replaced Oil with full butter but the brownie did not hold the shape and started to crumble. Then I reduced the baking time and it was perfect. Next time I tried the same recipe with addition of Warm Coffee & Warm Milk and it turned out perfectly with moist, dense and fudgy Brownies. Kids wanted to have some toppings on the Brownies, so I added some chocolate chips & Chocolate Drizzle, which added additional chocolatey flavor and taste. As you could see from pictures, that chocolate chips were soft and gooey because I cut the brownies when it was still warm.

Eggless Brownie Recipe

Prep Time : 15 Minutes | Bake Time : 15-18 Minutes

Recipe Category : Dessert | Makes : 12 Brownie Squares

Ingredients
  1. Butter, melted  1/2 cup
  2. Sugar  3/4 cup
  3. Vanilla Extract  1 tsp
  4. Milk  1/2 cup
  5. Brewed Coffee  2 Tbsp
  6. Oil  1 Tbsp
  7. All Purpose Flour/Maida  1 cup
  8. Cocoa Powder  1/2 cup
  9. Baking Powder  1/2 tsp
  10. Salt  1/4 tsp
  11. Chocolate Chips  1/4 cup or more as needed
For Chocolate Drizzle
  1. Dark Chocolate  4 oz Bar
  2. Coconut Oil  1/4 tsp

Notes:
*Adding Coffee is optional but it sure enhances the chocolaty flavor. 
*I forgot to add milk along with liquid ingredients and added after adding flour but you can add all the liquid ingredients together with melted butter and mix well and proceed with dry ingredients.
*I used rectangular tray, so the brownies took only 15 minutes to bake if using small square pan the you  may need extra baking time. Check accordingly. Bake until the inserted knife comes out clean but not completely dry.  *To make chocolate Drizzle, melt 4 oz chocolate bar in a microwave safe bowl for 60   seconds, then remove from oven and add 1/4 tsp oil and mix well using a spatula/spoon.

Method
  • Line 9"X7" tray or 8" Square pan with parchment paper and Pre Heat Oven at 350 F for 10 minutes.
  • In a mixing bowl, add melted butter and sugar mix well until sugar dissolves.
  • Then add vanilla and milk and mix everything well using a whisk.
  • To the liquid ingredients add sifted flour, cocoa powder, baking powder, salt and mix everything nicely.
  • Now add 2 Tbsp brewed coffee(optional) and 1 Tbsp Oil mix everything until combined well.
  • After that transfer the brownie mix to the prepared pan, If preferred add chocolate chips as topping and Bake for 15-18 minutes or until done.
  • Mine was done at 15 minutes. Do not over bake. 
  • Allow the baked Brownie to cool in a wired rack. If you want trim off edges and drizzle melted chocolate on top and cut into 12 squares.
  • That's It.. Eggless Brownies are ready to enjoy.
