Deep Fried Asparagus Or Asparagus Pakora/Bajji Recipe with Step by Step Photos. I have more recipes in my draft but in order to overcome my anxiety pangs I decided to cook or bake a recipe to blog at least once a week. And this week, I cooked this Asparagus Pakora/Deep Fried Asparagus. This is a simple and easy to make snack recipe.

We like to eat Oven Roasted Asparagus just like Roasted Broccoli. But, kids did not like the roasted asparagus and for them I made this Yummy and crispy Asparagus Pakora. These pakoras are vegan, gluten free with full of flavor and taste. To mask the slight bitterness of the stem, I added chaat Masala to the batter and it worked very well. My kids loved the pakoras to the core and enjoyed with sweet chilli sauce.

Ingredients
  1. Asparagus   10-12 no.
  2. Besan Flour   4 tbsp(heaped)
  3. Rice Flour   2 tbsp
  4. Baking Soda  a pinch
  5. Salt   to taste
  6. Jeera/Cumin Seeds    1/4 tsp
  7. Hing   a generous Pinch
  8. Chilli Powder     1/2 tsp
  9. Chaat Masala    1/4-1/2 tsp (optional)
  10. Turmeric Powder   a pinch
  11. Cilantro    1 tbsp(finely chopped)
Method
Wash and wipe Asparagus, chop the thick end part and head part, peel a thin layer on the thick stalk stem only and cut each asparagus into 2 halves. If you have thick stem then cut into thin stalk if desired.
Now heat oil in a kadai, let it get hot and meanwhile prepare the batter.
In a mixing bowl, add all the ingredients from besan flour to cilantro and mix well, then using water make it to a medium thin batter, if you dip asparagus in batter, it should be coated with a thin layer of batter. Adjust the consistency, accordingly.
When the oil is hot, dip each asparagus piece in batter and gently drop into the hot oil and cook in medium high heat until it turns crisp and golden brown or the sizzling sound stops.
Once done, remove the fried asparagus using a slotted spatula and drain the excess oil in paper towel.
Repeat the same for rest of the batter and cut asparagus.
That's it...Crispy Asparagus Pakora ready, serve warm with a sweet & spicy dipping sauce.
Notes:
I had some batter left over and I added half of sliced onion to it and deep fried as onion pakora.
You can also use crushed fennel seeds for extra flavor.
Adjust spice powders to your taste, the above recipe is medium spicy.
