Carrot Paneer Kheer Recipe | Paneer Kheer with Carrots

We meet/ get to know many people in our life but very few only found to be same like us in some thoughts n characters and definitely such people will stay in our heart. I got to know such like minded people via this blogging who really luv n care for me n my space. Without the support n warm luv of my blogger frenz i could not reach this level. They never hesitate to appreciate and are my good critics of my space and it means a lot to me. Each one of my blogger friend is so special and am gifted to have them in my life.

Today one of my blogger friend, Shama Nagarajan Celebrating her birthday and as a virtual treat to her, we Priya, Manju & Divya decided to give her a surprise treat by cooking and posting a sweet/dessert recipes from her space. Shama blogs at Easy2cook recipes
Carrot Paneer Kheer
Shama started her blog since 2008 and have posted 600+ recipes.  I chosen Her Carrot Paneer Watermelon Kheer. The combo sounds very interesting and innovative but i don't have watermelon in hand, tried it as a Carrot Paneer Kheer. This is a rich and delicious Milk dessert with the addition of paneer and carrots. Its a easy and different kheer from our usual vermicelli kheer or Sago kheer. And also its perfect dessert idea for potluck or any get together party to impress ur guests. Now off to the recipe..
Ingredients
  1. Milk / Whole milk       2 and 1/2 cups ( i used reduced fat milk)
  2. Paneer              1/2 cup (grated/shredded)
  3. Carrot       1 large
  4. Sugar       1/2 cup ( or condensed milk - 1/4 cup)
  5. Cardamom powder     1/4 tsp
  6. Saffron or food colour      a pinch
  7. Chopped nuts      3-4 tbsp ( i used roasted & chopped cashew nuts n pistachios)


Method
  • Peel the carrots, chop and cook with enough water till it gets soft n tender. Once done puree the carrots with the cooked water and keep aside.
  • Grate paneer and keep ready.
  • Now bring milk to boil in a sauce pan, once it starts boiling turn to medium heat and cook till it gets slightly thicken.
  • After that add sugar, grater paneer, saffron strand or food colour and stir well.
  • Cook for 4-5 minutes and then add carrot puree and stir gently and cook for another 2-3 minutes.
  • Lastly add cardamom powder and chopped nuts, mix well and switch off the stove.
  • That's it..creamy & delicious Carrot Paneer Kheer ready. Serve warm or chilled.

Notes:
Adjust sugar/condesned milk to your sweet level, the above one is a medium sweet kheer.
You can also omit carrot and make it as a plain Paneer Kheer.
If u feel ur kheer to be thick, then adjust it with adding millk.
