Calzone / Tandorri Gobi Calzone / Calzone With Spiced Cauliflower

Its my long time wish to Bake Calzone and it happened last week with successful result. Calzone is nothing but a folded pizza. Typically Calzone is made with usual pizza toppings and mozzarella cheese.  I had already tried Pizza - Veggie Lover'. But this time wanted to try topping/stuffing with Indian touch so i used Tandoori Gobi. First i thought of making it with paneer but felt it would be more filling n added calories, so tried with Cauliflower :) The Calzone turned out so perfect and tasted soft, delicious n spicy with Tandoori Gobi/Spiced Cauliflower stuffing. Its so easy to make and u can choose any desired filling. The recipe as follows...

Ingredients
  1. All Purpose flour    1 and 1/4 cup
  2. Whole Wheat Flour   1 and 1/4 cup
  3. Yeast       1 package active dry yeast or 2 tsp or 1/4 oz
  4. Sugar        1 tsp
  5. Salt           1 tsp
  6. Olive Oil     1 tbsp + 1 tsp
  7. Warm Water   1 cup
Method
  • In a small bowl, add sugar, oil, yeast and salt dissolve with water. Let it rest for 3-4 minutes.
  • After that add 1 cup of flour mix everything until smooth.
  • Then add remaining flour and make it to a soft dough. Now on a well floured surface knead the dough for 6-7 minutes until it is elastic.
  • Lay dough in a bowl containing 1 teaspoon olive oil, then flip the dough, cover and let rise for 40-60 minutes, or until almost doubled.
  • Meanwhile make the filling - Tandoori Gobi and keep ready.
For Tandoori Gobi Filling
  1. Cauliflower       1 medium sized crown(cut into small florets)
  2. Tandoori Masala Powder     1 tbsp( i used store bought masala powder)
  3. Fresh Thick Yogurt/Curd             1 tbsp
  4. Ginger Garlic Paste         1 tsp
  5. Salt       1/4 tsp
  6. Lime juice        1/4 tsp
  7. Oil    1-2 tsp
Method
  • Wash the florets, drain well and microwave for 2 minutes(without adding water) then drain excess moisture and keep aside.
  • In a small bow, mix tandoori masala powder, curd,ginger garlic paste,salt n lime juice to a thick paste.
  • In another bowl, add cauliflower florets and mix it with the prepared tandoori masala, drizzle with 1-2 tsp of oil.
  • Now line a baking sheet with aluminum foil, grease it with cooking spray or oil and arrange the masala coated cauliflower florets and bake it in Preheated oven, 450 degree Fahrenheit for 20-22 minutes or until cauliflower turns crisp n done. No need to cook completely, it should be crunchy.
  • Once done remove from the oven, cool completely
How to make Tandoori Gobi Calzone:
Other Ingredients
  1. Red Onion Thinly sliced       1/2 cup
  2. Green Bell Pepper          1/2 cup(sliced)
  3. Mozzarella Cheese          1/2 cup 
  4. Water       1-2 tbsp(for sealing the edges)
  5. Milk         2 tbsp(for brushing)
Method
  • Once the dough had risen, punch down the air and divide into 3 equal balls.
  • Take one ball, on a well floured surface n using rolling pin roll into 9" circle.
  • To the half of the circle, smear with pizza sauce/tomato sauce then add tandoori gobi 2-3 tbsp, sprinkle with red onions n bell pepper slices, add some cheese, wet the circle edges with water and fold the filling using the other half and press the edges using finger or with fork. Make sure u have sealed the edges tightly and properly.
  • Make 2-3 slits on top and brush the top with milk or egg wash and place it on iron pan or greased baking tray.
  • Do repeat the same for remaining dough and Bake at 375 degrees F (190 degrees C) for 25-30 minutes. Serve hot.
Notes:
For me it took only 22 minutes and within that the top started browning., so keep an eye oven temp may vary.
U can use any desired filling, any type of cheese,
Instead of store bought tandoori masala, u can also use your own spice mix.
U can also use chopped olives, tomatoes for extra topping.

  13. I stopped making bread in recent days as I am not able to knead the dough for long time in kitchen surface. Your calzone is increasing my craving.Atleast I will try the tandoori gobi. stuffing itself looks very tempting.

  24. I love this. I have tried baking calzone once and it became crisp. I mean the covering became crisp not my daughters do not remind me to make pizza also. :)
