Mushroom Paneer Gravy


           Recently saw this mushroom gravy in one TV cookery show,this gravy was made with coconut paste..the recipe was so interesting ..soon I tried this gravy ...this is a delicious n spicy gravy with coconut paste..I added some home made Paneer also to it.Both Mushroom n Paneer are rich in protein n other minerals n vitamins.to know more facts about vegetables n legumes rich in protein content ..click Here.I served this along with multi grain Paratha..on the whole our Dinner was so healthy n filling.


Ingredients
  1. Mushroom   1 Pack-8 oz( chopped or diced)
  2. Paneer   1/ cup (cubes)
  3. Onion  1 large (finely chopped)
  4. Tomato  2 medium (chopped)
  5. curry leaves   1 sprig
  6. Ginger Garlic paste  2 tsp
  7. Chilli powder   1 tsp
  8. Coriander Powder   2 tsp
  9. Garam masala   1 tsp
  10. Turmeric powder   a pinch
  11. Salt   to taste
  12. Cilantro    few finely chopped
To Temper
  1. Oil   1 tbsp
  2. Fennel seeds    1/2 tsp
  3. Clove   2 no.s
  4. Cinnamon   1/2 " stick
  5. Bay leaf    1 small 
  6. CArdamom   1-2 no.s
To wet Grind
  1. Coconut   1/4 cup(shredded)
  2. Fennel seeds   1/2 tsp
  3. Cumin seeds   1/2 tsp

Method
  • Grind the ingredients under "to wet grind" to a smooth paste n keep aside.
  • Heat oil in a non stick vessel,add the tempering ingredients and fry them lightly.
  • Then add finely chopped onions,curry leaves and saute till turns translucent,then add ginger garlic paste and fry till raw smell leaves.
  • After that add finely chopped tomatoes and saute till tomato turns soft n mushy.
  • Now add chilli ,turmeric n coriander powder fry for a minute and add the coconut paste saute for 1-2 minutes ,then add mushroom stir well and add enough salt n water(to desired consistency).
  • Bring to boil, when starts boiling add the paneer cubes ,mix gently and cook for 2-3 minutes.
  • Lastly add some finely chopped cilantro n turn off the stove.
  • Its done...delicious Mushroom Paneer Gravy is ready to serve.
