Coffee Cupcakes | Easy Coffee Cupcakes Recipe | Cupcakes Using Instant Coffee !

Its my long time wish to try Coffee flavored cakes/cookies. And finally Yesterday baked this Flavor rich, soft, light n delicious Coffee Cupcakes. This recipe is from a Book, Cupcakes by Susanna Tee. the original recipe is with Feather frosting, i tried it but couldn't make it perfectly :( Feather frosting is nothing but cupcakes coated icing sugar frosting no cream icing(the one we use for Christmas sugar cookies) then added liquid coffee in parallel pattern. Its little tricky job and i couldn't get it at first time.

But this cupcake doesn't require any frosting, as the coffee flavor dominate more no need of any sweet cream frosting. Becoz of my lil' ones wish I tried Espresso Butter cream Frosting and it suited very well and my kids loved it. I searched for pastry bags,cone but i dunno where i kept and simply spread it using spatula and sprinkled with Cocoa Mix.

Ingredients (Make about 12 cupcakes)
  1. Self Rising Flour     3/4 cup*
  2. Baking Powder         1/2 tsp
  3. Brown Sugar            1/2 cup firmly packed
  4. Instant Coffee Granules      1 tbsp (i used Nescafe)
  5. Butter                         1/2 cup or 8 tbsp
  6. Eggs                            2 no.
  7. Sour Cream                 2 tbsp **
  8. Boiling Water             1 tbsp
* Self Rising flour - If u don't have self rising flour in hand, don't worry, in bowl add 1 cup of all purpose flour, 1 and 1/2 tsp Baking powder and 1/2 tsp salt. Mix everything well and use it in recipe.
** Sour Cream - Sour cream can be replaced yogurt, i used beaten plain yogurt.
Method
  • Preheat oven to 375 degree F/190 degree Celsius. Put 12 paper baking cases in a muffin pan and keep aside.
  • Put the coffee granules in a small bowl, add the boiling water and stir until dissolved. let it cool slightly.
  • In a bowl, sift all purpose flour and baking powder and keep aside.
  • In another mixing bowl, add butter n brown sugar mix it and add egg combine and add flour mixture and beat until smooth.
  • Add the dissolved coffee and sour cream and beat together until well mixed.
  • Spoon the batter in to paper cases.
  • Bake the cupcakes in the Preheated oven for 20 minutes or until well risen n golden brown.
  • Transfer to a wire rack and let cool.
  • Once cooled decorate with frosting or simply serve with chocolate sauce.
Notes:
As the entire taste n flavor of the cake depend of the coffee powder use good quality of Instant Coffe granules.
In this recipe, eggs are the only liquid ingredient it can be substituted with apple juice n vinegar.
For 1 egg - 1 cup of apple juice + 1tbsp vinegar. But not sure of the taste n flavor.
This is very very light, soft n flavorful spongy cake.
