Carrot Rice With Coriander Masala

        Carrot Rice with coriander masala, easy n another quick recipe with carrots n freshly grounded spices.This coriander masala was adopt from the Coriander chapathi recipe,which i saw in TV Cookery Show.I combined this coriander spice powder with carrot rice recipe.This recipe is so flavorful n healthy one perfect for lunch box.No need for any special side dish,u can enjoy this rice with the taste of carrot n fresh smell of coriander leaves n yummy ...Try this!!!

  1. Cooked Rice   1 and 1/2 cup (i used sona masoori)
  2. Carrot   2 no.s(shredded)
  3. Coriander leaves   1/2 (finely chopped)
  4. Onion   1 medium(finely chopped)
  5. Green chilli   2 no.s(finely chopped)
  6. Ginger   2" large piece(finely chopped)
  7. Curry leaves   1 sprig
  8. Turmeric powder   1/4 tsp
  9. Salt    to taste
To Temper
  1. Oil   3 tsp
  2. Mustard seeds   1/2 tsp
  3. Urad  dal   1 tsp
  4. Chana dal   1 tsp
  5. Cahew nut   5-6 
  6. Dry Red chilli   2 no.s(whole or broken)
To Dry Roast n Grind
  1. Coriander seeds   2 tsp
  2. Cumin seeds/Jeera   1 tsp
  • Wash n shred carrots and wash n clean coriander leaves n finely chop it along with the thin stem n keep aside.
  • Heat a pan n roast coriander seeds n cumin seeds for a minute,cool n grind to a fine powder n keep aside.
  • Heat oil in a pan,add the tempering ingredients one by one and fry till dal n nuts turn golden brown.
  • Then add dry red chillies,green chillies,ginger,curry leaves n onion and saute till onion turns pink and add ground coriander cumin powder and stir fry for another minute.
  • After that add shredded carrots ,turmeric powder and fry for 1-2 minutes.
  • Now add half of the chopped coriander leaves, enough salt and mix well and fry for 1 minute.
  • Then add the cooked n cooled rice ,mix everything well and fry the rice along with carrot n spices well and lastly add remaining coriander leaves  and turn off the stove.
  • Its done...yummy n healthy carrot rice with coriander masala is ready to serve or pack to your lunch box.
