Black Beans Mushroom Masala Rice


             I am not much fond of beans/legumes but my hubby likes a lot.  And also strictly order me to cook any beans/legumes at least thrice in a week. I don't like sundal much. So i often make curries/ kuzhambu/ cutlets along with vegs. This time for a change i tried this rice recipe. No planning, nothing instantly i made this with the left over rice. I used black beans and mushroom along with mild spices which all turned out to a healthy flavor packed masala rice. I served with Potato fry with Cajun spices and chips. Simple Raitha will also a good combo for this rice. You can also use basmati rice which gives even more taste and flavor. Now to the recipe..

Ingredients
  1. Cooked Rice     1 and 1/2 cup
  2. Black beans      1/2 cup(cooked)
  3. Mushroom      4 no.s white mushrooms (sliced)
  4. Onion   1 large  (sliced)
  5. tomato   1 and 1/2 (chopped)
  6. ginger garlic paste     1 tsp
  7. Turmeric powder   1/4 tsp
  8. Chilli powder     1 tsp
  9. Garam masala   1/2 tsp
  10. Salt     to taste
  11. Curry leaves    few
  12. Cilantro    2 tsp(finely chopped)
To Temper 
  1. Oil    1 tbsp 
  2. Mustard seeds     1/4 tsp
  3. Fennel seeds   1/2 tsp
  4. Cardamom    1 no.
  5. Clove    2 no.s
  6. Cinnamon    1 " piece

Method
  • Spread the rice in a wide plate and allow to cool completely ( if you are using freshly prepared rice).
  • Cook black beans till tender and then drain and keep aside. 
  • Heat oil in a pan, add the tempering ingredients let it sizzle and then add curry leaves and fry lightly.
  • Then add onions and saute for a minute and add ginger garlic paste and saute till raw smell leaves.
  • After that add, chopped tomatoes and saute till soft and mushy.
  • Now add beans and mushroom  stir fry and add turmeric powder ans saute for a minute.
  • Then add chilli and garam masala powder and stir fry the masala well with the vegs n beans.
  • Add 1/4 cup of water and enough salt , mix well and bring the mixture to boil.
  • When it starts boiling add cooked rice and mix everything gently.
  • Lastly add some finely chopped cilantro and mix altogether well and turn off the stove.
  • It's done..Flavorful and healthy Black beans Mushroom Masala Rice is ready to serve.
