They love paneer in any form, even if it is spicy they don't mind and enjoy it.  Also, paneer is rich in protein and fat it is good for growing kids. Once in a week I cook any paneer recipe for them, last week made this Easy Paneer Kathi Roll for kids as an after school snack. Paneer Kathi Rolls are best when served warm.

Akki Roti is a popular Breakfast recipe in Kannadiga Cuisine, Akki Roti is made out of rice flour, a flavor rich tasty rotis just like Ragi Adai/Roti. This recipe was introduced to me by my neighbor sister in India from whom I learnt to make Restaurant Style Aloo Gobi, Channa Masala, Potato Curry etc. She did graduation in Home Science and very much interested in cooking multi cuisine recipes. I make this Akki Roti often at home and thought I have shared this recipe during my initial blogging days but I didn't. So, Few months back when I cooked this for our weekend breakfast quickly took some pictures and finally today writing this post :)

Oats paniyaram is an Instant recipe that can be prepared using some left over idli/dosa batter. This oats paniyaram is a healthy, yummy and filling dish that can be served for breakfast, dinner or a perfect after school snack for kids. Here, I used store bought oat flour but you can make it home easily by grinding the rolled oats or quick cooking oats in blender and add it to the recipe. It is good to include oats and other whole grains in your daily meal. Whole grains are rich in fiber and low in calories and also they helps to reduce blood cholesterol and aids in good digestion. I use oats, millets, legumes and lentils in my daily cooking along with veggies.
Oats Paniyaram is one such healthy recipe with great taste. To make it even more tasty and crispy I also added some semolina/sooji/rava and rice flour to the batter. This oats paniyaram is not only my kids' favorite V also loved it a lot. If you don't have paniyam pan/Appam pan or Aebleskiver pan no worries, you can use your tawa/griddle or any wide pan and make it as thick pancake or Oats Oothappam. I tried that too, oats oothappam turned out soft and yummy. Now off to the recipe.

Chola Paniyaram / Corn Paniyaram

Today's recipe is one of my favorite Paniyaram, Chola Paniyaram/Sola Paniyaram. For every summer vacation me n my sister go to our Grandmother's House. Those two months were so joyful with our grandparents and cousins. Daily my grand mom used to make some yummy snacks or light tiffin for our evening tea time munch. She often makes tasty Paniyarams for our evening snack with left over idly batter, moongdal and this chola paniyaram. This is traditionally made with sorghum but i couldn't find it here, so i simply tried with Dry Corn kernels(used to make popcorns). Yes, i made this with Dry corn kernels, the idea was supported by the Versatile blogger Priya and Nalini. But this dry corn kernels requires more soaking time at least 24 hours of soaking time. So if u want to make it quicker and easier you can simply try with adding corn meals to idly/dosa batter. Let me try that too and update here soon.
But i am so glad that my experiment doesn't fail and the paniyaram come out so well and tasted too yummy. The pictures are the proof of my experiment :) Like me my kids too love paniyarams and they loved this too. Served this chola Paniyaram with Spicy Tomato Chutney(recipe coming soon). Now to the recipe...

Vegetable Omelet Paniyaram


        I am not much fond of omelet,but my Hubby's favorite..most of his breakfast will be simple omelet and banana or any sandwich & a fruit. My kids also not fond of omelet they like only scrambled or pepper fried eggs...but when I made this omelet in paniyaram pan with mixed vegs,they really liked it very much n finished it off in no minutes and also my son called it as "egg vadai" :) Eggs are rich in protein and is one of the highest quality protein found in any food.Eggs are very good for growing children.

Ragi Adai / Finger Millet Crepes - Diabetic Friendly Recipe!

  
This is Instant Adai, no need for fermentation. my grandma used to make this Ragi Adai for evening tiffin and my favorite too. It can be served with coconut or tomato chutney...i like to eat as such since this adai is made with more onions, chilli, cilantro. So i do not prefer any side dish or a simple pickle is enough for me. This is a very useful and apt recipe for Diabetic Patients, and even good for diet people and pregnant women.

Idly Manchurian/Easy Idly Manchurian


       Idly Manchurian,this is an Indo chinese recipe,very delicious and easy, quick recipe.This is not deep fried idlies...oven fried.for Kids this would be a delicious option instead of having it a plain idly.

Ingredients


Idly Fry
  1. Left over idly    4 no.s(cut in to bite size pieces)
  2. corn flour    1and 1/2 tbsp
  3. Salt    a pinch
  4. orange food color   a pinch(optional)
  • Pre heat oven to300 F                 
  • Take a bowl ,add corn flour,orange food color and pinch of salt mix well.
  • using water make it a thin batter..
  • now mix the cut idly pieces well with the batter.
  • Take a oven safe vessel ,spread some oil and add the idly pieces and bake it for about 10-15minutes or till it become crisp and dry.
For Manchurian sauce
  1. Onion   1/2 (diced or chopped)
  2. Green Bell Pepper   1/2 (diced or chopped)
  3. Garlic   2no.(finely chopped)
  4. Soy sauce   1 and 1/2 tbsp
  5. chilli sauce   1/2 tbsp
  6. Ketchup   2 tbsp
  7. Chilli powder    1/2 tsp
  8. corn flour   1/2 tbsp (dissolved in 1/4 cup water or less)
  9. water    1/3 cup
  10. Salt    1/2 tsp
  11. Oil    2 tsp
Method
  • Heat oil in a sauce pan,add finely chopped garlic and add diced onion and bell pepper.
  • Sprinkle some salt and saute till transparent .
  • Then add chilli powder and fry well.then add all the sauces stir well.
  • Then add water and allow to boil .
  • When it starts boiling add corn flour water and stir well.
  • Keep stirring till it get little thick (like sauce), then add the fried idly pieces and mix gently.
  • Lastly add some chopped spring onions and coriander leaves.
  • Its done!!!  Serve Hot..

Paasiparuppu Paniyaram/Moongdal Paniyaram


   My grandma use to make Paniyaram with rice batter,solam,kambhu,raagi and pasiparuppu.My favorite is sola paniyaram and this pasiparuppu paniyaram .for this paniyaram,she use to make spicy garlic chutney it suits well for this paniyaram.i will post that garlic chutney recipe in my future postings .U can simple enjoy this paniyaram with tomato chilli sauce or any preferred chutney of ur choice.Its simple and less work and very healthy choice too.Recipe follows:

Ingrdedients
  1. Moongdal   1cup
  2. Aval/Poha     1/2 cup
  3. Jeera+fennel seeds     1 tsp
  4. Green chillies/dry red chillies    3-4 no.s
  5. Ginger    small piece(finely chopped)
  6. Curry leaves   few
  7. Coriander leaves    few
  8. Onion     1no.(finely chopped)
Method
  • Soak moongdal and poha for 1-2 hrs and grind both along with jeera,fennel seeds and green chillies  in to little coarse paste with little water.
  • The consistency of the batter should be little thicker than idly batter.
  • After grinding transfer it to a vessel and add chopped onions,curry leaves,hing,coriander leaves and ginger and enough salt.
  • Mix everything well and no need for fermentation...ready to use.
  • Heat a paniyaram pan ,add 1/4tsp or less oil in each hole and pour a spoonful of batter to each hole.
  • Cook in medium flame so that it get cooked well on innerside and outer side crispy.
  • After few minutes turn in to other side using a paniyaram stick or spoon cook for another few minutes.
  • Once it donw transfer to serving plate and serve hot with any chutney or tomato chilli sauce.
