Pav Bhaji Masala Recipe with step by step photo. Today's recipe is a Mumbai Famous Pav Bhaji. Pav means Soft bun and Bhaji is mashed kind of vegetable curry with potatoes and other vegetables. Of all the chaat/street food recipes, Pav Bhaji is V's most favorite dish. I too like it but not much like him and the kids too. They love to have this bhaji masala with rotis, dosa, bread and even with Jeera Rice. So whenever I make bhaji masala for Pav I make it in bulk so that they have it for all three meals with rice and rotis too. I learned this Bhaji Masala from my Neighbor Friend 4 years back when we were in WI. She only suggested me to add a small Indian Eggplant/Brinjal along with potato and other vegetables to make Bhaji. Brinjal adds some nice buttery flavor and taste but it is optional. If using brinjal try to use tender and fresh small brinjals for fine taste.  I always prefer to add more vegetables to the curry but alternatively you can make this bhaji with potato and peas alone. Adding mixed vegetables gives good taste and flavor and also it is healthy. Try my Pav Bhaji Masala next time and do share your feedback. But I am sure, you will love it !

Palak Paneer or Indian Cottage Cheese/Paneer in Spinach Gravy is a North Indian Side dish that is loved by most of the people around the world. It is also one of the most Popular Vegetarian Restaurant Menu. I have tried few varieties of spinach gravy with Potato(Aloo Palak), cauliflower(Gobi Palak), channa(channa Palak), Tofu(Tofu Palak) and Paneer. Of all the recipes I loved this Palak/Spinach curry a lot. This is a very mild palak/spinach gravy without any fancy masala and more ingredients. I got this recipe from my Neighbor Aunt. I have tried this recipe a couple of times and everytime it turned out awesome. This Palak Paneer can be made in a jiffy, this is a must try recipe for those whole love spinach and paneer.

Today's recipe is a simple, flavorful and delicious side dish, Aloo Baingan / Potato Eggplant Curry. Again this is another recipe shared by my neighbor Aunt from whom i learnt making Punjabi Kadi Pakora and Punjabi Garam Masala Recipes. But this time, this Aloo Baingan is prepared by me, where as the Kadhi & Garam Masala are prepared by Auntie and I took pictures alone.

One fine day on a casual talk with her, she said the gonna prepare Aloo Baingan and Rotis for dinner. At first on hearing Aloo Baingan, i Thought that it as Baingan Bharta with some mashed potato and was curious to know the exact method of Aloo Baingan. But than she told me that Baingan Bharta is different and Aloo Baingan is different and also the recipe for the later one. I was impressed with the recipe and the very next day i prepared it at home and shared with her. After tasting it, she said that it is little spicy than her version and perfectly cooked masala and yummy too. Whatelse i want, she never fails to appreciate me after tasting my recipes, Aunt and the whole family loves my cooking and Bhaiya always suggest me to open an Indian Restaurant ;) Yeah, that's my dream too and hope it happens one day !! Chickpeas/Channa is my only favorite legume and i love this chickpeas in any form, that too Channa Masala is my most favorite side dish recipe. I learned this Restaurant Style Channa Masala from my Neighbor, who was a catering student. Not only channa she also shared me the recipes for basic onion tomato gravy for any side dish recipes, Chinese Hakka Noodles, Biryanis and few more. This Channa Masala recipe tastes exactly like the one served in Saravana Grandstyle Restaurant in my home town. This Channa Masala recipe is recipe is very special to me and there's also a short story behind it.

Malai Kofta Curry / How To Make Malai Kofta Curry Recipe

One of the most popular North Indian Curry, Malai Kofta Curry was provided by Nupur for this Month's South Vs North Challenge for South Team Members. SNC is an eveny by Divya Pramil, in which there are two team Southern and Northern Team Members. One of The South Team member will challenge the North team with an authentic south Indian recipe and the North team will challenge the south team with an authentic North Indian recipe and both team will have a month time to prepare and post the recipe on their space. To know More about this event please hop on to Divya's space. As per the event, this Month's North Team host Nupur has challenged the south team with this cream, rich and delicious Malai Kofta Curry. Kofta Curry is nothing but a deep fried kofta, paneer-potato balls in rich, spicy tomato gravy.
This is in my to do list for long time, i have cooked this Kofta curry twice or thrice since it involves lengthy preparation and process i avoid this gravy but this one of my kids' favorite curry. On seeing this month's challenge i decided to try it and thanks to Nupur for this yummy recipe. I slightly tweaked the recipe since i do not like grinding cardamom and mace i skipped it and instead of cashew nut paste and roasted and blended along with onions. Overall the curry turned so good and we loved it. Now off to the recipe...

Green Peas Kachori With Spicy Dum Aloo / Peas Kachori & Dum Aloo

I am happy to be a part of SNC / South Vs North Challenge Event, brainchild of Divya Pramil. SNC has completed a successful year and as a Celebration of SNC Anniversary, Divya announced a lovely giveaway at her space. Last Month itself Divya suggested to try any of the 24 recipes ie 12 recipes challenged by South Team Members and 12 recipes challenged by North Team members. But I couldn't do it last month  and happy that Divya extended the Anniversary Celebration post to this month as well. So here's my post for the Celebration of this great Event. As i joined this just six months back so i have more choice of recipes to try. Of it I tried Green Peas Kachori With Spicy Dum Aloo challenged by Sanoli. This is one yummy combo and my kids loved it a lot. I enjoyed cooking this recipes and thank you Sanoli for this wonderful recipes. I slightly tweaked the peas filling to my taste. Paneer Bhurji - Easy Paneer Recipe


Generally in Puratassi (Tamil month name) Month we do not eat any non vegetarian dishes including egg in this month. Though i am not a NV eater but i like to add eggs regularly in my diet and whenever i am lazy and run out of veggies i mostly prefer Egg Bhurji for my dinner with Chapathis. I love Egg Bhurji a lot and my kids too love it a lot and they can have a extra half chapathi with it :)

Rajasthani Thali

I am glad to be a part of the Event, South Vs North Challenge started by Divya Pramil of You too Can Cook. In which there are two teams, South Team, members belong to the Southern Part and North Team members from Northern Part. Every Month a member from each will Challenge recipe to the opposite teams - A South team member who is hosting will give a challenging Traditional South Indian recipe to the North team and vice versa. I am belong to the Southern Team and this Month Challenge was Rajasthani Thali, hosting by Manjula of Desi Fiesta while Sowmya of South team challenged north team members with Vendhayakeerai paruppu urundai morkuzhambu.
Rajasthani Thali, have once enjoyed this rich and delicious spread in a restaurant years back. And i never thought that i will try those recipes at home and it happened because of this Wonderful Event, so Thanks a ton to Divya & Manjula for Challenging us with Traditional recipes. I enjoyed cooking and eat this Thali Meal. But still i could not make the entire Thali given by Manjula, skipped Goond ki Ladoo, Makki Roti & Panchmel Sabzi. Definitely making it sometime soon. Thanks again Manjula for the yummy recipes. Here;s my Rajasthani Thali :)

Kadai Paneer / Kadai Paneer Recipe ~ Restaurant Style

Kadai Paneer, One of the Easiest Paneer recipe i have tried so far. Kadai Paneer is nothing but a simply, mild spicy & flavorful side dish using Paneer & Bell Pepper/Capsicum with the prepared kadai masala. And the most important part is this dish should be prepared in a kadai/wok. Sounds interesting right? Kadai Paneer is a very quick stir fry like recipe which is made in a Kadai. And thus it got the name "Kadai Paneer". I have tasted this recipe in Indian Restaurants here but recently tried this at home and loved it a lot. Because of fat content & calorie conscious i reduced cooking Paneer, but my kids love paneer a lot and also to feed my blog baby few weeks back tried it. I got the recipe from Dassana's Veg Recipes of India. I slightly tweaked the recipe by adding few finely chopped onions and it turned out so good. Thanks to Dassana for this wonderful recipe, it tasted just like that of Restaurant Kadai Paneer. Lets move on the recipe quickly...

This Tikka Masala recipe is slightly adapted from vahrehvah.com. I recently posted the Tofu Tikka recipe which is served as an appetizer and the same can be added to a creamy and spicy gravy which is served as a side dish with any Indian flat breads n mild pulao.

Dum Aloo / Baby Potato Curry

Potato/Aloo is one of my family favorite vegetable and that's the reason for lots of potato recipes here. Once in a week i make any recipe may be a simpley potato fry, potato kurma for ildi/dosa, potato masal for rotis or anything using potato. Potato is one quick cooking veg and anything with potato will be a hit with kids n adults too.
A month back bought baby potatoes mainly to make this creamy, spicy n delicious Dum Aloo. There are lots of version for this popular Dum Aloo but this recipe is from one of my Friend. The process n preparation might look as difficult but its really so simple and easy to make. This Dum Aloo goes well with Naan, Phulkas, Chapathi n also with some mild. pulao.

Bread Kofta Curry / Veggie Bread balls in creamy Tomato gravy

Its a celebration weekend for us, my kid's birthday and my birthday. we had great fun and yummy foods. We had a small party at our home with few friends of my H. Its a blasting celebration with all their presence n gifts. After all cooking & cleaning am dead tired so took complete rest for two days and back to routine now. This b'day was really special to me. My blogger friends family made it more special n memorable. Some of my friends sent me surprise gifts, ecards and am overwhelmed reading it. Even brought tears due to over joy and it all showed their love n care on me n my family. Really am blessed to have them all in my life. Would love to keep this friendship for ever and praying God for the same. Thanks to everyone from bottom of my heart.
Now coming to the recipe, bread kofta curry mild rich and delicious curry with bread koftas. The bread koftas are nothing but the Bread Veggie Balls which i posted few weeks back. I used few low calorie bread veggie balls(cooked using paniyaram pan) to make this bread kofta curry. The curry turned out so good and we all enjoyed it with  soft Mulit Grain Yeast Free Naan. Hariyali Dal / Greens & Lentils Curry


Today's recipe is easy and healthy, comfort side dish made using Dal/Moong dal and Greens combo. Hariyali means "Green" or Green colored, so Hariyali Dal means dal curry with greens n green color. I saw this recipe in a cookery show long back and had tried this many time and now its one of our family fav side dish. This curry goes well with both rice n rotis. I slightly tweaked the recipe to my taste, very healthy n nutritious side dish. For this recipe i used both Spinach and Methi Leaves and also Cilantro for Greens and Moongdal. But its traditionally made using masoor dal. This is so easy to make very healthy n filling Side dish.

Aloo Methi Mutter Curry / Potato Peas Methi Curry

Today's recipe is rich and creamy curry made with Potato/Aloo-Peas-Methi leaves combo. This is one of my experiment which turned out super doper Hit with my family. A month back H bought one Instant curry mix(dry powder) like spice powder of Paneer Butter Masala, Methi Malai Mutter n one more pack. That spice mix powder gives really a restaurant style taste n it was more liked by my kids especially the Paneer Butter Masala. Its my long time wish to recreate that spice mix at home and wanted to try a curry in that style.

Bhindi Do Pyaaz / Okra Onion Masala

Cooking With Onion is my theme For the 3rd week of BM n for day 1 am going to share Bhendi Do Pyaaz . When Valli announced this theme, very first recipe came to my mind was "do Pyaaz " which means cooking with double the addition of onions or more onions. Generally I love adding more onions to my cooking that too for dry curry, poriyals n stir fry too. This time tried Do Pyaaz with Bhendi/Okra. And it turned out so flavorful n delicious. Remember the tip given by my sister, adding yogurt/curd to any okra dry sauté gives nice taste n sliminess free okra fry/curry. So tried that too, over all Bhendi Do Pyaaz came out so well n tasted delicious. Sure a great combo with Rotis or even with Rice n Dal Tadka. Now to the recipe...

Punjabi Aloo Jeera / Punjabi Jeera Aloo

 
   From this month Radhika's Very popular Blog Hop Wednesday entering in to the new version with simple rules and to a monthly event. Its really nice to meet more people and to know about their cooking styles and attitudes was interesting and we the blog hoppers really enjoying it. As of this month's schedule I am paired with Riddhima of Culinary Vibes. She was introduced to me thru this event only. She is new to this wonderful blogging world and shaping here blog with her style of yummy recipes. For Blog hop i tried her Punjabi Tadka - Aloo Jeera(dhaba style), as potatoes are our fav i couldn't skip this recipe and also its loaded with full n full of flavor. We loved it a lot, But i used oil, where as the traditional recipe is with ghee/butter. Now to the recipe..

Baingan Bharta / Bhaigan Ka Bharta Recipe

     
  Today's recipes is Punjabi Baigan bhartha which means Mashed Brinjal / Baigan means Brinjal and Bhartha means Mashed. The traditional way of this Punjabi recipe includes roasting the eggplant/brinjal in clay oven or directly roast them on fire but i used Microwave. I love this recipe a lot. I came to know about this recipe from Manjula's Kitchen. Later i started experimenting myself. I like to add peas to my baigan bharta it looks and tastes so good. The recipe as follows..

Crispy Potato Wedges In Spinach Gravy / Aloo Palak

                Anything combines with aloo and paneer will be a super hit and result in an awesome dish. In that way, for a change i tried baking the boiled potato wedges with mild spice and added the baked wedges to the Spinach Gravy. Aloo reminds crispy and flavorful , this was a excellent combo and over all my new way of aloo palak was so yummy and I served with Phulka rotis.
Ingredients
  1. Aloo/Potato     3 medium no.s
  2. Spinach    2 cups tightly packed(roughly chopped)
  3. Sugar   a pinch
  4. Green chilli   2 no.s
  5. Onion   1 large  (finely chopped)
To Wet Grind
  1. Cashew nuts    8 no.s
  2. Ginger     2" piece
  3. Garlic    4 cloves
  4. Fennel seeds   1/2 tsp
  5. Poppy seeds   1/2 tsp
To Temper
  1. Oil    1 tbsp
  2. Cumin seeds   1/2 tsp
  3. Clove   2no.s
  4. Cinnamon   1/2" stick
Method
  • Wash and boil the potatoes till soft and tender but not mushy, and then peel the skin and cut in to wedges.
  • Preheat Oven to 375 degree Fahrenheit.
  • Take a bowl, add the cut potato wedges and sprinkle little salt, chilli powder and chaat masala or any desired spices. I used Hot cajun spice.
  • Take a oven safe tray, grease or line a foil paper and spray it with cooking spray, arrange the boiled n spiced  potato wedges  and bake it for 15 minutes or till it turns crisp and firm.
  • Wash and roughly chop spinach and keep aside.
  • grind all the ingredients under the heading " To wet Grind" to a smooth paste and keep aside.
  • Now in a wide vessel add 1/4 cup water n roughly chopped spinach ,a pinch sugar n cook till soft.
  • Then allow the spinach to cool for sometime and then grind to a smooth paste along with 2 green chilli and keep aside.
  • Now heat pan/vessel, add oil when it turns hot add the tempering ingredients a fry lightly.
  • Then add finely chopped onions and sauté till it turns translucent
  • After that add the ground cashew paste and sauté till raw smell leaves.
  • And then add the ground spinach paste , enough salt and stir well, allow the mixture to boil for sometime.
  • Once it starts boiling , add 1 tbsp. yoghurt/thick curd and mix well, again simmer for 2-3 minutes.
  • That's it...Yummy Spinach Gravy is ready.
  • Transfer the gravy to a serving bowl and then add the crispy potato wedges to the Spinach gravy and serve Hot!!!

Notes:
you can also soak cashew and poppy seeds in 1/4 cup warm water for 15 minutes and grind along with other ingredients. This will also give a smooth n fine paste.
Instead baking, you can fry the potato wedges in a pan using 1 tbsp. of oil/butter.

Bhatate Bhaaji / Dry Aloo Sabzi - No Onion No Garlic Recipe



    This is North Indian's Dry sabzi. My North Indian friend used to bring this for lunch along with roti/puri. I wonder this is more or less like our South India Potato Podimas but something makes it more special and different from our regular Potato podimas. Then one fine day we went to her home for lunch, that time her mom served us lunch with this Bhatate bhaaji, puri, peas curry, rice and a sweet. I asked her for the recipe and it was same like the Potato Podimas except the addition of mint and lemon. Yes, these two simple ingredients makes it more tasty and flavorful. If you haven;t tried it give it a try.
