As I do not like adding cream or milk to my soups so I mostly prefer vegan or simple clear soups with any veggies. This Carrot soup is one such recipe with great taste and flavor.  Any crispy bread pairs well with this soup and also makes a perfect weeknight dinner.

I followed the same Vegan Broccoli Soup recipe but instead of roasted broccoli I added carrots. And have seen in many carrot soup recipes with lemon and ginger, here I used lime juice and it paired well. I have made it couple of times and this our family's favorite soup now.
