Vendhaya Kuzhambu Recipe / Arachivitta Puli Kuzhambu

Once in a week I make puli kuzhambu without coconut & vegetables and if it is with veggies, it will be Vendakkai Puli  Kuzhambu with coconut.  I also love kuzhambu with freshly ground Masala and this Vendhiya Kuzhambu is one of my favorite recipe.

Kara Kuzhambu Recipe

After a long time sharing an authentic South Indian Curry/ Kuzhambu Variety - Kara Kuzhambu Recipe. Kara kuzhambu is similar to Puli Kuzhambu with onion, garlic and tomato but in addition there's a special blend of freshly roast and ground coconut masala which gives unique taste and flavor to the kulambu. I used Homemade Kuzhambu Milagai Thool & Coriander Powder. Kuzhambu turned out so good and the bright red color due to Guntur Byadagi Chillies was so appetizing and we enjoyed it with hot rice & Sutta Appalam/Fire roasted papads. Kara Kuzhambu color, taste and flavor everything was amazing and much much better than Hotel Kara Kuzhambu. Not exaggerating just try it and am sure you will accept my words 😀

Once in a week I make puli kuzhambu without coconut & vegetables and if it is with veggies, it will be Vendakkai Puli  Kuzhambu with coconut. My favorite is Puli kuzhambu without coconut with lots of pearl onions(chinna vengayam) & garlic. Puli Kuzhambu tastes best with sesame oil and homemade kuzhambu milagai thool & coriander powder. I always prefer Sesame oil(nalla ennai) for all south Indian kuzhambu recipes except for Masal Kuzhambu.

Kathrikkai Mochai(Avarai) Kottai Kuzhambu | Kathrikkai Mochai Kara Kuzhambu | Brinjal Field Beans(Dry Beans) Curry Recipe

Today's recipe is a popular south Indian Kuzhambu  using Mochai or Avarai kottai, it is called as Val Beans or Field Beans or Dry Lima Beans in English. Kathrikkai Mochai Kara Kuzhambu is similar to Puli Kuzhambu nothing but a tamarind based curry with coconut. We use Kuzhambu Milagai thool for this kuzhambu. The real flavor and taste is achieved only by using kuzhambu milagai thool and tempering with Nalla Ennai(Sesame Oil). This is my Mom's recipe and she always uses Poppy seeds along with coconut to make coconut paste which gives unique flavor and texture to the kuzhambu. But adding poppy seeds is optional but I used in this kuzhambu. Now off to the recipe..

Mor Kuzhambu Recipe
Mor Kuzhambu or Moru Curry is nothing but a buttermilk curry using coconut and lentils. Veggies like Poosanikai/White Pumpkin(Ash Gourd), Vendakka/Okra, Zucchini, Yam or Paruppu Urundai or even Masal Vadai can be used for Mor Kuzhambu. After Marriage, I did not cook Mor kuzhamu for 3-4 years because of V. I hate to cook for myself so, I do not cook mor kuzhambu and only 2 times I made it that too for Blog Post. But, I love mor kuzhambu a lot and can eat Mor kuzhambu for all three meals. Recently my kids too started liking Mor Kuzhambu..Luckily, my kids' taste buds are similar to mine and now I make once in 10 days for we three :)
 I have already shared Paruppu Urundai Mor Kuzhambu & Pachai Urundai Moru Curry recipe and this mor kuzhambu is easy,  without onion and garlic. For Padaiyal/Virunthu, we make this Mor Kuzhambu as it is without onions. This is a simple recipe with lovely flavor and taste. Here, I used White Pumpkin or Ash gourd but you can use any desired vegetable or even paruppu urundai to make this Moru Curry.

Chettinad Pakoda Kuzhambu / Pakoda Kuzhambu is one of the authentic south Indian Kuzhambu of Chettinad Cuisine. Pakoda kuzhambu is nothing but a spicy and flavorful Masala Kuzhambu in which deep fried dal pakodas are added. I wanted to try this kuzhambu since long time and recently saw this in Nalinis space and bookmarked. As today Nalini is celebrating her birthday we friends decided to give her a virtual treat by trying recipes from her space under the theme "Tamizhar Samyal". She is running the same event "Tamizhar Tuesday Event" in which we share Tamil Nadu recipes 2nd and 4th Tuesday of Every Month.

Chicken Kuzhambu / Tamil Nadu Hotel Style Chicken Kuzhambu / Spicy Chicken Curry Recipe

I prepared this Chicken Kuzhambu quite long back, a week before Purattasi and due to other events and special days this Non Vegetarian Post didn't got any attention. Finally, today decided to post it here as it fits to the Event, Tamizhar Samayal Tuesday by Nalini. This is a spicy Chicken Kuzhambu with freshly ground spices and this is traditionally prepared with Country Chicken / Naatu Kozhi. This chicken Kuzhambu tastes exactly like the one which I have tasted in one of the famous hotel, Selvi Mess in my home town. I made this kuzhambu 3 times and every time it turned out awesome, so spicy and flavorful kuzhambu. This pairs well with hot fluffy idlis, crispy dosa or with flaky parottas, biryani and even with plain rice.

Kalan Kuzhambu / Spicy Mushroom Gravy

Kalan Kuzhambu / Spicy Mushroom Gravy is one of the popular South Indian kuzhambu variety that too its popular in South Indian Wedding Dinner. In recent years, have seen in many wedding receptions in my hometown. Many people prefer this Kalan Kuzhambu and Parotta for dinner menu in Wedding Receptions. Even i tasted Mushroom first time in a wedding reception dinner only. I liked this spicy kuzhambu, its so flavorful and yummy with parotta & Ghee Rice. Then my mom got the recipe from a Cook and tried it few times. We all love this mushroom kuzhambu and i love it with hot idlis and with Jeera Rice or Ghee Rice.
If you haven't cooked Mushroom this way, please give it a try to feel the real flavor and taste of this kuzhambu. Dunno why i did not posted this recipe in my space, Thanks to Nalini for starting Tamizhar Samayal Tuesday event, in which one should post traditional or regional recipes of Tamil Nadu on every month's 2nd and 4th Tuesday. Pavakkai Puli Kuzhambu / Tangy Bitter Gourd Coconut Curry

Once in a week i make puli kuzhambu, kind of tangy curry using any vegetable with or without the addition of coconut. This Bitter Gourd Puli Kuzhambu is one healthy way to use bitter gourd and any one can enjoy this kuzhambu without complaining the bitterness of bitter gourd. Since the sliced bitter gourd cooked in tangy tamarind sauce and also the coconut addition mask its bitterness and gives u great taste that even your kids will like it if mixed with rice n topped with sesame oil.
No need to pre-cook or soak in salt water to remove bitterness, just few minutes of sauteing it with onions and the tamarind water does the magic. If u haven't tried bitter gourd this way plz give it a try its very easy puli kuzhambu without much spices n preparation process. Try it once n u will def accept my words :)
Finally today this recipe got chance to publish here, since it was sitting in my draft for more than 3 months, due to some reasons other recipes got the priority. Now off to the recipe...

Poondu Milagu Kuzhambu / Garlic Pepper Gravy

It's snowing continuously for the past three days n now my place looking so beautiful with snow covered everywhere. I like to admire the beauty, particularly the trees n shrubs looks more beautiful. Weather also not too cold above 15 F only. Wanted to click some pics of that heavy snow on my backyard but don't want to take risk since last week for same reason went out to take food pics with snow BG, that time weather was too cold (below 10 F) so I couldn't stay out for not more than 10 minutes n was in hurry to enter n while closing the patio doors I got my fingers stuck between the door and got hurt on my fingers badly, still blood clot on one of my finger hurting me:(

Bottle Gourd Red Chori Kaara Kuzhambu / Sorakkai Kaaramani Kaara Kuzhambu

            Usually i make this kaara Kuzhambu with Brinjal and its one of my Dad's fav kuzhambu. He used to say that my Brinjal Thattaipayir kuzhambu is the best and none can compete with me. Even my mom's preparation is next to mine :) So every time when i prepare this kuzhambu i use to think about my Dad , Miss U all :( Bottle gourd also suits well for this kuzhambu and the best combination is papad/applam. Mung Bean Dumplings In Yoghurt Sauce / PachaPayir Urandai Mor Kuzhambu


          Today's Recipe is Mor Kuzhambu with PachaPayir/Mung bean Urandai. Mung Bean Urandai really suits well with Mor Kuzhambu. This is my style of Mor Kuzhambu with Mung bean dumplings and i just loved  it with hot rice and pickle.  Mung bean dumplings are so healthy n nutritious than the regular tuvar/chana dal dumplings. love mor kuzhambu a lot n with this mung bean dumpling tasted so good n my kids too liked this kuzhmabu n the mung bean dumplings a lot. Vazhaipoo Paruppu Urundai In Tangy Masala Curry


               Another experiment with Vazhaipoo, in the form of Paruppu Urundai in Tangy masala gravy or Puli Kuzhambu.To make the recipe interesting n catchy i named it so :) This tangy curry was prepared with freshly roasted and ground spices.While making this puli kuzhambu i faced a small problem..ie. unfortunately my mixie jar (glass) broken and my grinding part was half done :( Then i managed to grind the spices with my table top wet grinder, as the quantity was too little i found difficult to grind the spices to a smooth paste so i added  half onion and 1/2 tomato (roasted) and finally got a smooth paste.The addition of slightly roasted onion and tomato also gives a nice flavor n taste to the Kuzhambu. So plz don't miss that ...This tangy curry or kuzhambu can be made with or without any vegetables or pauppu urundais. This is so yummy and perfect with rice and idly n dosai. Including my kids we all liked it and i am drooling at the pictures while typing this post :)  the taste was so divine..believe me n try this puli Kuzhambu/tangy curry and enjoy with your family. Don't forget to add Appalams/Pappads as an accompaniment. Here's the recipe...

Garlic Kuzhambu



        This is a spicy n mild tangy south Indian Kuzhambu...one of my mom's recipe. I like this kuzhambu with hot idlies more than with rice. I captured step wise clicks but while copying to picasa becoz of my kids I lost all the pictures of this kuzhambu n mushroom kurma photos :( only these two clicks were saved...So will try to update step wise pictures soon...Here we go

           Thakkali Kuzhambu is an interesting and perfect side dish for Idly/Dosa/Appam variety. And this is one of my Dad's favorite kuzhambu. As today is Father's Day i would like to share some words about my father. For Him,everything was his Brother,though he was cheated and ignored by his brother in Business. Muttai Kuzhambu / Poached Egg Curry


          This type of egg kuzhambu is our family style...we wont add boiled eggs to the kuzhambu, instead we use to pour the eggs directly into the kuzhambu and cook it. This egg will taste so good than boiled eggs...very soft  i like this egg very much. Adding mint leaves  to this kuzhambu is not optional..its also one of the main ingredient...so plz try this kuzhambu with mint leaves. This Muttai/Poached Egg Curry suits well with white rice and idly/dosa also.

Vendakkai Puli Kuzhambu / Okra Tamarind Curry (with Coconut)



       This is a simple puli kuzhambu with coconut paste.One of my friend was asking me the recipe for puli kuzhambu with coconut and muttai kuzhambu...so i prepared puli kuzhambu with okra for Her and to share it on my space. With the same recipe instead of okra you can also use brinjal, drumstick, broad beans, Paruppu urandai or any vegetable of your choice and make this easy & yummy kuzhambu. This time i didn't stir fry the okra on stove top instead i bake it in oven..Oven Baked Vendakkai/Okra.This is very easy n simple job and i got this idea from one of my neighbor cum Friend. Once in a phone conversation she told me this and i thought yeah this is a very simple job if you have oven...The recipe as follows..

Paruppu Urandai Mor Kuzhambu


Ingredient
  1. Curd/yoghurt    1 cup 
  2. Onion    1/4 (chopped)
  3. Mustard seeds   1/2 tsp
  4. Dry red chilli   1 no.(broken)
  5. curry leaves    few
  6. turmeric powder  a pinch
  7. Salt as needed
  8. Oil  1 tsp
To grind
  1. Cumin seeds   1/2 tsp
  2. Rice   1 tsp
  3. Chana dal  1 tsp
  4. ginger   1" piece
  5. Green chilli   4-5 no.s
  6. Coconut    1/4 cup (shredded)  
      Soak rice,dal and cumin seeds in few tbsp water for 10minutes and grind everything to a smooth paste and keep aside.

For Paruppu Urandai 
  1. chana dal   3/4 cup
  2. green chillies   2no.
  3. onion    1-2tbsp finely chopped
  4. Coriander leaves   5 strings(finely chopped)
  5. cumin seeds   1/4 tsp
  • Soak chana dal for 1 hr, then grind chana dal,cuminseeds and green chillies to a coarse paste with little water.
  • Then transfer the grounded chana dal mixture to a bowl and add onions,coriander leaves and salt.
  • Mix well and then grease the idli plates
  • Now take a tablespoon of the dal mixture and make it round balls and keep it in the greased idly plates.
  • Do for all the mixture and steam it for 10-12 minutes or till done.
  • Then allow it to cool for some time.
Mor Kuzhambu 
  • Heat oil in a kadai,add mustard seeds,when it popup add broken red chillies and curry leaves,fry it.
  • Then add chopped onions and fry for 1-2 minutes.
  • Now add the grounded coconut paste and stir well.
  • Add 1/2 cup water,enough salt and pinch of turmeric powder and mix well.
  • Allow this to boil and when it starts boiling add the cooked paruppu urandai/lentil balls to the gravy and stir gently and cook for 2-3 minutes.(cook covered in medium flame).
  • Now add the buttermilk/beaten curd and mix gently.
  • Simmer for another 2-3 minutes and lastly add some chopped coriander leaves n turn off the stove.
  • Thats all ,Yummy paruppu urandai mor kuzhambu is ready .
  • Serve hot with plain rice .
with the same recipe,instead of paruppu urandai u can also add vegetables like ash guord,okra,turnip,

Puli Kuzhambu(without Coconut)


Ingredients
  1. Tamarind     small lime size ball(soaked in warm water)
  2. Sambar onions    7-10 no.s (peeled and chopped)
  3. Garlic    1 full pod(cut into pieces)
  4. Tomato   1 small size(finely chopped)
  5. Curry leaves   1 twig
  6. Coriander leaves   few
  7. Kuzhambu Milagai Thool    1-1.5 tsp
  8. Coriander powder     2 tsp
  9. Turmeric powder  1/4 tsp
  10. Mustard seeds    1/2 tsp
  11. Methi seeds/fenugreek seeds    1/2 tsp
  12. Jeera/cumin seeds    1/2 tsp
  13. Pepper corns   3 no.s
  14. Hing    1/4 tsp
  15. Oil    1 tbsp
  16. Sesame oil    2 tbsp
  17. Salt   ad needed
Method
  • Extract tamarind juice from the soaked tamarind pieces and keep aside.
  • Heat oil in a kadai,add mustard and methi seeds wait till it pop and add jeera,hing,pepper corns and fry well.
  • Then add onions,garlic and curry leaves ,saute them well.
  • Fry till onion and garlic get transparent and add the chopped tomatoes.
  • Saute the tomatoes until it gets mushy.
  • Then add the dry powders-turmeric,chilli and coriander powder,fry well do not burnt.
  • And add the tamarind juice stir well.
  • Add 1-1/2 cup of water ,enough salt and stir well.
  • Keep the heat in medium or low and allo to boil for about 10minutes.
  • Then add 2tsp of sesame oil ,stir well and cook for few more minutes or till oil starts separates from the kuzhambu.
  • Lastly add some chopped coriander leaves and turm of the stove.
  • Let it be in the stove for some minutes.
  • After that the Puli Kuzhambu is ready to serve .
  • for rice serve with papds\appalam ... very nice combination.
  • It goes well with soft idly,dosa,Paniyaram,Aappam etc.

Notes:
You can also add a small piece of jaggery after adding the sesame oil. And vegetables like okra,brinjal,drumstick and dried beans like black beans, red beans, kala channa can also be added to this Kuzhambu with or without coconut paste.
But i like the above recipe more....
If you don't have kuzhambu milagai thool, you can use 1 tsp sambar powder, 1/2 tsp chilli powder, 1/2 tsp cumin powder along with above other ingredients.

Ennai Kathirikkai Kuzhambu/Spicy Stuffed Brinjal Curry is one of my most fav recipe. This is my Mom's signature recipe. I love my mom's preparation, lil' spicy and more flavorful curry, just love it with hot plain rice n topped with lil' ghee..Mmmmm!!!
