Mushroom Masala Recipe
Today's recipe is a spicy, flavor rich and easy to make Chettinad Style Mushroom Masala Recipe. Chettinad Cuisine includes lots of spices like Cinnamon, clove, pepper corns, fennel seeds, star anise and the cooking will not be completed without Chinna Vengayam/Pearl Onion addition. I used almost all the spices except Poppy seeds & coconut in this gravy. I recreated this recipe following my Chettinad Style Vazhakka Varuval This Mushroom Masala makes a great side dish for Dosa, Chapati, Parotta, Naan and even with plain rice. We had it with Homemade Tandoori Rotis.

Kalan Kuzhambu / Spicy Mushroom Gravy

Kalan Kuzhambu / Spicy Mushroom Gravy is one of the popular South Indian kuzhambu variety that too its popular in South Indian Wedding Dinner. In recent years, have seen in many wedding receptions in my hometown. Many people prefer this Kalan Kuzhambu and Parotta for dinner menu in Wedding Receptions. Even i tasted Mushroom first time in a wedding reception dinner only. I liked this spicy kuzhambu, its so flavorful and yummy with parotta & Ghee Rice. Then my mom got the recipe from a Cook and tried it few times. We all love this mushroom kuzhambu and i love it with hot idlis and with Jeera Rice or Ghee Rice.
If you haven't cooked Mushroom this way, please give it a try to feel the real flavor and taste of this kuzhambu. Dunno why i did not posted this recipe in my space, Thanks to Nalini for starting Tamizhar Samayal Tuesday event, in which one should post traditional or regional recipes of Tamil Nadu on every month's 2nd and 4th Tuesday. Chinese Veg Fried Rice / Vegetable Fried Rice - Chinese Restaurant Style

We love Chinese Food - Fried Rice, Broccoli in Hot Garlic Sauce, Spring Rolls, Garlic Chicken, Tofu Coconut Curry and veg noodles are our most fav and constant restaurant order. Once in a month we used to go Chinese Restaurants  - Panda Hut, P.F. Chang's China Bistro. Even my kids love this Chinese Fried Rice. Its my long time wish to recreate their Fried Rice & Broccoli in Hot sauce. And finally made it last weekend for our lunch. Traditionally Chinese Fried Rice are made with a day or two days old Cooked Rice(cold Rice) and also in restaurants they use Jasmine/Long grain rice but I used Basmati Rice. Except the rice flavor n taste, got the 90% Restaurants' Fried rice taste, texture and flavor.

3 In 1 Biryani ~ Spicy Treats Turns One !!!

          I am Happy to share with you all that My Very lil' space had completed one year of successful blogging. Feeling so proud and excited :) But not feeling well by both physically and mentally to celebrate this great occasion. Yet want to share with you all and also my Heart felt Thanks to everyone for your constant support and encouragement. so far i managed to share 340 posts and got so many friends/fellow bloggers.
Its really so amazing that i was blogging for the past 365 days, my very first post was Vazhaipoo Vadai, i started blogging with full passion , my curiosity was to share my known recipes to all. In the beginning i never bothered about my pictures, only 2 pictures- one far view n close up view that's it.. Dunno anything more than that. Later after getting more friends and walking through their spaces i learnt myself that pictures also play a very important role to attract,admire n appreciate their recipes. Hope at the end of one year i am good at my pictures :)

Mushroom Pepper Masala - It's Hot !!!


             This Wednesday is special again since its Blog Hop Wednesday,nothing but a wonderful event by Radhika . Its a great opportunity to meet more bloggers and the best thing of this event is to try out some recipe from the paired blogger. Its really more fun u know, getting more friends, learning some interesting and new things from their blog and above all trying their own recipe. It didn't stop with that alone, we should post that tried and tasted recipe on every BHW. Like that,so far we have successfully completed 3 months with one set of people and eagerly waiting for the new group list and schedule. Kudos to Radhika for all her effort and creativity...
             This week my pair was Priya Sreeram of Bon Appetite. Her blog title and description impressed me a lot..." Bon Appetite"  Cooked with Passion;Served with Love. Cool title isn't??
Wow...her blog is loaded with lots of yummy and healthy vegetarian recipes. Its really a very tough time for me to choose. And bookmarked some 6 recipes from that i tried Milagi Podi and Mushroom Pepper Fry. Usually for my idli milagai podi i wont add sesame seeds for the first time i tried with adding sesame seeds and loved it a lot.
           Coming to this Musroom Pepper Masala, its hot ...yep, really its Hot 'O Hot. My son Sanjay was not feeling well and caught with cold and cough. As this month (till this Monday) was Puratassi, we don't eat any non veg and egg dishes during Puratassi Month or else i would have made Pepper chicken fry. I made pepper rasam to sooth his throat and cough but he was not ready to eat the rasam... He likes Egg Pepper Fry but because of Puratassi my H didn't allow me to make it. So this Musroom Pepper Masala was a big remedy and helped a lot. Generally for any pepper dishes, i use to add freshly ground pepper at the end only but in this recipe she described to add it in the beginning itself. I followed the recipe as such and over all it was so so so so yummy and soothing....Thanks a lot dear sure this will be a keeper recipe and going to try chicken instead of mushroom :) Now to the Mushroom Pepper Masala...

Ingredients
  1. Mushroom     3/4 cup (chopped)
  2. Onion   1 large (diced or chopped)
  3. Green Bell Pepper    1/2 cup(diced or chopped)
  4. Tomato   1 large (chopped)
  5. Garlic    2 cloves(finely chopped
  6. Pepper Powder    2 tbsp ( or adjust to your spice level)
  7. Curry leaves     few
  8. Green chilli    2 no.s(slitted)
  9. Turmeric powder   1/4 tsp
  10. Coriander powder    1 tsp
  11. Cumin powder    1/2 tsp
  12. Salt    to taste
  13. Cilantro    4-5 sprigs(finely chopped)
  14. Oil     1 tbsp
  15. Fennel seeds    1/2 tsp
Method
  • Heat oil in pan, add fennel seeds wait till it splutter.
  • Then add finely chopped garlic and curry leaves fry well and add 1 tbsp pepper powder and fry till it sizzle and flavor comes.
  • After that chopped onions,sprinkle little salt and saute till onion turns translucent.
  • Then add green bell pepper and saute till it turns soft and tender.
  • Now add tomatoes and stir fry until soft n mushy.
  • And add dry powders and stir fry for a minute, and add mushroom and enough salt.
  • Mix everything well and cook in medium heat till it turns soft and cooked.(you can also sprinkle very little water )
  • Now add remaining 1 tbsp pepper powder and stir fry for a minute.
  • Lastly add some cilantro and turn off the stove.
  • Very yummy and hot Musroom Pepper Masala is ready.
  • Serve Hot with Rotis/Puris/Mild Pulav.


Notes:
Please adjust pepper powder amount to your taste...the amount quantity will give you a super hot mushroom pepper masala...
With the same recipe you can also add chicken instead of mushroom and enjoy as Hot pepper chicken...
Adding more onions ans tomato will gives you more taste and quantity.

Black Beans Mushroom Masala Rice


             I am not much fond of beans/legumes but my hubby likes a lot.  And also strictly order me to cook any beans/legumes at least thrice in a week. I don't like sundal much. So i often make curries/ kuzhambu/ cutlets along with vegs. This time for a change i tried this rice recipe. No planning, nothing instantly i made this with the left over rice. I used black beans and mushroom along with mild spices which all turned out to a healthy flavor packed masala rice. I served with Potato fry with Cajun spices and chips. Simple Raitha will also a good combo for this rice. You can also use basmati rice which gives even more taste and flavor. Now to the recipe..

Kadai Mushroom


                 Before going in to today's recipe , I just want to thank all friends who gave comment to my yesterday's post.While reading all your comments i was so touched n got tears on my eyes(due to joy) ...that i got some special wishes on a great day from you all.Most of ur words:  "God Bless u"...at least if one of your words  gets power ,we will live a happy long life :) "Nallathe sonnal Nallathe Nadakkum" Always hope for the positive result ,even if u got negative don't worry He will give u right things at right time..I am so glad that my story have brought some good hopes on some of ur life...May the almighty shower all his blessings to You all.
                Now to the recipe,Kadai Mushroom this is one of my bookmarked recipe.I bookmarked this Kadai Mushroom  from Lavanya's blog on the day i saw it.The recipe n Her picture tempts me a lot to try out this yummy dish.I just added two steps extra from her recipe.One is i added tempering with cumin seeds and the other, In the end i added 1/4 cup pan roasted diced capsicum to the curry.Please click on the recipe name link for the detailed recipe.
I added less butter than she mentioned,you can add the same amount of butter mentioned in the original recipe to get silky n glossy texture and also a very flavorful n yummy kadai mushroom.

Stuffed Paniyaram - Mushroom n Potato Stuffing


            Today Friday, Varalakshmi Vratham an Auspicious Day to Worship goddess Lakshmi.Varalakshmi vratham was observed on second friday of Shravana Masam.(Shravana Masam is the fifth month in a traditional Hindu Telugu calendar followed in Andhra Pradesh. Telugu Sravana Masam 2011 is from July 31 to August 29. )If one could not do Pooja on 2nd friday can worship in any Friday of shravana masam.Lakshmi is the goddess of wealth and prosperity. Worshiping goddess lakshmi during shravana masam was highly auspicious.To know more about Varalakshmi Vratham n pooja Click Here.. I finished my Pooja by morning itself n offered Sweet Pongal,Channa Sunda , Kachayam ,Inippu Aval,Coconut rice n Lemon rice along with some fruits to God.I wish n Pray God on this auspicious day to bless U All n Your Family with all happiness,good health n Peace in your life..


           Coming to today's recipe, stuffed Paniyaram...as i love Paniyaram more i would like to try something new with it.First time tried stuffed paniyaram with mushroom n potato stuffing.the result was so good ,flavorful n enjoyed a lot.My kutties also liked this paniyaram very much.Feeding them right things in right time is a very difficult task for us.Sometimes my kids will not have anything for 2 days no breakfast,bo lunch n no dinner ..only milk n chocolates ...in such cases i need to bring some interesting things in their food n get them attracted .one such dish was this stuffed paniyaram.. My lil' master really liked this very much n not even allowed me to take good pictures...some how managed them n caught some clicks for u :)
Here, will see mushroom n potato filling for stuffed paniyaram..Instead of plain mashed potato i used left over potato masal in this recipe...you can use any stuffing of your choice n enjoy this delicious n yummy stuffed

Ingredients
For Paniyaram Batter
  1. Dosa Batter    2 cups
  2. Cilantro   2 tbsp(finely chopped)
  3. Tempering 
  4. Mustard seeds    1/2 tsp
  5. Urad dal   1 tsp
  6. Chana dal    2 tsp
  7. ginger    2 tsp(finely chopped)
  8. Hing   a pinch
For stuffing :
  1. Mushroom   1 cup(sliced) 
  2. Onion   1 medium(sliced)
  3. Potato    1 large(boiled n mashed)
  4. Green bell Pepper   2 tbsp(finely chopped)
  5. Tomato   1/2 (chopped)
  6. Mint leaves   1 twig(leaves alone finely chopped)
  7. turmeric powder    a pinch
  8. Chilli powder   1/2 tsp
  9. Garam masala    1/2 tsp
  10. Salt  to taste
  11. Mustard seeds    1/2 tsp
  12. Fennel seeds    1/4 tsp
  13. Oil     1-2 tsp
Method
  • Heat oil in a pan,add mustard seeds n fennel seeds allow to splutter,then add sliced onions and saute it for a minute then add mint leaves n green bell pepper and fry for a minute.
  • After that add,chopped tomatoes n turmeric powder and saute lightly and add sliced mushroom n stir fry for a minute.
  • Then add chilli n garam masala powder fry well and cook till raw smell of the masala leaves.
  • Now add mashed potato( i used left over potato masal),enough salt and mix everything well and cook for a minute.
  • lastly add some finely chopped cilantro,mix well n turn off the stove.
  • That's all... mushroom potato filling is ready now.
Method 
To make Stuffed Paniyaram

  • Heat oil in a pan,and then add tempering ingredients fry well and add to batter mix well.
  • Now heat a paniyaram pan, add few drops of oil on each groove n when its get hot, pour batter 1/2 level to the groove and keep 2 spoons of filling and the pour batter like covering the stuffing.
  • Cover the paniyaram pan with lid and cook for 2 minutes and then turn other side gently  and cook till turn golden brown n crisp.
  • Once done...remove the stuffed paniyaram from the pan n serve hot with any desired chutney.
  • with the above quantity you can make 21 stuffed paniyaram.

Spicy mushroom Pasta,no cheese no cream Typical Indian Style Pasta.Very simple n quick breakfast/brunch. I used mushroom n carrot ,you can use whichever veggies available to you. Here i used roasted fennel seeds powder which is completely optional but this fennel powder gives nice aroma and taste to the dish.Try this interesting spicy mushroom pasta this weekend and let me know how it turned out to you...Here we go...

Mushroom Kofta in Spinach Gravy


         This is also my first attempt,few days back i saw Paneer kofta in spinach gravy recipe in TV cookery show.,was impressed and next day itself i tried this curry with some alterations which suits to my taste n also replaced paneer with mushroom koftas.The process seems to be more but very simple n easier onen a worth to give a try :) Usually my Hubby do not like any dumplings/ kofta in curry or kuzhambu but unexpectedly he loved this mushroom koftas and the gravy too. My kids thought this spinach gravy as coriander chutney and enjoyed with rotis. These koftas can also serve as an appetizer/snack my kids enjoyed  as a snack. I fried mushroom koftas in Paniyaram pan,came out really good..

Baked Mushroom Samosa


    Thank you so much buddies for all your concern and  wishes. Do keep supporting and visiting "Spicy Treats"...Thanks a lot to all my readers.Coming to today's recipe,Baked Mushroom Samosa...this is entirely different from real potato stuffed samosa...I tried using mashed banana to make soft smooth pliable dough.Which resulted in thin soft,little crispy samosa after baking...For the filling I used-mushroom,cabbage,green bell peppers..We enjoyed with ketchup alone.so good and i all i can say, a delicious, filling and guilt free snack. Ok lets move on to the recipe...

Mushroom Paneer Gravy


           Recently saw this mushroom gravy in one TV cookery show,this gravy was made with coconut paste..the recipe was so interesting ..soon I tried this gravy ...this is a delicious n spicy gravy with coconut paste..I added some home made Paneer also to it.Both Mushroom n Paneer are rich in protein n other minerals n vitamins.to know more facts about vegetables n legumes rich in protein content ..click Here.I served this along with multi grain Paratha..on the whole our Dinner was so healthy n filling.

           First time i tried this combo,aloo with mushroom in curry form...really this is a wonderful combo and suits perfect with chapathi.I made it less spicy and added whole garam masala n Kasuri Methi for extra flavor .A fantastic go with chapathi/Puri/Naan, etc.

Mushroom Dosa / Mushroom Roast / Mushroom Masal Dosa


       I love eating dosa with filling (cauliflower,carrot,onion,potato,mushroom) more than dosa with chutney/sambar. these varieties of dosa are popular in southern India...Almost in all vegetarian hotels they serve for both breakfast n dinner. Mushroom roast is my own recipe, quite similar to dry curry but tastes great with dosa...Try this !!!

Spicy Mushroom Chops


         My mom's mutton chops recipe...bit changed to my own with mushroom.treat for vegetarian lovers.

Ingredients
  1. Mushroom/Button Mushroom    8 oz Pack(chopped)
  2. Peas   1/4 cup(optional)
  3. Onion   1 big(finely chopped)
  4. ginger   2" large piece(finely chopped)
  5. Garlic   3 large cloves(finely chopped)
  6. Clove   2 no.s
  7. Cinnamon   1" stick
  8. Fennel seeds   1/2 tsp
  9. Turmeric powder   a pinch
  10. Chilli powder   1 tsp
  11. Garam masala   1/2 tsp
  12. Mutton masala    1 tsp
  13. Coriander leaves    4-5 sprigs
  14. Pepper Powder  to taste
  15. Salt     to taste
  16. Oil    2-3 tsp
Method
  • Wash and cut the mushrooms into bite size pieces and keep aside.
  • Heat oil in a pan,add clove cinnamon,fennel seeds wait till it splutter and add ginger-garlic and fry for a minute and add finely chopped onions,sprinkle some salt and fry till onion turns light golden brown.
  • After that,add mushroom,peas,stir fry for a minute.
  • Then add all the dry masala powders and fry for a minute.
  • Add enough salt and sprinkle little water and close it with a lid and cook till mushroom get cooked.
  • Lastly add pepper powder and some chopped coriander leaves, saute for a minute.
  • Thats it..spicy mushroom chops is ready to eat.
  • Serve as a accompaniment of ur choice..
