Today's recipe is a very healthy and filling sabzi using tindora and nutrela(soya chunks). I got this recipe from my neighbor Aunt and slightly tweaked to my taste. Aunty makes such a healthy and interesting sabzi with unique combo of veggies. I loved this Nutrela and Tindora combo, this sabzi is full of protein, fiber and very filling side that pairs well with Phulka. One or two phulka is more than enough for a meal along with 1/2 cup of this sabzi. I did not use tomato in this recipe and instead used curd/yogurt. If you want to make it Vegan, you can use 1/4 cup of finely chopped tomato or even skip tomato and curd and make it plain sabzi like Aunt's recipe.

Today's recipe is a healthy, flavorful and delicious one pot meal Soya Chunks Biryani using Brown Rice. For more than 2 years i am using brown rice for my meals. I have tried more recipes with brown rice before but biryani, this is the first time. For May month's Shh secretly cooking challenge i was paired with Manjula of Desi Fiesta and she gave Brown Rice and Cilantro as the secret ingredients and in turn i gave her wheat flour and Pepper. She made healthy Wheat Dosa with Pepper. And i am here with Soya Chunks Brown Rice Biryani.

Thanks Everyone for your hearty wishes on my Blog's Second Anniversary Post and u all made my day! Thank u so much and with the all your wishes started another New year of blogging with all your support and encouragement. And now coming to today's recipe, If you are looking for a quick, mild and healthy rice to pack for your kids lunch box, then this Soya chunks Pulao is one of the best choice and u can make this within 30 minutes. Soya chunks are rich in protein and its good to include in your diet once in every week. I usually make soya chunks recipes once in 10 days and i love to add it in all my Biraynis. Like me my kids too love soya chunks more so this time made this pulao mainly with soya chunks. To make it even more colorful and healthy added some chopped carrots and frozen peas. The combo turned out so good and we all loved it with Onion Raita. This pulao is so easy to make and very aromatic and tasty pulao.

3 In 1 Biryani ~ Spicy Treats Turns One !!!

          I am Happy to share with you all that My Very lil' space had completed one year of successful blogging. Feeling so proud and excited :) But not feeling well by both physically and mentally to celebrate this great occasion. Yet want to share with you all and also my Heart felt Thanks to everyone for your constant support and encouragement. so far i managed to share 340 posts and got so many friends/fellow bloggers.
Its really so amazing that i was blogging for the past 365 days, my very first post was Vazhaipoo Vadai, i started blogging with full passion , my curiosity was to share my known recipes to all. In the beginning i never bothered about my pictures, only 2 pictures- one far view n close up view that's it.. Dunno anything more than that. Later after getting more friends and walking through their spaces i learnt myself that pictures also play a very important role to attract,admire n appreciate their recipes. Hope at the end of one year i am good at my pictures :)

As here, climate was so cold and dull which again makes me so lazy and not even in a mood to blog, but I have some recipes for this month's events and so wanted to share them within this month end and I am here with today's recipe, Soya Tomato Curry.

Soya Methi Mutter Sabzi


            From my childhood days i love this soya/meal maker a lot. I love this in biryani, my mom makes yummilicious biryani with soya/meal maker.I just love the biryani...yum..yum.. Its texture appearance are similar to meat and the protein content of soya are richer than the meat. Recently started using soya chunks/granules in many forms,(soya granules) curry,(soya)cutlets and soya bread rolls and now with combination of methi n mutter. This is very quick sabzi and more tasty with rotis/puris.

Ingredients
  1. Soya Chunks   1 cup
  2. Methi leaves    from 1 bunch(cleaned n washed)
  3. Mutter/peas    1/4 cup or less
  4. Onion     1 large(sliced)
  5. Tomato   1 large(chopped)
  6. Wheat flour     1 tsp
  7. Chilli powder    1 tsp
  8. Turmeric powder     a pinch
  9. Cumin powder     1/4 tsp
  10. Garam Masala     1/2 tsp
  11. Amchur powder    a generous pinch
  12. Salt     to taste
  13. Oil     2 tsp
  14. Fennel seeds    1/4 tsp(optional)
  15. Cumin seeds    1/2 tsp
Method
  • Take a wide skillet, add 4-5 cups of water , bring to boil and add soya chunks and leave it for 3-4 minutes and drain completely, squeeze the soya chunks to remove excess water and chop them roughly and keep aside until use.
  • Heat oil in a pan, add fennel n cumin seeds allow to splutter then add curry leaves and sliced onions.
  • Saute till it turns translucent and add chopped tomatoes saute for another minute.
  • Now add 1 tsp of wheat flour and stir fry for a minute.
  • After that add, chilli, turmeric, cumin and garam masala powder and stir fry for a minute.
  • Then add chopped soya chunks and mix everything well and stir fry for 1-2 minutes.
  • And add peas , mix well and add methi leaves and stir well and cook with lid for 2 minutes.
  • Lastly add amchur powder and mix well and simmer for few minutes and turn off the stove.
  • That's it...Soya Methi Mutter Sabzi is ready to serve. Enjoy with Hot Rotis/Puris.

            Stuffed Bread are our fav snack cum breakfast.I tried so many stuffing with bread.On seeing Sobha's event Cook It Healthy-Proteinicious theme first ingredients came to my mind was "Soya"..As Soya/Soy Beans/Soya Chunks are rich in proteins when compared to milk, meat, egg. It is a rich protein alternative for vegetarians. I simply tried a easy soya masala for Bread rolls. Soya bread rolls are easy and filling snack.

Vegeterian Keema-Curry with Soya Granules


        This is another treat for veggie lovers.Non-vegetarian preparation for veg ingredient :) The result was so good and very tasty curry..i made this for chapathi,it was a full filling dinner...so aromatic,little spicy v liked it a lot...
To my friend's request from this post i am going to add some nutritional information/benefits(of the main ingredient) to all my future posts...hope useful to u also :)
Soya  ...rich source of protein when compared to milk,meat,cheese n egg...only vegeterian food rich in protien..Research shows that just one serving of Soyafoods everyday is sufficient to exert clinical effects.
Heres the recipe:

Ingredients
  1. Soya Granules(Nutrela)   1 cup
  2. Onion   1 medium(finley chopped)
  3. Tomato   2 medium(finley chopped)
  4. Frozen Peas   1 handful
  5. Coriander leaves  5 sprigs(finely chopped)
  6. Turmeric Powder   a pinch
  7. Chilli powder   1 tsp
  8. Coriander Powder   1 tsp
  9. Salt   to taste
To temper
  1. Oil   1 tbsp
  2. Mustard seeds   1/2 tsp
  3. Cumin seeds   1/2 tsp
  4. Curry leaves   few
To wet grind
  1. Ginger   2" large peice 2 no.
  2. Garlic   5 large flakes
  3. Onion   1 and 1/2 tsp(finely chopped)
To dry roast n Grind
  1. Fennel seeds  1 tsp
  2. Clove   4 no.s
Method
  • Boil 4 cups of water in a wide vessel,when water starts boiling add 1 cup of soya granules,after 3 minutes remove form the stove,drain and wash in fresh water for 2-3 times,drain completely and keep aside.
  • Grind ginger,garlic n onion with little water n keep aside.
  • Heat a pan and roast fennel n clove for 1 minute in medium heat,cool n make it to a fine powder n keep aside.
  • Heat oil in a wok/kadai,add the tempering ingredients and when it splutter add ginger-garlic-onion paste and saute till raw smell leaves.
  • Then add the finely chopped onions,sprinkle some salt and fry till light golden brown.
  • After that add finely chopped tomatoes and saute till it turns tender n mushy.
  • Then add drained soya granules,frozen peas and give it a stir and add all the dry powders and stir fry for 2 minutes and cook covered for another 2-3 minutes.
  • and now add the fennel-clove powder,some chopped coriander leaves and saute for 1-2 minutes.
  • Its done...Delicious vegetarian Keema is ready to serve now.


Note: You can also try this with Soya chunks.. follow the first step n grind n use.I used 1 and 1/2 tsp chilli powder..it was little more spicy...so here i reduced it to 1 tsp for normal spicy...so u adjust according to your taste...

Soya Cutlet/Cutlet with Soya Granules



Ingredients
  1. Nutrela Soya granules     1 cup(boiled)
  2. Potato    1 medium no.(boiled)
  3. Capsicum/Bell Pepper   1-2 tbsp(finley chopped)
  4. Onion   3-4 tbsp(finely chopped)
  5. Chilli powder     1 tsp
  6. Cumin powder    1tsp
  7. Lime   half 
  8. Coriander leaves    1/4 cup(finely chopped)
  9. Salt    as needed
  10. Maida/All purpose flour    2 tsp(mixed in 1/4 cup water n set aside)
  11. Oil     for shallow frying 
  12. Bread crumbs   as needed.
Method
  • Take a vessel add 4-5  cups of water and allow to boil ,then add 1 cup of soya granules and allow to boil for some 5 minutes and rinse in fresh water,then drain and squeeze the soya granules completely.

  • Take a mixing bowl or wide vessel,add boiled soya granules,mashed potato,onion,bell pepper,coriander leaves,chilli powder,lime juice,cumin powder,salt and mix everything well and divide in to 8-10 portions.
  • Heat 1-2 tsp of oil in a pan,take one portion and make a round ball,press it gently and dip it in the maida water and roll in bread crumbs and fry it on the tawa on both sides till become crisp and light brown.
  • Follow this for all the remaining portion,can fry 3-4 at a time(based on the pan size).
  • Serve the fried Soya cutlets with ketchup.
Notes:
With the above portion,u will get aorund10-12 cutlets .
U can also add a tablespoon of finely chopped carrots and beans each.
Boiled and grounded soya chunks can also be used instead of granules.
Instead of pan fry you can also deep fry them (if u like)

This is very simple n basic version of Vegetable Biryani. I mostly make this for Weekend lunch, easy n aromatic preparation. You can add any vegetables of your choice.
