Millet Pesarattu Recipe is a very healthy, protein and fiber rich breakfast which is suitable for all ages and especially perfect for Diet & Diabetic people. Pesarattu is an Instant dosa variety which is prepared with whole moong dal/Green Gram dal. Some people use raw rice to make pesarattu batter which is the original version and the raw rice gives nice crispness and taste to the green gram dosa.

Then I thought I should use my camera since was not happy with mobile pictures. Finally, took it out last week, Cooked few dishes and took pictures. I like oats any kind quick cooking oats, thickrolled, steel cut oats in any form from porridge, dosa, pongal, overnight oats etc but V doesn't like oats and don't even have heart to try it for once, so have to sneak oats in his favorite dosa or adai like Oats PesarattuOats AdaiOats Paniyaram. As I wanted him to have oats 3 or 4 days a week, I cook Adai or this Instant Oats Dosa for our breakfast or dinner. For him I even need to add some more toppings to this oats dosa like Onion Oats dosa(check notes) or Podi garlic Oats Dosa(with Idli podi and fresh grated garlic topping) or Keerai Oats dosa(batter mixed with fresh Drumstick leaves, pic in last collage).

Barley Adai / Barley Lentils Crepes / Barley Paruppu Dosa

This is another Healthy Breakfast / Dinner recipe with more nutritional value, rich in protein, fiber, low calorie and filling recipe perfect to kick start anyone's day. Its good for diet and diabetic people too. This is one of my recent experiment with Pearl Barley and Mixed lentils combo. Though Pearl Barley is low in protein content compared to the whole grain barley but low in calorie and the addition of lentils like Green gram, Orange lentils/Masoor dal, Tuvar Dal, Channa dal, Urad dal makes it a protein packed meal. The Barley Adai / Dosa is a Instant version it doesn't require fermentation and can be cooked soon after grinding. The dosa turned so crispy and tasty and i served with Kadamba Chutney, which i posted last week. The combo was so good and my kids loved this Barley Adai so much. For a change from regular Dosa & Adai, try this healthy and tasty Barley Adai. And also Pearl Barley are very cheap, healthy and easy to use and also available in all supermarket & Departmental stores. Great nutrition in an less or cheap price.

Today is special day for our friends and its a Birthday of a Wonderful Friend of us, Manjula who blogs at Desi Fiesta. Manju is such a sweet person whom I came to know her via Facebook just 5 months back. From the day one i never felt that she is a new friend, she really has some magical power/spark with her which really attracts everyone who talk to her. She is so bubbly, jovial and lovable person with whom i can share both my joys and sorrows. We talk daily and we talk a lot and i got to know more about her. She always bring a smile/laugh on my face while chatting.

Oats Brown Rice Adai / Oats Brown Rice Lentils Crepes

Today's recipe is a South Indian Special, Adai. Adai is nothing but a thick dosa/crepes made of mixed lentils and rice. For a healthier option i tried with oats and brown rice. I am trying to include more Whole grains & fiber rich meals in our diet. I regulary take oats, cracked wheat, whole wheat, finger millets, brown rice in any form but my kids & H not comfortable so to feed them i need to txperiment, then thought to mix this whole grains with their favorite Dosa/Idly/Adai/Pulao etc. And one such experiment turned out to this crispy, yummy & healthy Adai.
Here i used Brown Basmati rice but u can use regular brown rice also but the long grain ones gives nice crispy n tasty adais. You will not find any much difference in taste to that of regular Adai. its more filling and perfect for breakfast to kick start your day. But u can very well serve for dinner. Now to the recipe...

Mixed Bean N Brown Rice Adai / 15 Bean Brown Rice Adai

I used to make Adai once in a week since its rich in protein and taste and of course my favorite too. Especially Adai with Drumstick leaves. Recently i saw adai recipe in Nalini's blog with Mixed bean n dhal which is even more healthy with the combo of more legumes n lentils. I loved that idea and made it using 15 bean mix and Brown rice. The Adai turned out so tasty, crispy n inner soft and delicious. As i used brown basmati rice, the adai/dosa turned crisp. Its nice to add more legumes n lentils to our diet in a super easy n delicious way. My H n kids loved this protein n fiber rich Adai. Even its good for diabetic & dieting people since its low carb and high protein. Good for breakfast n dinner too. Now to the recipe...

Curried Chickpeas Masala Dosa

Today also we are going to see a another Main course entree with Chickpeas/Channa/Garbanzo beans. For this i made, Masala Dosa with curried chickpeas/chickpeas curry. I love dosa with stuffing a lot, i have posted a few variety of masala dosa recipes. Click Here for the recipes. This curried chickpeas recipe was slightly adapted from Thaifood.about.com. For this masala dosa i added few finely chopped onions,cilantro n drops of lemon juice. It tasted so yummy with refreshing flavors. I have tried a similar one with my Tomato Masala Dosa. This curried chickpeas masala dosa is very nutritious and filling...No need for special sidedish but it tasted yummy with Onion Tomato Cilantro Chutney n Sambar. First time i made this recipe with chutney n sambar but on that i couldn't able to click neatly, so again next day i made this curry but with store bought dosa batter...and also didn't get time to make chutney n sambar...on that day i was in hurry n also kids were at home...lots of confusion, so totally forgot to take Curried Chickpeas separately n clicked some closeup shots with dosa alone. If kids are at home, then i can't do any of my work properly...two naughtly boys will be troubling me lot. okk will move onto the recipe...

Baigan Masala Dosa

              Today's recipe is an interesting recipe with a left over dish. I have tried Broccoli Potato Masala Dosa,Cauliflower Masal Dosa,Tomato Masala Dosa,Mushroom masal Dosa and here comes Baigan Masala Dosa with left over Baigan Bharta. This time Eggplant which i bought was too big and i made Baigan Bharta in huge portion. After using it for lunch and dinner and i had some left over. Not willing to eat them again in same way, so wanna tried some masala dosa with Red Chutney. Really it was different and so yummy with Red chutney combo. But on that day my kids were not feeling well, so i couldn't concentrate more on the presentation n picture, Simply i clicked few shots and finished the session. Trust me,Its really worth to give a try. Now to the recipe..

Essence Dosa / Essence Roast ~ My Hometown Special !!


This week I was paired with Prabha of Prabha's Cooking. She is my relative and a good friend. I tried some of her recipes and all were turned out good and even shared my comments also. For Blog hop I decided to make honey cookies from her space but I don't have cashew nuts in hand, then searched for some other recipe and at last decided to make My Hometown special recipe - Essence Dosa. I was wondering how I forgot this recipe to share in my space..My mom makes chicken essence which is our most favorite dish for dosa. I made only once in this 4 years.

Vegetable Paniyaram N Vegetable Oothappam




      I am re posting this recipe as it did not appear in my archive :( Few days back Blogger was not available due to some reason...when it came back the entire post was missing with all your lovely words n again it was there in my blog but when i checked yesterday it was totally missing in my archive,so i want to add this yummy recipe to my archive again....
My kids favorite breakfast.they love paniyaram more to ..play :) hmmm...to them its like small balls they both will be more excited.They both will throw at each others face n they laugh loudly n enjoy the play more than with the toys.

Tomato Roast/Tomato Dosa


     I love stuffing dosa more...like my cauliflower roast,Paneer Potato masal roast n mushroom roast heres another special dosa variety...Tomato roast/Thakkali Roast.My cousin sister use to make this tomato dosa, but i forgot her recipe n tried it in my own way with freshly grounded spices...mild tangy,little spicy and was excellent with dosa.My kutties,like me they also love stuffed/spread dosa than regular dosa with chutney or sambar. Try this !!!

Ragi Vegetable Dosa/Finger Millet Vegetable Dosa


        This is Instant dosa...no grinding n no fermenting...You can have this instantly..My usual ragi dosa is with simple seasoning..but this time i added drumstick leaves(murunga keerai),3 colors bell peppers,cabbage,carrot n onion...i bought murungai keerai this week so wanna to make ragi dosa  n murunga keerai sambar, my favorite.This dosa was so flavored with onion ,keerai n capsicum...really this was so excellent taste..and really a wholesome n healthy.we enjoyed with curd.Coconut chutney suits well for this ragi dosa.
     Nutritional Benefits of Ragi: Ragi, an excellent source of calcium, contributes towards bone health. The cereal is beneficial for growing children and older people who need a constant supply of calcium for healthy growth and maintenance of bones. Ragi shows antioxidant properties, and its phytochemicals contribute towards a slow digestion process. Hence it helps to control blood glucose levels in a diabetic.Ragi, being a good source of iron, can be considered as a useful cereal for anemic patients.

Ingredients

  1. Ragi flour  2 cups
  2. Rice Flour   4 Tbsp
  3. Rava/Sooji   6 tbsp
  4. Salt    as needed
  5. Cabbage    1 handful(thinly striped)
  6. Carrot    1/2 (shredded)
  7. Drumstick leaves    1 handful or more
  8. Red,yellow,green Bell peppers    finely chopped each 1/4 cup
  9. Onion     1 medium (finely chopped)
  10. Ginger   2 tsp(finely chopped)
  11. Green chillies    2-3 (finely chopped) adjust to your taste.
  12. Chana dal      1 tbsp
  13. Mustard seeds    1/2 tsp
  14. Cumin seeds    1 tsp
  15. Curry leaves    1 sprig
  16. Oil   2 tsp + to make dosa.
Method
  • Take a mixing bowl add ragi ,rice flour ,rava n enough salt mix well and using water make it to a thin dosa batter consistency.(sorry forgot to measure water level) and keep aside for 30 minutes.
  • Mean while wash the vegetables and chop to the desired sizes and separate drumstick leaves from its stalk and keep everything ready for seasoning.

  • Heat oil in a pan,add mustard seeds when it pop add cumin seeds and chana dal and fry till chana turn light brown and add ginger,green chillies,curry leaves and onions saute for few seconds.
  • Then add drumstick leaves,cabbage and saute for 30 seconds and add bell peppers and fry for a minute and lastly add the shredded carrot and stir for few seconds and remove from the stove.
  • And it to the prepared ragi batter and mix well.Now the ragi batter is ready to make dosa.
  • Heat a tawa/griddle, pour a ladleful of batter and spread gently in circular motion..make it thick like adai.
  • add oil in and around the dosa,cook in low medium flame (to ensure proper n complete cooking).
  • After 2 minutes flip the dosa and cook till it get cooked and turned little crisp on both sides.
  • Thats it...Yummy ragi vegetable dosa is ready to serve hot .Serve with coconut chutney or any accompaniment of your choice. 
Note: If drumstick leaves is not available then try with any available vegetables or simple seasoning with onion , ginger ,green chillies.Rava n rice flour gives extra crispness.You can also try with adding mushrooms.

       I love eating dosa with filling (cauliflower,carrot,onion,potato,mushroom) more than dosa with chutney/sambar. these varieties of dosa are popular in southern India...Almost in all vegetarian hotels they serve for both breakfast n dinner. Mushroom roast is my own recipe, quite similar to dry curry but tastes great with dosa...Try this !!!
Nutritional Benefits(Mushroom):Mushrooms contain about 80 to 90 percent water, and are very low in calories (only 100 cal/oz).Mushrooms are an excellent source of potassium, a mineral that helps lower elevated blood pressure and reduces the risk of stroke.The latest findings show that white button mushrooms can reduce the risk of breast cancer and prostate cancer.
