Chicken Fry/Varuval Recipe

Today's recipe is a very simple and easy to make Chicken recipe - Chicken Fry/Varuval. This recipe doesn't need any fancy ingredients. Very easy to make recipe but tastes super tasty and spicy. This chicken Fry can be served as an accompaniment for Biryani/Pulao or as a starter too. I used Homemade Kuzhambu Milagai Thool, which is blend of dry red chilli and other spices. Adding curry leaves gives lots of flavor to the chicken fry/varuval but I ran out of it, so used only fresh finely chopped cilantro.

I thought, after sharing my pain with my friends and readers, I will feel bit better but it didn't helped me. I only felt so down and weak, not able to do any thing. Past two days went simply sitting and crying, today somehow pushed myself and started writing this post. Coming to the recipe, Chicken Chalna or Chicken Salna is a spicy south Indian Style Chicken Gravy that is served with Parotta or Idli /Dosa or even with Biryani. This Chicken Chalna recipe is my Mom's recipe and she got this recipe from a Parotta Master who lived as our neighbor in my Home Town. He just gave the hint of the recipe and she recreated it perfectly. This Chalna is tend to be darker in color which we couldn't with natural spices. I think they may use some artificial color to get that deep greenish brown colored gravy. Other wise the taste was similar to the hotel chalna. Tandoori chicken burger recipe with step by step photo. I came across this recipe from a Facebook Page food recipe video. I slightly tweaked the recipe and also instead of shallow frying i baked the chicken patties. I made this Tandoori Chicken Patty Burger last Sunday for our lunch along with baked potato Tots. Baking method is not only healthy but also it gives perfectly tender and juicy chicken. I skipped Egg and Used only breadcrumbs to coat chicken that resulted in crispy crust.
I prepared Mint Flavored Yogurt Dip as spread for Chicken Burger. The patties tasted yum with that dip. Try this Indian Style Baked Chicken Patty Burger for a change from your usual chicken recipes and am sure kids will love it. These patties can be made ahead and also it freeze well.

Plain Biryani or Kuska Biryani is popular in Tamil Nadu Non-Vegetarian Hotels & Restaurants. We never knew that Kuska is not a vegetarian Recipe, since in Hotels they use Meat or Chicken Broth to Make Kuska or sometimes they serve Chicken Biryani or Mutton Biryani without pieces. Then one we happened to saw a piece of meat on our plain biryani pack and from that time we stopped buying it during Saturdays. Plain Biryani/Kuska is prepared using Small grain rice, Seeraga Samba Rice which gives unique aroma and taste to the biryani. The Kuska prepared using the below method gives almost the Hotel style taste and flavor. I have tried with Seeraga Sambar rice but that time I didn't get time to take pictures. Later, I couldn't find Seeraga Samba rice even in Patel Brothers. So, I used Basmati Rice. This is a flavor rich one pot meal that requires Chicken or Meat Broth(I used Chicken Broth), Yogurt, Coconut Milk and mild spices blend. If you are a Biryani Addict, then for a change try this Plain Biryani and enjoy it with some Spicy Chicken Fry & Mutton Kurma.

If you love South Indian Style Chicken Chukka Fry then this recipe is a must try. One of the best chicken chukka fry that can be served as an appetizer or as an accompaniment with Mild Pulao or Plain Biryani or with simple Rasam and Rice combo. After Purattasi Month, last month prepared this chicken fry and plain biryani for Sunday Lunch. This is similar to my Mil's chicken fry. She makes very spicy chicken fry using kuzhambu chicken(chicken pieces cooked from the kuzhambu/Chicken Gravy). At in laws place no one likes chicken served in gravy or curry, they prefer to eat deep fried chicken or chicken chukka roast. So My Mil makes chicken fry from the gravy chicken(without Coconut) and serve the plain gravy with Idli/Dosa. I like my mil's chicken varuval and it is different from my Mom's recipe. Later came to know the method and secret ingredients are homemade spice powders. I have tried this chicken fry few times and last time clicked some pictures to share here.
As I planned to make Plain Biryani / Kuska Biryani, I needed broth, so instead of preparing kuzhambu or gravy I simply boiled chicken with enough water and used boiled chicken to make this easy and spicy roast. For this chicken Roast I recommend to use Homemade Chilli Powder(with lentils &spices) or Kuzhambu Milagai Thool for authentic taste and flavor. Also use Sesame Oil or Peanut Oil. Easy and simple way of making Chicken Biryani using Pressure Cooker / Pressure cooker chicken Biryani recipe with step by step photos. At home, everyone loves Biryani/Pulao, at least once in a week or once in 10 days I cook Biryani or Pulao for them. Chicken Biryani is my most favorite of all and even my kids love it a lot. I usually prefer simple and one pot recipes on weekends and I very rarely make Dum Biryani or Layered Biryani. One pot cooking is not only easy also it saves
time spending in the kitchen especially during weekends. Pressure cooker Chicken biryani is a simple version of biryani with great taste and flavor.
As chicken does not take more time to cook,this whole cooking process takes 30 minutes or less time. A complete meal in 30 minutes or less. Here, I used 1 cup coconut milk but you can skip or replace it with yogurt or chicken stock or simply cook with water. Coconut milk enhances the taste and flavor also using chicken or meat stock/broth gives rich flavor to the dish. I have already share Chicken Biryani using Yogurt recipe and today lets see the easy pressure cooker method using coconut milk.

Kozhi Milagu Kuzhambu | South Indian Pepper Chicken Curry Recipe with step wise pictures. Today's recipe is a spicy, flavorful and healthy chicken curry that is prepared using freshly ground spices & Pepper corns. For the first time, tried a chicken recipe of my own. Generally, I hesitate to experiment with non-veg recipes and always follow my mom/mil's recipes or from websites.
But this time, wanted to try something different and healthy curry recipe with Pepper corns. I have already shared a vegetarian Poondu Milagu Kuzhambu recipe, keeping a base of that recipe I tried this kozhi milagu kuzhambu and it turned out so good with lovely dark brown color and flavor. It tasted so spicy and yummy with thinai Idli/millet idlis & plain rice as well. I made this 2 weeks back for our weekend breakfast along with idlis. It was slightly spicy for my kids but still they loved it with idlis. Perfect Hot & spicy curry for this cold weather.

Hyderabadi Chicken 65 is little different from the regular version, where the deep fried chicken is sauteed with spicy yogurt sauce. Few weeks ago I happened to watch this recipe video on you tube in telugu language by a popular restaurant's chef and impressed with it. Then I remember about the chicken 65 which we had in one of the restaurant near my place, it was really different from regular chicken 65 and the chicken pieces were nicely coated with spice powders. I thought they used to saute in spices after deep frying the chicken and tried it that way as per my guess. But the result was not good and chicken pieces turned dry and the masala did not coated with the chicken. Then after seeing that video I came to know that they use yogurt. At first I hesitated to try with yogurt, then first time tried with small amount for chicken and to my surprise it turned out good and it tasted almost same like the one we had in restaurant. Then decided to share it on my blog too. If you haven't tried chicken 65 this way, please give it a try this weekend, I am sure you will love this spicy, juicy and flavorful chicken 65.

Biryani itself a treat and if it is Hyderabadi or Mughlai Biryani then it is a double treat with double richness, double flavor and double taste. When it comes to Non-Vegetarian recipes I also wanted to try different recipes and cuisine. For the first time tried Mughlai Cusine and loved this Mughlai Chicken Biryani. The tastes of Mughlai cuisine vary from extremely mild to spicy, and is often associated with a distinctive aroma and the taste of ground and whole spices.

Mughlai Chicken Biryani is an Exotic Biryani with the richness of nuts, butter and unique aroma of freshly ground spices. This is a layered Biryani type that, is chicken gravy and rice is cooked separately and then both combined as layers in a pot and cooked in low heat by Dhum method. I referred an easy recipe from a youtube video and slightly tweaked to my taste. Most of the recipe uses food color to differentiate the layers but, i used saffron milk that, added nice aroma and yellow color to the rice. Do not worry about the color, Biryani tasted awesome. For a change, to impress your family just give it a try and share your feedback. The list and preparation may look bit lengthy and confusing but it is simple and easy to follow with the step wise pictures.

When My BIL visited us on this May, he brought me a Cook Book, Veetu Samayal by Chef Damu which he bought long back in Chennai Book Fair.  It is My very first cook book that too one of my favorite Chef, Damu's. I have tried so many recipes of him which I watched in his TV shows and this is the first time I cooked a recipe from his book. This Cookbook contains more than 150+ recipes from simple daily cooking recipes to biryani/pulao and also some popular North Indian recipes. Very simple book without pictures with easy instructions. Its a vegetarian book, and I tried the Chettinad Saiva biryani recipe with chicken and it turned out so flavorful, spicy and delicious. Also i used Seeraga Samba rice which i bought from Patel Brothers in Devon Avenue last month. Its been more than 6 years i tasted Seera Samba Biryani and finally happy to see the 2 kg rice bag in Patel Brothers. Without a second thought, bought the packet and tried this Chicken Biryani, Kuska/Plain Biryani, Ambur Biryani recipes. I prepared this biryani in a hurry with guests at home, so did not take step wise pictures will update it later. Don't scared about the long list, its all spices only, the method is simple with great authentic taste and flavor. Now off to the recipe...

Cutlets are a deep fried patties that can be made with veggies, meat, fish, paneer, tofu, beans and more. I often make patties/tikkis with veggies and legumes for my kids snack. They love to eat tikkis more than other snacks and these tikkis/cutlets are one easiest way to feed veggies to my kids. This time for a change tried with chicken, unlike other chicken recipes, chicken cutlets are easy to make if you have cooked potatoes and chicken in hand. You can also use any left over chicken from curries, chicken fry. I used the pressure cooked chicken which i made Chicken dry Curry recipe. Since i spiced the chicken already, i did not add much spices to my chicken-potato mixture. If you are using just boiled chicken adjust spices to desired taste and spiciness. I referred vahchef's chicken cutlets video and tweaked it to my taste. Here you go.,

As I am getting request to post more chicken & fish recipes from my readers, I wanted to try some new chicken recipes so that i can share for my readers. So, this time i tried this simple and spicy chicken dry curry recipe. Actually i started to try chettinad or Andhra style chicken dry curry. But most of the recipe calls for dry roast, grind and multiple preparation. So i tried it in my own way with simple recipe. Instead of roasting I ground the spices as such and used it for tadka. This way the chicken curry absorbed all the flavors from the ground spice mix and turned out so flavorful and spicy also. We had it for our lunch along with plain rice and rasam, a satisfying weekend meal!

Chicken is the only meat we eat once or twice in a month. And i mostly prepare a curry or Biryani every time. But because of my Blog and readers' request I started trying few other chicken recipes like Chicken Kebab, Chicken Cutlets and this Chicken Pasta. Chicken Pasta is something unusual and new recipe which i tried it for the first time with my own recipe, this is completely not a Indian version & not a fusion too. Its a simple and yummy Chicken Pasta with mild spices which is perfect for kids. This chicken pasta turned out so good and my kids loved it a lot. I added only couple of tablespoons of carrot and capsicum to make it more filling and colorful. You can add your desired veggies or make it a plain chicken pasta. Now off to the recipe

Chicken Manchurian / Chicken Manchurian Recipe / Dry Chicken Manchurian

Manchurian is an Indo-Chinese Starte. It can also be served as a Side for Fried Rice. Manchurian can be Vegetarian like Vegetable, Gobi, Paneer, Baby corn, Mushroom or even with idly/ Idly Manchurian. And Non-Vegetarian like Chicken, Fish, Egg, shrimp and more. Of all the Manchurian recipes, chicken Manchurian is my favorite. Even my kids love this Chicken Manchurian more than the Gobi Manchurian. There are tons of method to prepare this Chicken Manchrian, Today I am sharing the simple and easy to make version. This is a Chicken Manchurian Dry Version. Like my Chilli Chicken recipe, here also I did not use Vinegar, Chinese Salt, artificial food colour and for colour i used kashmiri red chilli powder. And for the manchurian sauce i used corn flour and water instead chicken stock. Chicken stock sure gives you nice flavor and taste that too if you making a manchurian gravy. Now off to the recipe.

Chicken Kuzhambu / Tamil Nadu Hotel Style Chicken Kuzhambu / Spicy Chicken Curry Recipe

I prepared this Chicken Kuzhambu quite long back, a week before Purattasi and due to other events and special days this Non Vegetarian Post didn't got any attention. Finally, today decided to post it here as it fits to the Event, Tamizhar Samayal Tuesday by Nalini. This is a spicy Chicken Kuzhambu with freshly ground spices and this is traditionally prepared with Country Chicken / Naatu Kozhi. This chicken Kuzhambu tastes exactly like the one which I have tasted in one of the famous hotel, Selvi Mess in my home town. I made this kuzhambu 3 times and every time it turned out awesome, so spicy and flavorful kuzhambu. This pairs well with hot fluffy idlis, crispy dosa or with flaky parottas, biryani and even with plain rice.
