I thought, after sharing my pain with my friends and readers, I will feel bit better but it didn't helped me. I only felt so down and weak, not able to do any thing. Past two days went simply sitting and crying, today somehow pushed myself and started writing this post. Coming to the recipe, Chicken Chalna or Chicken Salna is a spicy south Indian Style Chicken Gravy that is served with Parotta or Idli /Dosa or even with Biryani. This Chicken Chalna recipe is my Mom's recipe and she got this recipe from a Parotta Master who lived as our neighbor in my Home Town. He just gave the hint of the recipe and she recreated it perfectly. This Chalna is tend to be darker in color which we couldn't with natural spices. I think they may use some artificial color to get that deep greenish brown colored gravy. Other wise the taste was similar to the hotel chalna. Instead of Chicken, You can even use vegetables to make vegetable chalna. Now off to the recipe...

Today's recipe is a spicy Egg Curry that is prepared using freshly ground spices & tomato puree. The preparation process may look difficult and time consuming but actually you can make this curry in a jiffy. Last Week, I prepared this Egg Curry for our Dinner. At home, kids were sick and I wanted to make something spicy for them and this Egg Curry using freshly ground spices came to my mind. Also, i wanted to share this recipe here, so without any second thought prepared and clicked it. I served this Egg Curry with Jeera Rice for kids and I had it with rotis. Egg Curry pairs well with both rice & rotis.

I was caught with cold & sinus headache so I could  not able to post Kitchen Basics Recipe last weekend. I will try to be regular with my post in coming weekends. Now coming to today's recipe Mutton Kurma, Mutton Kurma is a mildly spiced flavorful and rich curry using Mutton-Cashew Nuts-Poppy seeds combo. After my own try with Kozhi Milagu Kuzhambu I got confident to try few Non-Veg recipes of my own. And this Mutton Korma is my own creation, keeping the vegetarian Kurma recipe in mind I tried the same with Mutton. Only thing I added extra was Yogurt. Addition of fresh yogurt/curd gives nice texture and taste to kurma. If you haven't tried Mutton curry recipe with yogurt, next time try to add couple of tbsp of yogurt and you will be surprised with the taste and texture of the curry. And along with Mutton I wanted to add some aloo/potato & peas too. But I don't have peas in hand, so added potatoes alone.

Kozhi Milagu Kuzhambu | South Indian Pepper Chicken Curry Recipe with step wise pictures. Today's recipe is a spicy, flavorful and healthy chicken curry that is prepared using freshly ground spices & Pepper corns. For the first time, tried a chicken recipe of my own. Generally, I hesitate to experiment with non-veg recipes and always follow my mom/mil's recipes or from websites.
But this time, wanted to try something different and healthy curry recipe with Pepper corns. I have already shared a vegetarian Poondu Milagu Kuzhambu recipe, keeping a base of that recipe I tried this kozhi milagu kuzhambu and it turned out so good with lovely dark brown color and flavor. It tasted so spicy and yummy with thinai Idli/millet idlis & plain rice as well. I made this 2 weeks back for our weekend breakfast along with idlis. It was slightly spicy for my kids but still they loved it with idlis. Perfect Hot & spicy curry for this cold weather.

Most Favorited and popular recipes of Spicy Treats' are Non-Vegetarian recipes and also I get more request for Chicken or Non-Vegetarian recipes. So mainly to share here, I cook Non-Veg recipes once or twice in a month. And this time it is Mutton Kuzhambu / South Indian Style Mutton Curry and it is my Mom's recipe. This is how My mom makes Mutton Kuzhambu at home, simple Pressure cooker method with Mutton Masala Powder. But My Grandma's recipe is different and she never used store bought Masala Powder, with freshly ground spices. Also My Grandma add few Potato pieces and Drumstick to the Mutton Kuzhambu. That gives different flavor and unique taste. Will share that recipe later.
This Mutton kuzhambu recipe is easy to make with less preparation process. We usually add few mint leaves to Non-Veg Kuzhambu that really gives lovely flavor and taste. Mutton kuzhambu pairs well with Idli/Dosa/Appam/Parotta and with Plain Rice & Biryani also. We had it with Idlis for breakfast and with rice for lunch.

Today's recipe is a spicy, flavorful and mouth watering Andhra chicken curry/Andhra Style Chicken Curry recipe. As I am getting request to post more chicken & fish recipes from my readers, I wanted to try some new chicken recipes so that i can share for my readers. So, this time i tried this simple and spicy chicken dry curry recipe. Actually i started to try chettinad or Andhra style chicken dry curry. But most of the recipe calls for dry roast, grind and multiple preparation. So i tried it in my own way with simple recipe. Instead of roasting I ground the spices as such and used it for tadka. This way the chicken curry absorbed all the flavors from the ground spice mix and turned out so flavorful and spicy also. We had it for our lunch along with plain rice and rasam, a satisfying weekend meal!

Hope u all had a wonderful weekend n the US people definitely had a fun filled 4th July Celebration. We too enjoyed this 4th July celebration. We had a wonderful Festival in our City to celebrate the Independence day, it was so colourful n grand festival, my kids enjoyed it to the core. I wanted  to share some pictures of that Grand Festival here and took my SLR too but there was too much crowd than i expected and it was really tough to manage my energetic boys running here n there, so couldn't able to take pics but we had good time there :)
Now coming to the recipe Kongu Nadu Kozhi Kuzhambu, a spicy n flavorful Chicken Kuzhambu popular in the Kongu region, Western Part of Tamil Nadu- Coimbatore, Erode, Namakkal, Karur, Dharmapuri & including Salem( My Home Town) districts. Kongu Nadu recipes uses more Spices like Chettinad Cuisine and use freshly roasted n prepared masala/spice powders in their recipes. Full of flavors and taste and spicy too.

Chicken Curry Masala / Easy & Quick Chicken Curry

Its been a while i made any non vegetarian recipes even eggs at home due to shifting & other process and my kids started asking for chicken. So few days back made this chicken curry & chicken 65 for lunch. This time wanted to try a new chicken curry recipe from my regular version. And luckily got a recipe printed on back of the chicken curry masala powder pack. The recipe sounds interesting n also with less ingredients n spices. Usually most of the Non-vegetarian curry recipe involves more spices, process/preparation n takes little extra cooking/sauteing time than the regular vegetarian cooking, but this chicken curry masala needs very less time than any other chicken curry that too with less ingredients n spices with no comprising taste. So without any second thought slightly tweaked the recipe to my taste and made this easy chicken curry masala. This is a very quick process, even a beginner in cooking/bachelor can make this chicken curry in a jiffy. We always wanted out chicken curry to be spicy so i made to super hot n spicy as it looks. This curry masala goes well with Naan, rotis, paratha, dosa n with rice/pulao also. We had with plain parathas n it was so Yumm n flavorful. Now off to the recipe..

Chicken Kuzhambu / Easy Chicken Kuzhambu Using Pressure Cooker / South Indian Style Chicken Curry


Thank u friends for your idea to make blue color paratha for my kid, most of u suggested to try with Blueberries...hmm, that's really an interesting choice n now i got a recipe in my mind and soon will try it and share here :)
Right now kids liked the red paratha more, somehow am managing with dosa/Adai/tomato chapathi for dinner, once he get bored then he will ask for blue or some other color:)
Now coming to today's recipe Chicken Kuzhambu, again this is my Mom's version. Of her all non vegetarian preparations I love this kuzhambu n chicken curry more. Compared to vegetarian my mom is great in cooking NV recipes, all our relatives love her chicken recipes n meen kuzhambu.
I like to have this chicken kuzhambu with idly/dosa. Last Sunday made idly n this kuzhambu for our breakfast.

Chicken Korma

   
              After a long time i am posting a non-veg recipe.I am not much familiar of non-veg recipes n also we eat only chicken that too monthly once or twice.very rarely i cook fish fry for kids.So every time i cook chicken i use to refer all my bookmarked chicken recipes from all your blogs.This recipe also i saw it in You tube video n changed bit to my taste ,cashew n poppy seeds based gravy.This is so rich n creamy kurma,so flavorful n yummy with biryani, idly/dosa n chapathi/parotta also.

Ingredients
  1. Chicken    1 lb or 1/2 kg
  2. Onion   1 large(finely chopped)
  3. tomato  1 large or 2 medium(finely chopped)
  4. Ginger Garlic paste    2 tbsp
  5. cilantro    1 handful (finely chopped)
  6. Chilli powder     1 and 1/2 tsp
  7. Coriander powder    1 tsp
  8. Turmeric powder    1/4 tsp
  9. Salt    to taste
To temper
  1. Oil    2 tbsp
  2. Cumin  seeds   1/4 tsp
  3. Mustard seeds  1/2 tsp
  4. Fennel seeds   1/4 tsp
  5. Curry leaves    2 sprigs
To roast n grind
  1. Poppy seeds/Khas Khas    1/2  tbsp
  2. Fennel seeds    1 tbsp
  3. Clove    5 no.s
  4. Cinnamon    2"stick  2 no.s
  5. Green chillies    3-4 no.s
To wet grind
  1. Coconut   1/2 cup(shredded)
  2. Cashew nut     7-8 no.s(whole)
  3. Poppy seeds   1/2 tsp
Method
  • Wash n clean chicken pieces n keep aside.
  • Heat a pan n dry roast all the ingredients under"to roast n grind" lightly and grind it to fine powder or paste  n keep aside.
  • Grind coconut,poppy n cashew nut to a fine paste n keep aside.
  • Heat oil in a pressure cooker,add the tempering ingredients and allow to splutter then add onions and saute for a minute and add ginger garlic paste.
  • Saute onion-ginger garlic paste well or till raw smell leaves.
  • Then add chopped tomatoes and saute till turns soft n mushy.
  • Now add chicken pieces n turmeric powder stir fry for 1-2 minute then add ground masala powder,chilli n coriander powder stir fry the chicken pieces with all the masala for 4-5 minutes.
  • Then add 1/2- 1 cup water handful of coriander leaves, enough salt and pressure cook for 1 whislte and allow the pressure to cool down.
  • Once it done open the cooker and add the coconut paste and cook in medium heat till coconut masala get blended n oil shows on top.
  • That's it...very yummy n rich chicken korma is ready to serve.

Vegetable Kurma


       This is excellent combination for chapathi,puri,Parotta...I made this for chapathi  with adding less water n i thicker consistency.Really it taste gud and more flavorful. This kurma goes well with South Indian Style Parotta. make it very thinner, really it taste like hotel parotta kurma. I made it little spicy, please adjust green chilli n other spices to your taste...the mentioned below will yield you a spicy kurma. I used 1/2 medium broccoli,1/4 potato,3/4 cup chopped carrot n beans,1/4 cup peas...you can use any available vegetable.

Milagai Chicken Curry/Chilli Chicken Curry


        As the name indicates,Chicken curry cooked with green chilli paste and other spice ingredients.Green chilli is the main ingredients.I used only 300gm of chicken ....so if u cook more than 300gm chicken plz increase the amount of other ingredients also.

Ingredient
  1. Chicken    300gm
  2. Onion   1 large(finely chopped)
  3. Tomato    1 medium(finely chopped)
  4. Curry leaves      few
  5. Chicken masala powder    1 tsp
  6. Mustard seeds      1/2 tsp
  7. Salt      as needed
  8. Oil      2 tbsp
To grind
  1. Green chillies     6 no.s
  2. ginger     2" piece
  3. Garlic     7-8 large cloves
  4. Coriander leaves    5-6 strings
  5. Mint leaves     5-6 no.s
  6. Fennel seeds     1 tsp
Method
  • Clean and wash the chicken thoroughly and marinate with 1/2tsp turmeric powder and keep aside.
  • Heat oil in a non-stick pan,add mustard seeds and allow to pop and add curry leaves and finely chopped onions,sprinkle some salt and fry till onion get half transparent.
  • Then add the grounded chilli masala paste,and keep frying until the raw smell leaves.
  • And then add chopped tomatoes and saute until tomaot get soft and mushy.
  • Now add the chicken pieces with a pinch of turmeric powder,chicken masala powder and stir well.
  • Keep stir frying the chicken for 3 minutes .
  • After that add 1/2 cup water and enough salt,mix well and cook in medium flame with lid closed.
  • Cook until chicken get tender and cooked well.
  • Now open the lid and add some chopped coriander leaves ,mix well and remove from the stove.
  • Now heat a tsp of oil in a pan and add 2 green chillies (slit open),curry leaves ,fry well and add to the chicken curry.
  • Now the Milagai chicken curry is Ready to serve hot.
  • It suits well with Biryani,Pulav,Dosa and Chapathi also.
You can also add some cashewnuts along with chilli and curry leaves fry.

Chicken Fry/Chicken Chukka/Kozhi varuval



Ingredients
  1. chicken    1/4kg
  2. chilli powder     1 +1/2 tsp
  3. Turmeric powder    1/4 tsp
  4. Coriander powder   1/2 tsp
  5. Curry leaves      few
  6. Fennel seeds   1 tbsp and 1 tsp
  7. Pepper corns   1-2 tbsp
  8. Jeera/cumin seeds     1 tsp
  9. Poppy seeds    1 tsp
  10. Salt     as needed
  11. Oil     2 tsp
Method
  • Clean and wash chicken pieces,and cook chicken with turmeric and 1/2 tsp chilli powder,half salt in a pressure cooker to 1 -2 whisltes.(do not add more water ...only1/2 cup)
  • Grind pepper corns,poppy seeds,jeera and 1 tbsp fennel seeds to a fine powder and keep aside.
  • Heat oil in a wok or pan,add 1 tsp fennel seeds,curry leaves,chilli powder and coriander powder.
  • then add the cooked chicken with the broth,enough salt and allow to boil till the water reduces to half.
  • Then add the ground spice powder and keep boiling till water drain completely..keep stirring.
  • Once water drains..add some chopped coriander leaves and some fried cashew nuts.
  • Chicken chukka or fry is ready to serve now.
Note:
If u r cooking more quantity (more than 1/4kg) then u should increase the spice ingredients level to that quantity.

Chicken Curry Recipe | Chicken Drumsticks Curry | Mom's Chicken Curry Recipe


 This chicken curry is my Mom's recipe and its my most favorite chicken recipe. My mom usually make this curry using chicken legs(not drumsticks) but here i used Chicken Drumsticks and the curry n chicken tasted so good n spicy. This is a spicy curry and we love it that way. When i fist time tried this curry i couldn't get the perfect texture n taste n it turned out as gravy/kuzhambu. And also i used pressure cooker but this time cooked in pan and sauteed everything nicely and the curry came out really good. No special masala required only chili powder is enough and the magic ingredient is ground cinnamon n clove powder. Do give this a try you will love it!

Pepper chicken


 Ingredients
  1. chicken     1Lb (i used boneless breast chicken)
  2. onion    1 finely chopped
  3. crushed pepper   50gm
  4. dry red chillies     2no.s
  5. chilli powder    1 tsp
  6. turmeric powder    1/4 tsp
  7. ginger-garlic paste   2tsp
  8. curry leaves    2twigs
  9. cashew nuts     10no.s
  10. fennel seeds     1tsp
  11. thick yoghurt       1tsp 
  12. limejuice     half lime
  13. garam masal powder  1tsp
  14. coriander powder  1tsp
  15. garam masala    1/2 tsp
  16. salt   as neede
  17. oil  tbs
Method
  • Cut and clean the chicken.
  • Then marinate the chicken with youghurt,1/2 tsp fennel seeds,cashew nuts,turmeric powder,chilli powder,ginger garlic paste,garam masala,lime juice,few curry leaves and coriander powder.
  • Mix it well and keep it aside for 30-40minutes
  • Then heat oil in a pan.Add fennel seeds ,when they pop add red chillies,curry leaves and chopped onions
  • Fry the onions until they turn  golden brown
  • Now add the marinated chicken . stir fry it till the raw smell goes.
  • Then sprinkle little water and close it with a lid .
  • Cook till the chicken gets tender 
  • open the lid and fry nicely and then add the crushed pepper to the chicken
  • Saute well and add coriander leaves (optional)
  • Now the fresh pepper chicken is ready.

Pepper chicken curry(without coconut)


Ingredients
  1. chicken         1lb
  2. big onion        1 (finely chopped)
  3. tomatoes         2 (finely chopped)
  4. green chillies    2 no.s slit open
  5. curry leaves     1 twig
  6. ginger garlic paste     1tbsp
  7. pepper        2 tbsp (freshly grounded)
  8. coriander leaves      few
  9. Whole garam masala  (cinnamon,bayleaf, cardomam,clove)
  10. fennel seeds     1 tsp
  11. chilli powder      1 tsp
  12. coriander powder    2 tsp
  13. cumin powder         1tsp 
Method
  • Heat oil in a pressure pan/cooker/tawa  .
  • add whole garam masala and fennel seeds,when they splutter add chopped onions
  • saute it well.
  • after it turned golden brown add ginger-garlic paste ,pinch of turmeric powder ,saute till the the raw smell goes off.
  • thn add  tomatoes cook till oil oozes out
  • thn add chicken pieces and saute well
  • add all dry powders mix well and it cook for few more minutes
  • now add freshly grounded pepper mix well 
  • add 1cup water and necessary salt
  • mix well and cover it till chicken get cooked or pressure cook it for 2whistles
  • now pepper chicken curry is ready add some chopped coriander leaves 
  • it goes well with plain rice,pulav,dosa & chapathi.
