Spinach Orange Salad Recipe
If you are looking for some colorful, healthy, delicious and vegan Salad for meal then this Spinach Orange Pomegranate Salad is perfect. Now-a-days i prefer only salads for lunch and fruits for dinner. This is working out for me and I am feeling fresh and healthy. Half cooked or raw salads or just mixed fruits alone makes my meal more satisfying. We love eating raw salads and i always prefer a light dressing than the creamy or yogurt based ones. I slightly modified this Salad recipe from Two Peas & their Pod. Here, I used fresh Pomegrante and orange juice for dressing. The salad turned out awesome with both sweet and tangy taste.

Prep Time : 10 minutes | Cook Time : Nil
Serves 2
Spinach SaladIngredients
  1. Fresh Baby Spinach 2 cups(I use Organic Baby Spinach)
  2. Orange  2(peeled and sliced)
  3. Pomegranate   1/2 cup(peeled and seeded)
  4. Guava   1 medium size(sliced)
  5. Toasted Almonds   1/4 cup or as needed
For Dressing
  1. Fresh Orange Juice from 1 orange
  2. Fresh Pomegranate Juice or POM Juice  1/4 cup
  3. Lemon Juice or Apple Cider Vinegar  1-2 Tbsp
  4. Agave Nectar or Honey  2 Tbsp
  5. Olive Oil    2 Tbsp(i used less oil)
  6. Salt and Pepper   to taste
Method
  • First make the dressing-in a small bowl add the POM juice or fresh pomgranate juice, vinegar, orange juice, and agave nectar. Whisk in the olive oil. Add salt and pepper to taste.
  • Then add fresh spinach to a large salad bowl. Add the oranges, pomegranate arils,guava slices and almonds.
  • Toss the salad with the dressing and serve.
  • After adding dressing serve it immediately or just before serving add the dressing. 
  • You can store the dressing for 2 days in the fridge.
Notes:
I buy pre washed spinach but still i prefer to wash it before using.
Eating raw spinach is more healthy than the sauteed or blanched ones but take care it is fresh and free from pesticides, insecticides or other chemicals.
Homegrown is best!
You can also use Red Wine Vinegar and skip fresh orange and pomegranate juice, apple cider in the dressing.
