Ulundhu Murukku / Murukku using Urad Flour is another interesting and tasty murukku recipe. The Urad flour adds nice flavor and taste to the murukku, this murukku almost similar to Thenkuzhal. Ulundhu/Urad dal is highly nutritious and is good for the health of growing kids. Of all the other deep fried snack, you can make this Ulundhu Murukku for kids, it is healthy and yummy snack too. My kids love all our Indian savory snacks like Murukku, Thattai, Pakoda, Vadai etc.  My kids are enjoying all the snacks I make for Diwali special blog posts :)

Ulundhu murukku is also simple and easy to make but only thing to note is, don't skip sifting urad dal flour, even a small impurities or coarse texture will make the murukku to pop in hot oil, 2015 Diwali when I was making Thenkuzhal, suddenly the murukku busted and oil spilled all over hand and neck and got burnt injuries. So be carfeul when frying urad dal murukku, even Ulundhu Vadai popped once for me. Today also, the first murukku busted (its my mistake only, after sifting by mistake some coarse particles get mixed with the sifted flour, i thought just a pinch so its OK but NO even the small particles busted) so i fried the entire batch with single murukku. Except the first one rest were fine but with the previous burnt pain I fried only single murukku at a time.
So as a warning I shared everything here, so please don't be lazy and skip sifting, sift once or twice and use good quality urad dal. Other than this this recipe is easy, healthy and worth to try.

Makes 18-20 Murukku
Ingredients
  1. Rice Flour    2 (heaped)
  2. Urad Flour   1/2 cup
  3. Butter, softened or melted   2 Tbsp
  4. Cumin Seeds/Jeera   1.5 tsp
  5. Hing   1/4 tsp
  6. Salt   to taste
  7. Oil  to deep fry
Method
  • First dry roast 3/4 cup urad dal in a pan until flavor comes and color changes to light golden color.
  • Then allow to cool for a while, and grind it to a fine powder and sift it twice and measure the sifter powder to 1/2 cup and use it in the recipe.
  • In a mixing bowl, add rice flour, urad flour, jeera, hing, salt and mix well.
  • Then add melted butter and mix well with the flour .
  • To it add water little by little and knead it to a soft non sticky dough.
  • Once done, divide the dough into 4 equal parts to fill in the murukku press.
  • Grease murukku press/achu with oil and fill with one part of dough and close it tightly. For Ulundhu Murukku use 3 round plain achu/plate.(ref pic).
  • Heat oil in a kadai, while its getting hot, 
  • take 2 or 3 ladle turn back side n squeeze roughly in circular motion, when oil gets hot drop the shaped murukku and fry in medium hot oil till it turns light golden color and also the hissing sound n bubbling stops.
  • Then remove it from oil and drain it in paper towel.
  • That's it...Diwali Murukku ready. 
  • After cooling store it in air tight container.
Notes:
Fry Murukku in hot oil, if oil doesn't get hot n u drop the murukku turns too crunchy n hard.
So leave 1 minute time after frying each batch so that oil get enough hot.
Do not fry in oil for long time that will also makes the murukku bit hard.
You can also add Omam or Sesame seeds to the murukku, I preferred Jeera flavor alone like the temple murukku.
I used small dipping bowl to measure everything, if you use standard measurement cup then you will get more murukku count.

First Make Urad Flour by roasting urad dal.
Then sift Urad Flour and mix it with other ingredients for murukku
Using water knead it to a smooth, soft and non sticky dough.
Once dough, fill it in the murukku press and shape it and fry in the hot oil
