Gingerbread Snack Cake | Eggless Gingerbread Cake | Spiced Snack Cake - Easy Christmas Cake !

Hope everyone had a wonderful weekend, mine too went well. Today am here with another easy to make Christmas Cake recipe, Gingerbread Snack Cake. This is a spiced snack cake that is perfect to enjoy Winter Holidays. Super moist, soft, mild sweet and rich spices flavored cake. Simply tried the egg free version with wheat flour/Atta. So the cake turned bit dense but it was soft and chewy like banana bread, we really loved the cake and the flavor while baking is awesome. So if you are looking for a low calorie or low fat spiced cake then this is one best choice. Now off to the recipe...
Recipe Adapted from Here Preparation Time : 10 minutes
Baking Time : 30 minutes
Serves : 9 pieces
Ingredients
  1. Molasses    3/4 cup*
  2. Boiling Water     2/3 cup
  3. Butter, softened    2 tbsp
  4. Oil         3 tbsp
  5. All Purpose Flour    2 and 1/4 cup 
  6. Ground ginger     1 tsp
  7. Ground Cinnamon   1 tsp
  8. Ground Clove    1/4 tsp
  9. Baking Soda    1 and 1/2 tsp
  10. Salt     1/2 tsp
  11. Fresh Ginger     1/4 tsp (grated,optional)
  12. Confectioner's Sugar    for dusting
*Molasses - It can be replaced with Honey or Maple Syrup..I used 1/2 cup Honey & 1/4 cup Brown Sugar instead of Molasses.


Method
Grease an 8 x 8" baking pan with a little oil or cooking spray and lightly dust with some flour and keep aside.
In a mixing bowl, sift flour, baking soda, salt, spices & mix well and keep aside.
In another mixing bowl, add boiling water, molasses, butter and oil. Stir until butter is melted.
Now to this liquid ingredients add the flour-mix and whisk until completely melded.Finally stir in with freshly grated ginger.
And Pour the batter into the prepared pan and spread evenly.
Bake at 350 F for 25-35 minutes or until the edges begin to pull away form the sides of the pan and/or a cake tester in the center comes out clean. Let cool.
Dust with confectioners' sugar if you like.


Notes:
I used 1 cup All purpose flour and 1 and 1/4 cup Wheat flour(Aashirvad Atta)
To make it more tasty & flavorful you can also add 1/4 cup shredded carrots to the recipe.
Bring 2 - 3 cups of water to boil and use 2/3 cup from it.
As used Atta flour i added about 2 and 1/2 cup water.
