Papdi Chaat / Papdi & Papdi Chaat Recipe

Today's recipe for Vegan Thursday, Papdi & Papdi Chaat Recipe. This is a simple & refreshing snack and one of my favorite chaat item. I have already posted a similar Papdi chaat with Papdis and freshly grated carrots and beets. This time i tried papdi at home and the result was not bad and not perfect. The papdis were super crispy but the papdi come out with lots of bubbles, so it does not look good otherwise the papdis tasted so good. V and kids did not bother about it and happily enjoyed the snack. Its me who always bother for perfect result and everything and sometimes worry for it and waste most of my precious time by simply sitting and starring at my pics whether to post it or not?  After spending almost an hour and a half, finally decided to share it here. Now off to the recipe...

For Papdi
  1. All Purpose Flour/Maida     1 cup
  2. Semolina/Sooji/Rava     1 tbsp
  3. Kalonji seeds/Onion seeds     1/2 tsp
  4. Salt       to taste(1/2 tsp)
  5. Oil      1 tbsp + for deep frying
  • In a bowl add flour, sooji, salt and kalonji seeds, combine well then add oil and mix well.
  • Then add water little by little and knead it to a soft and smooth dough.
  • Cover it with a damp cloth and let it rest for 20 minutes.
  • After that knead the dough again for a minute, then divide into small equal sized balls.
  • And using a rolling pin, make it a thin roti(like we do for chapathi/roti) as thin as possible, use flour for dusting.
  • Then cut it out using a 2.5" cutter or using any lid. 
  • And then heat oil in a kadai, when it gets heated turn the heat to medium and fry the papdis in medium heat until it turns nice brown on both sides or the sound n bubbles disappear.
  • Once done remove from the oil and drain it in paper towel. 
  • That's it..Papdi ready to munch. After cooling completely store it in an air tight container.
For Papdi Chaat
  1. Papdis
  2. Boiled potato    1 medium size(boiled n chopped)
  3. Boiled Chickpeas   1/2 cup
  4. Onion      1/4 cup (finely chopped)
  5. Tomato   2-3 tbsp (finely chopped)
  6. Cilantro    2 tbsp (finely chopped)
  7. Spicy Green Chutney     as needed
  8. Dates Tamarind Chutney
  9. Plain sev
How to Serve Papdi Chaat
In a serving plate, keep 5 papdis, then top each papdi with few boiled potato pieces and chickpeas, then sprinkle few finely chopped onion, tomato, spoon some green chutney & Dates Tamarind Chutney and lastly add some sev and cilantro.
That's it...Yummy & Refreshing Papdi Chaat ready to relish.

You can also use 1/4cup beaten yogurt/curd mixed with 1/2 tsp sugar - sweetened Dahi as a topping for papdi chaat along with chaat chutneys.
Instead of oil you can also use 1 tbsp ghee to make papdi dough.
