Bread Kofta Curry / Veggie Bread balls in creamy Tomato gravy

Its a celebration weekend for us, my kid's birthday and my birthday. we had great fun and yummy foods. We had a small party at our home with few friends of my H. Its a blasting celebration with all their presence n gifts. After all cooking & cleaning am dead tired so took complete rest for two days and back to routine now. This b'day was really special to me. My blogger friends family made it more special n memorable. Some of my friends sent me surprise gifts, ecards and am overwhelmed reading it. Even brought tears due to over joy and it all showed their love n care on me n my family. Really am blessed to have them all in my life. Would love to keep this friendship for ever and praying God for the same. Thanks to everyone from bottom of my heart.
Now coming to the recipe, bread kofta curry mild rich and delicious curry with bread koftas. The bread koftas are nothing but the Bread Veggie Balls which i posted few weeks back. I used few low calorie bread veggie balls(cooked using paniyaram pan) to make this bread kofta curry. The curry turned out so good and we all enjoyed it with  soft Mulit Grain Yeast Free Naan. The recipe as follows..



Ingredients
For Bread Kofta
  1. Bread Slices    8 no.
  2. Potato       2 large or 1 cup mashed potato(boiled & mashed)
  3. Cabbage    1/4 cup (finely chopped)
  4. Spinach      1/4 cup (finely chopped)
  5. Carrot        2-3 tbsp (shredded)
  6. Capsicum   2-3 tbsp(finely chopped)
  7. Peas       1/4 cup or less (boiled & mashed)
  8. Onion     1 small (finely chopped)
  9. Ginger      1 tsp (finely chopped)
  10. Rice Flour      2 -3 tsp
  11. Red chilli powder    1/2 tsp
  12. Cumin powder      1/2 tsp
  13. Salt     to taste
  14. Oil    to deep fry or shallow fry
Method to make Bread Kofta
  • Wash n boil potatoes n green peas together with enough water till soft and cooked, once done drain water, peel skin and mash it completely and keep aside.
  • Wash and shred/chop vegetables and keep ready.
  • Trim the bread slice edges and put ina bowl sprinkle 1-2 tbsp water and mash it well don't add more water.
  • To the same bowl add mashed potato, shredded carrots, finely chopped ginger, cabbage, capsicum, spinach, onion then rice flour, chili powder, cumin powder enough salt and mix everything to a tight dough.
  • And divide them into 15-17 balls and shape them to balls.
  • Heat a paniyaram pan, add few drops of oil in each portion and keep koftas into the pan, cook in medium heat with lid covered for 2 minutes then turn other side and cook covered in medium heat till get brown and crisp on all sides. 
  • If u want u can deep fry them also. 
  • Once done transfer to a plate and allow to cool before adding it in to the curry.
Deep fried bread koftas

For Bread Kofta Curry.
Ingredients
  1. The above made breaf koftas     12 -15 no.s
  2. Onion      1 large (roughly chopped)
  3. Tomato     2 -3 no.s (roughly chopped)
  4. Ginger     2" piece chopped
  5. Garlic      3 fat cloves chopped
  6. Dry Red chilli      3 or 4 no.s (adjust to your spice level)
  7. Cashew nut      5 whole
  8. Cumin powder    1/2 tsp
  9. Coriander powder    1/2 tsp
  10. Chilli powder     1/2 tsp or less
  11. Garam masala powder    1/4 tsp
  12. Kasoori Methi/Dried Methi leaves      1/2 tsp
  13. Salt     to taste
  14. Oil     1 tsp +1 tbsp 
  15. Cumin seeds     1/2 tsp

Method

  • Heat 1 tsp oil in a pan, add cashews, dry red chilli, ginger, garlic and saute for a minute.
  • Then add roughly chopped onions and saute for 1-2 minutes.
  • After that add tomatoes and saute till soft but not too mushy.

  • Now allow this ingredients to cool then grind using little water to a smooth and fine paste.
  • Then heat 1 tbsp oil in a skillet, add cumin seeds wait till it splutter.
  • And add the ground onion-tomato paste and cook for 1-2 minutes, then add red chili powder, cumin powder, corainder powder, enough salt and allow to boil the gravy.
  • Once it starts boiling add garam masala powder, kasoori methi and stir well and simmer for 3-4 minutes.

  • Lastly add fried koftas and finely chopped cilantro and turn off the stove.
  • That's it..Delicious Bread Kofta Curry ready. Serve hot with any rotis/Naan/Puri/Pulao. I served with Multi grain Naan.

Notes:
U can also add the koftas to the curry just before serving.
Adjust spices to your taste, the above mentiond spices level will give u little hot kofta curry.
Add little less salt than the regular amount since the fried koftas will already contain salt in it.
To the same curry recipe instead of kofta balls u can also add paneer cubes/Tofu cubes/blanched cauliflower/Potato/Peas etc.
