Punjabi Onion Paratha/Parante recipe with step by step photos. Onion Stuffed Paratha is a super delicious, filling paratha that is perfect for breakfast or lunch. when you are run out of veggies but still want to enjoy some satisfying healthy meal ?!, then this onion paratha with lots of onion n some simple spices together makes a perfect meal for breakfast/lunch/dinner.
Like my other Punjabi Recipes, this recipe is also from my Neighbor Aunt. Most of their weekdays breakfast will be this quick Onion Paratha or aloo paneer or Methi paratha.
Onion Paratha Recipe
Whenever I feel down, I try to avoid staying alone, either I go for long walk around my community or I visit my Aunt's place after dropping kids at school. One such day I was at her place and like my mom she reads my face well. Sangeeta , Are you ok? Did you had your Breakfast? I replied yes Aunty, but she understood that I was lying and she said its ok you, I will make onion parante, you taste it. She quickly prepared onion paratha and served with butter and curd.

Food is therapeutic, the preparation or cooking or the fresh flavors sometimes heals our stress, I wondered how she made this yummy paratha that quick, and the flavor and the way she made for me & served with love & care everything uplifted my moon, felt really better. Later, I realized that My Mom is with me to take care of me in other ways. 
Onion Paratha Recipe
I returned home after having a satisfying delicious breakfast and a good chat with Aunty. Both good food and good talk changed my mood in a better way. Then on the same day I made this onion paratha for my kids as after school tiffin, they loved it a lot. From that time I wanted to share this recipe here on my blog and finally made it last week during kids winter holidays. My kids motivated me to take a recipe video and they helped me to shoot video of the recipe. I uploaded the original video where my little explains the recipe while I am preparing and it was captured by elder one. Both my boys were interested in shooting video and I have uploaded that video on their Channel. If you want you can watch it Here.

I followed her recipe except I added some chaat masala for additional flavor and also reduced green chilli and added chilli powder, as I prepared for my kids. 
 
Aunty, recommended to make onion paratha by preparing 2 pedas for 1 paratha, this way it is easy to roll and also tastes best than the single stuffed ones. I did one extra step, instead of rolling it a plain 2 rotis I rolled it like how we do for Plain Paratha, In the below video I showed one method of rolling and in the step wise there is another method of rolling, you can choose whichever is convenient for you. Or simple roll 2 rotis(like how do for chapathi and keep the filling). Either way this onion paratha will tastes great. Punjabi Onion Paratha Recipe

Makes 3 paratha
Ingredients
For paratha
  1. Wheat Flour / Atta    1 cup
  2. Salt      to taste or optional
  3. Water    as needed
For filling
  1. Red onion          2 no.(finely chopped)
  2. Green chilli        2 no.finely chopped
  3. Cilantro           3 tbsp finely chopped
  4. Hing     1/4 tsp
  5. Jeera     1/4 tsp
  6. Red chilli powder   1/2 tsp
  7. Chaat Masala    1/2 -3/4 tsp
  8. Salt     to taste
Method
  • First prepare dough, take a mixing bowl, add flour and salt mix well. Using water make it to a soft and smooth dough cover it and keep aside for at least 15-20 minutes. 
  • For stuffing, take finely chopped onions in a bowl, to it add finely chopped green chilli, cilantro, hing, jeera, chilli powder, chaat masala mix well and do not add salt now, after making the pedas ready add salt and quickly fill it and make paratha.
  • Now divide the dough into 6 lime sized balls, and roll 2 balls to 4" disc or roti and to the one rolled disc keep 2-3 tbsp of onion filling and then cover it with another rolled disc, press the edges tightly so that it gets sealed and now roll the stuffed paratha to 8-9" wide and that's it paratha ready to cook.
  • Make one paratha at a time, cook ot then roll the other one. Or have a helping hand to cook while you roll.
  • Heat a tawa, when it is hot put the rolled onion paratha cook in medium high heat, drizzle ghee or oil in and around the paratha, cook for 30 seconds or until it bubbles slightly.
  • Then flip other side, drizzle ghee or oil, keep pressing using a spatula all the paratha when its brown and crisp on both sides remove from tawa and serve hot with some curd and pickle.
Notes:
It is not necessary to roll each pedas to big roti and layer it with ghee/oil and flour. then fold it back again and roll it to flat disc and keep filling. Just roll 2 plain small rotis on one roti keep the onion filling cover it with another, seal the edges  by pressing it tightly and then proceed.
Step By Step Recipe : 
First prepare dough, take a mixing bowl, add flour and salt mix well. Using water make it to a soft and smooth dough cover it and keep aside for at least 15-20 minutes.
Then Prepare Onion filling, and divide the dough into 6 balls.
Then roll 2 pedas at a time, roll one peda to a big disc and add oil or ghee, top it with some flour smear well and roll it like as shown in the picture.
Then again roll the layered pedas to 3" disc and keep 2-3 tbsp onion filling and keep the other disc over it and press the edges tightly. And again roll it a big paratha.
After that heat a tawa, cook the rolled onion paratha on medium high heat until each side turns crisp and brown spots. Add oil or ghee in around paratha while cooking.
