Tawa Pulao Recipe
Today's recipe is a popular Mumbai special, Tawa Pulao. This is a simple, easy to make mildly tangy, spicy rice with nice aroma. I have already shared a healthy version of Tawa Pulao with Brown Rice & Mixed vegetables , this is a kids friendly version with less vegetables and nice flavor. I often pack this for my kids lunch box along with Onion Raita or Potato Fry.

In road side shops & chaat stalls, they make this pulao in a wide big tawa, it is fun to watch making any chaat recipes at road side shops, they cook fast with unique style. During our India trip, weekly twice or thrice we go out during evening time to enjoy some refreshments at street side stalls. My kids asked zillion questions about their stall and cooking on a busy street. As this was their first India visit everything was new to them and they had lots of fun too. Now off to the recipe..

Ingredients
  1. Cooked Basmati Rice   2 cup 
  2. Onion  1 small(finely chopped)
  3. Green Chilli   2 no(finely chopped)
  4. Tomato, ripe   3 medium size(finely chopped)
  5. Carrot   2-3 tbsp(finely chopped)
  6. Capsicum   1/4 cup(finely chopped)
  7. Green Peas    1/4 cup(fresh or frozen)
  8. Cilantro   2 tbsp(finely chopped)
  9. Kashmiri Chilli Powder   1 tsp
  10. Turmeric Powder   1/4 tsp
  11. Pav Bhaji Masala   1 and 1/2 tsp
  12. Garam Masala   1/2 tsp
  13. Salt   to taste
  14. Sugar   a pinch
  15. Oil + Butter    1/2 tbsp each
Method
Cook Basmati rice and spread it in a plate and allow to cool completely, you can also use leftover rice or cook rice the previous night, after cooling refrigerate and next day morning use it to make tawa pulao for lunch box. Chop vegetables and keep everything ready.
Now heat oil & butter in a pan, when it is hot add finely chopped onions, green chilli and saute until the onion turns soft and translucent.
Then add finely chopped tomato, sprinkle some salt and saute until the tomato turns soft and mushy.
After that add carrot, capsicum, green peas and stir fry well and then add all the dry powder and stir fry for a minute.
Now add 1/4 cup water, enough salt, pinch of sugar and cook in medium high heat for a boil.
When it starts boiling turn the heat to high and stir fry for few seconds, then add cooked rice and finely chopped cilantro and gently mix the rice with tomato masala.
Then cook covered for 1-2 minutes in medium heat and finally add some more chopped cilantro and switch off the stove.
That's it...Tasty Tawa Pulao ready. Serve Hot with Onion Raita.
