Easy Vegetable Pulao
Easy Restaurant style Vegetable Pulao recipe with step by step photos. This is one of the easiest and simple one pot meal with lot of flavor and taste. This recipe of Vegetable pulao is perfect for weekday's lunchbox or a weekend special lunch along with some kurma or paneer gravy. My kids love this veggie pulao for lunch and I make it weekly once for their lunchbox. I wanted to share this recipe here since long time but due to one or the other reason I kept postponing it.
Last week,  I spent some time by cooking and clicking this vegetable pulao and Onion Raita. Cooking and taking food pictures are really helping my mind free from anxiety and stress but, Not all the time. Some how managing and hoping for the heal soon. Now off to the recipe..
Vegetable Pulao Recipe

Vegetable Pulao
Easy Vegetable Pulao Recipe

Serves  4-5

Ingredients
  1. Basmati Rice   1 cup
  2. Carrot   1 no.(chopped)
  3. Green Beans   20 no.(chopped)
  4. Green Peas   1/4 cup(fresh or frozen)
  5. Potato   1 no.(chopped)
  6. Onion    2 no.(sliced)
  7. Ginger Garlic   Paste   2 tsp
  8. Green Chilli   8 no.(cut lengthwise)
  9. Mint leaves    2-3 tbsp(chopped)
  10. Cilantro    4 tbsp(finely chopped)
  11. Lemon Juice   from 1/2 of a lemon
  12. Salt   to taste
To Temper
  1. Oil   2 tbsp
  2. Shahi Jeera   1/4 tsp
  3. Jeera/Cumin seeds   1/2 tsp
  4. Fennel seeds   1/4 tsp
  5. Clove   4 no.
  6. Cinnamon   2" long piece
  7. Cardamom  3 no.
  8. Bay leaf   1 no.
  9. Star Anise   1 no.
Method
Wash and soak basmati rice in enough water for minimum 15 minutes.
Chop vegetables to desired size and make ginger garlic paste and keep ready.
Heat oil in a pan, when it is hot add the tempering ingredients one by one and fry well.
And then add chopped green chilli, mint leaves, cilantro, onion and sprinkle little salt and saute till it is soft and golden brown.
While onions are sauteing, in the halfway add ginger garlic paste and continue sauteing until the raw smell leaves.
once the ginger garlic smell leaves, add the cut vegetables and stir fry for 4-5 minutes.
And then add enough water to cook rice(i usually add 2 cup of water for 1 cup rice), salt, lemon juice, green peas and bring it to boil.
When the water starts boiling, add the soaked and drained rice and cook till the rice is done.
That's it...Vegetable Pulao ready. Serve Hot with Onion Raita(will post it soon) & Hotel Style Vegetable Kurma like I did.
Notes:
You can also use 1 tbsp ghee and 1 tbsp oil for tempering.
If you want you can also use couple of spoons of yogurt/curd while sauteing vegetables.
My kids like this white colored pulao just like the one in restaurant's buffet menu, so I skip tomato and turmeric powder or any other spice powder. But if you want you can also use chopped tomato, if so add after sauteing ginger garlic paste.

  1. Thank you very much for an easy and tasty recipe. I am about to make this. I have some lovely little fresh aubergines (eggplant)....could I choip and add one? Also, I was wondering....why add the tempering ingredients one by one? I'd have just measured them out and chucked them in together! Thanks, Evelyn

    1. Yes.,you can add the tempering ingredients all together too and fry well. You can add any desired vegetable to the pulao, cauliflower, eggplant, bell pepper, turnips, broccoli etc.
