Tomato Rice / Quick Tomato Rice ~ Easy Lunch Box Recipe !

Today's recipe is one quick, simple and easy to make Tomato Rice that is perfect for lunch box with some chips or any vegetable fry. I have already posted this recipe along with Homemade Ginger Garlic Paste post but then thought its a too lengthy post, so thought to share it here as a New post. This Tomato rice can be done with left over rice but for lunch box i recommend to try with freshly cooked & cooled Rice. This is my most favorite quick fix recipe and i love to add some masala powder to my tomato rice. Its sure gives nice flavorful and yummy rice.

Preparation Time : 5 minutes
Cooking Time : 15 minutes
Serves   2 generously

Ingredients
  1. Cooked Rice    2 cups(i used left over recipe)
  2. Onion   1 Medium (sliced)
  3. Tomato    2 large(chopped)
  4. Ginger Garlic Paste     2 tsp
  5. Green chili    2 no.s (slit open)
  6. Chili Powder    1 tsp or to taste
  7. Turmeric powder     a pinch
  8. Chicken Masala Powder    1-2 tsp(add any desired masala)
  9. Cilantro    1-2 tbsp (finely chopped)
To Temper
  1. Oil    1-2 tbsp
  2. Mustard seeds    1/2 tsp
  3. Cumin Seeds   1/4 tsp
  4. Fennel seeds    1/4 tsp
  5. Clove   2 no.
  6. Cinnamon  1" stick
  7. Chana dal n Urad   1/2 tsp each
  8. Curry leaves     few
Method
  • Heat oil in a pan, add the tempering ingredients one by one and wait till it splutter n fry the dal golden brown.
  • Then add onion, green chili and saute for few seconds then add ginger-garlic paste, sprinkle little salt and saute until raw smell leaves.
  • After that add chopped tomatoes and saute until it turns soft n mushy.
  • Now add chili, turmeric powder,chicken masala powder and stir fry for a minute.
  • And sprinkle little water(less than 1/4 cup) and enough salt and bring it to boil.
  • Once it starts boiling, turn the stove to low heat and add cooked rice and mix it gently.
  • Then stir fry the rice with the tomato masala for 1-2 minutes.
  • Lastly add cilantro and cooked covered for a minute.
  • That's it...Tasty n Tangy Quick Tomato Rice Ready.


Notes:
I used Aachi Chicken Masala, you can use any desired masala like, curry masala powder,Pav bhaji masala.garam masala and adjust the spices to your taste.
You can also add frozen peas, cooked beans or any legumes or mixed vegetables to this recipes n saute along with tomato n proceed. I have tried this way too, very healthy n filling one pot meal.
Adding Masala powder is optional, if you like it to be mild skip that or add sambar powder.

  22. Wow. It sounds too yummy. It is the easy way to make this tomato rice recipe. Last Sunday, I made this recipe in the same way as you list here. I added chicken masala in it. It is pretty good now
