Bean Quesadillas Recipe | Easy Kidney Bean Quesadilla Using Homemade Tortillas

Bean Quesadillas is an easy, healthy and filling meal prepared with beans, vegetables and cheese combo. If you have all the ingredients stocked up, then kidney bean quesadillas can be done in a jiffy. You can serve this for lunch or as an appetizer. I used Homemade Flour Tortillas and cooked beans from scratch. Soaked dried red beans for 8 hours and pressure cooked and used it in the recipe.
But for a quicker version you can use Canned Beans. I always soak beans, peas, chickpeas and freeze them for later. So it always easy for me cook up One Pot side dish like Pressure Cooker Channa Masala, Pressure Cooker Chickpeas Coconut Curry to pair with rice or rotis for lunch box.  Now off to the recipe...

Fresh Tomato Salsa / Chunky Salsa / Salsa

Hope u had a wonderful weekend n mine also went smoothly and wishing my readers n friends a very pleasant n successful week ahead. After a hot hot sunny days today it drizzled and the weather was too good n everyone at home is sleeping after a wonderful n filling lunch with some spicy chicken curry n mild pulao, rasam n rice. So i got some time now for my blog, i couldn't be active like before due to some personal issues but i really inspired by friends' support n lovely comments. Thank you friends, so i don't want to leave my blog n blog buddies n decided to post some simple recipes. And this Salsa made with fresh tomato n other stuff is one such simple n easy to make recipe. I think this is loved by all group of people n can make it to their individual choice particularly the spice level. This recipe is also from the Natural Health Magazine, under the heading "Five Foods Which Gives u Instant Energy". I had already shared the first recipe under that heading, "Mixed Bean Corn Salad" and this Salsa is second n other three are Chinese Ginger Chicken Soup, Honey Salmon n Creamy Berry Salad. Will try to make it soon n share with u. I made very little changes to the original recipe, i did not add garlic Jalapeno, and also added cumin powder extra. My kids love Salsa n tortilla chips, particularly the one from Chipotle. So i often made this simple version for them. Now to the recipe...

Veg Burrito Bowl - Chipotle Style


         Chipotle is a famous Mexican Grill known for its Burritos and Tacos. Just one year back it was introduced to me by my friend and now its my fav lunch spot :) I love veg burrito bowl a lot , Burrito bowl includes a lemon cilantro combo rice, pinto or black beans, salsa(mild or hot), roasted bell pepper n onions, lettuce -spinach Salad,cooked sweet corn,sour cream and guacamole all mixed and served as such or wrapped in a tortilla(burrito wrap) with or without cheese.This veg burrito bowl/wrap, for non-veg you can prefer roasted chicken/beef/pork. I never tasted the later one and always love the VEG. I was planning to post this in my blog for long time but everytime i lack one or the other ingredients. And now the time came, recently i happen to know about the site "The Saji" and its blogoversary giveaway. The Saji, wonderful space loaded with all delightful recipes and the most popular "50 from 50 in 50 " ie. she had posted 50 recipes from 50 countries in just 50 days !! How smart!!
