Today's recipe is a healthy n equally delicious muffins with Orange n Blueberry combo. This is completely a vegan recipe, no egg, no butter not even yogurt and above all its made of Whole Wheat flour. So good right? The recipe source is unknown to me, When I was cleaning my wallet, saw a stick note with this ingredient list and also it was scribbled like anything n it took more than 5 minutes to recognize my own handwriting :) May be I wrote it while shopping or while waiting in hospital from the magazines. Anyway I tried it daringly, the original recipe(which I wrote) had All Purpose Flour but I wanted to try it with whole wheat flour and it turned out so good.
Only thing is, the muffins were too sweet to me but V n kids did not complain anything. As its made of whole wheat flour it was bit dense n not light n fluffy like the muffins with All purpose flour. To us its not a big issue we simply enjoyed this healthy n delicious muffins.
To present a baked goodies is really a bit challenging to me, don't want to repeat the same way, somehow tried this time to present neatly and for me it took more than an hour and took around 89 pictures, of that 50% was to my satisfaction :)
- Whole Wheat Flour 1and 1/4 cup
- All Purpose Flour 1/4 cup
- Baking Powder 1 and 1/2 tsp
- Salt 1/4 tsp
- Sugar 1/2 cup
- Orange Juice 1 cup(freshly squeezed Orange juice)
- Orange Zest 1/2 tbsp
- Olive oil 2 and 1/2 tsp
- Vanilla 1/2 tsp
- Blueberries 1/3 cup (fresh or frozen)
Method
- Preheat Oven to 350 degree Fahrenheit.
- Line a stand muffin tin with cupcake liners or spray with cooking spray n keep aside.
- Sift whole wheat flour,APF, baking powder n salt in a bowl, mix well and keep aside.
- Then mix in another bowl, stir in sugar n orange juice once sugar dissolved add oil n vanilla, mix it and add flour mixture and mix everything well.
- Add orange zest mix it and lastly stir in blueberries.
- Now fill 2/3 to all the prepared liners and bake it to 20-25 minutes are until an inserted tooth pick comes out clean.
- After that remove from oven and cool it in wire rack and Enjoy!!
This will yield about 12 mini muffins, as I don't have mini muffin pan, baked in the standard 6 cup muffin pan n the remaining batter in mini cake pan.
Instead of whole wheat flour you can also bake it completely with all purpose flour.
This can be baked as a plain orange muffins if you don't like blueberries, n also replace it with any desired nuts like walnuts, pecans, almonds etc(same amount 1/3 cup)
I used olive oil, you can use any neutral oil like canola or corn oil.
These snack muffins are good for breakfast also along with a glass of milk & banana.
