Actually this recipe should be posted for Blog Hop Wednesday - Week 5. But last week i don't have my computer so i am not able to post it in time. I am sorry for that and i request Radhika and Vatsala to spare my absence. And i want to post my previous week's recipe along with this week schedule. But i want both to be a separate post.
As per week 5 blog hopping i was paired with Vatsala of Show and Tell. She runs a lovely space with delicious array of recipes mostly are authentic north Indian dishes. From that i chosen this unique recipe" Stuffed Aloo" . Usually we use potato as a stuffing for many recipes n choices but in this recipe she use paneer to stuff potatoes and after few process all together turned to a rich and flavorful stuffed Aloo curry. Very interesting right?? So i tried this recipe, we all loved it and sure will try this often. Her recipe looks so mild n rich but mine looks so hot n spicy may be due to the color of my chilli powder and also she might used onion paste to get smooth silky curry. But I don't bother about the color n texture taste was so yummy n here's the recipe...
Ingredients
To Stuff Aloo
- Potatoes/Aloo 3 no.s Medium
 - Paneer 1/4 cup crumbled
 - Cashew nut 5-6 finely chopped
 - green chilli 1 no.(finely chopped)
 - Cilantro 3 sprigs( finely chopped)
 - salt to taste
 - mint leaves few finely chopped
 - chaat masala 1/4 tsp
 
Method
- Boil the potatoes but not too soft n mushy..just par boil them.
 
- Cut them in to two halves and on both the haves cut at one side to sit properly and can't roll.
 
- And then scoop the potatoes carefully using spoon or ice cream scoops.
 
- Mash the scooped out potato and paneer. and add all the other ingredients under " to stuff potatoes"and mix well and then fill the mixture into the potatoes.( see pic )
 
Ingredients
For the curry
- Onion - 1 medium(finely chopped)
 - Tomato - 3 (grind to paste0
 - Green chillies -2 (finely chopped)
 - ginger garlic paste 1 tsp
 - Salt - to taste
 - turmeric powder 1/4 tsp
 - chilli powder 1 tsp
 - Garam masala - 1/2 tsp
 - Oil - 2 tbsp
 - Cumin seeds - 1/2 tsp
 - Salt to taste
 - water 1/2 - 3/4 cup
 
Method
- Heat oil in a vessel, add cumin seeds and green chilli wait till splutter.
 
- Then add finely chopped onions and saute till turns translucent.
 
- Now add ginger garlic paste, and saute till raw smell leaves.
 
- After that add tomato paste and cook till all the moisture absorbs and saute well till oil shows on top.
 - then add the dry powders and stir fry for a minute.
 
- and add 1/2 - 3/4 cup of water, enough salt and bring the mixture to boil for 10 minutes.
 - Then arrange the stuffed aloo/potatoes in a oven safe bowl, and pout the boiled curry mixture over the stuffed aloo.
 
- Preheat oven to 350 defree Fahrenheit.
 - and keep the stuffed aloo curry on the oven for 15 minutes and sthen remove from the oven and add some finely chopped cilantro.
 - Enjoy the delicious Stuffed aloo curry with any indian rotis or any pulav.
