Broccoli Paratha,this is my 2nd try...compared to first time this time everything was perfect and tastes excellent, but this time i used only 1 cup shredded broccoli(ie. 1/2 broccoli) with this u can make four (8") stuffed broccoli Paratha...this is whole wheat broccoli paratha. Heres the recipe
Ingredients for Dough
- Whloe wheat flour 1 cup
 - Salt to taste
 - Water as needed
 - Oil 2-3 tsp
 
Ingredients for broccoli filling
- Broccoli 1 cup(shredded)
 - Onion 1/4 (finely chopped)
 - Ginger 2 tsp(shredded or finely chopped)
 - Cumin seeds/Jeera 1 tsp
 - Chilli Powder 1/2 tsp or more
 - Cumin powder 1/2 tsp
 - Curry powder 1/2 tsp
 - turmeric powder a pinch
 - Salt as needed
 - Oil 2 ts
 
- Shred the broccoli and transfer it to a bowl and add pinch of salt mix well and keep aside for 5-10 minutes.
 - After that,squeeze the broccoli to remove excess moisture ,and keep aside.
 - Heat oil in pan,add cumin seeds when it sputter add ginger and fry well.
 - Then add finely chopped onions and fry till onion turns light golden brown and add all dry powder and stir well.
 - Now add shredded broccoli ,enough salt and stir fry for 2 minutes.
 - Thats it,stuffing is ready and allow it to cool completely.
 - Once it cool down completely,start preparing parathas.
 - Knead the resting dough for a few seconds and take a big lemon size ball,and roll it to 3" (dia ) and keep 2-3 spoon of broccoli filling and seal the edges together and again gently roll it like regular chapathi (with less pressure).Do the same for the remaining dough n filling.
 - Heat a tawa,fry the parathas on both sides till turn light golden brown...drizzle some oil on all around the parathas.
 - After that remove from the tawa,broccoli paratha is now ready and serve hot with plain yoghurt .

I used lots of stuffing. But broccoli is really different.I should've try this. Looks very nice.
ReplyDeleteUltimate taste of paratha... i tried it and it was superb no words to say!!! i hate broccoli but after i tried this at home v r crazy behind it. i wish all viewers to try this n appreciate sangeetha's efforts in her creativity in cooking. Thanks sangeetha for making my cooking wasy:)
