This Carrot soup is one such recipe with great taste and flavor.  Any crispy bread pairs well with this soup and also makes a perfect weeknight dinner.

I followed the same Vegan Broccoli Soup recipe but instead of roasted broccoli I added carrots. And have seen in many carrot soup recipes with lemon and ginger, here I used lime juice and it paired well. I have made it couple of times and this our family's favorite soup now.
