Millet Pesarattu

Millet Pesarattu Recipe is a very healthy, protein and fiber rich breakfast which is suitable for all ages and especially perfect for Diet & Diabetic people. Pesarattu is an Instant dosa variety which is prepared with whole moong dal/Green Gram dal. Some people use raw rice to make pesarattu batter which is the original version and the raw rice gives nice crispness and taste to the green gram dosa.

Past few years our Rice intake has been reduced and replaced it with millets, oats & other whole grains. We eat proper breakfast at home, no cereals or quick fix, even if I prefer to take Chia seeds Pudding or  smoothie bowl I make sure I include sufficient protein, carb and fiber contents. Pesarattu is one such healthiest and filling breakfast which is a wholesome, filling and nutritious breakfast recipe.

Addition of Millets(I used Preso Millet) in the Pesarattu batter makes the dosa crispy and tasty much better than the Raw Rice. Even my kids like it. Pesarattu needs a spicy or little tangy chuntey or side dish. I prefer Andhra Style Ginger Chutney or Tomato Peanut Chutney or Onion Kara Chutney for this Millet Pesarattu. This time I was in hurry so quickly made a raw chutney with onion, garlic, tamarind. If possible will share the chutney recipe sometime soon.

Millet Pesarattu Recipe

Ingredients
  1. Whole Moon dal / Green gram     1 cup(I used 150 ml cup)
  2. Millet        1/2 cup(Any millets will work)
  3. Cumin seeds     1/2 tsp + 1/4 tsp
  4. Green Chilli   5 or 6
  5. Ginger       1" large piece
  6. Hing      1/4 tsp
  7. Carrot    1/4 cup (shredded, optional)
  8. Cilantro    2-3 tbsp (finely chopped)
  9. Salt     to taste
  10. Oil     to cook Pesarattu
Notes:
You can use any millet variety, I have tried Pesarattu with FoxTail millet, Kodo Millet, Preso Millet, Barnyard Millet. 
Millet can be replaced with Raw Rice or Brown Rice too.
Addition of more green chillies(5 or 6) gives nice taste and balance.
Always serve Millet with some spicy & tangy chutney or side dish.
For Onion Pesarattu, make a thin layer of dosa and sprinkle finely chopped onions generously all over it, drizzle oil or ghee and cook the dosa, flip other side and cook only for few seconds and remove from the tawa and serve hot.

Method
  • Wash and Soak Green Gram/Mung Bean and Millet separately over night or minimum 8 hours.
  • First in a blender add green moong dal, millet, cumin seeds, ginger, green chillies, enough salt and using 1/4 cup or little extra water grind it to a fine coarse batter.
  • Once done transfer the ground batter to a bowl, add hing, 1/4 tsp jeera, chopped cilantro, shredded carrots combine everything together, if you feel your batter to be too thick then add little water and the batter should be similar to adai batter.
  • Heat a tawa/griddle, when its get heated pour a ladle full of batter and spread it in circular motion to a medium thin crepe/dosa.
  • If needed you can also sprinkle some finely chopped onions, drizzle oil all around dosa.
  • Cook in medium heat, once the dosa starts browning on edges turn other side and cook for a minute or less and remove from the tawa and serve hot with spicy chutney.
