Spinach Paniyaram / Palak Paniyaram

I wanted to treat to U with a special post, something sweet n special but my lil' one is sick n today he is feeling much better so keep watching for the Celebration post this week :)


Now coming to today's recipe, Palak Paniyaram. I made this last week for My HITS Event ~ Greens  hosted by Kaveri. But not able to post it in time :( Have U ever made Paniyaram for lunch?! Paniyaram is a south Indian Regional recipe and its made of different varieties like sweet, savory, masala paniyaram n even Stuffed Paniyarams and it Usually served for breakfast or mostly for evening tiffin at our home and very rarely for dinner. But because of the weather condition i served this for Lunch!!! Here last week it was so cloudy and windy. Really the weather was getting colder here and also it was so cloudy also. As i depend on Natural light source its really tough to get good pictures when its cloud n dark. On that day, after 12 pm suddenly Sun came shining...so quickly started making this paniyaram and served for our lunch with sambar & coconut chutney and rice :) Even one day i served Mushroom Masala Dosa for Lunch because of the same reason, so funny right?! Ok Now will move to the recipe....

Ingredients
  1. Idly/dpsa Batter      2 cups
  2. Spinach     2 cups (roughly chopped)
  3. Carrot      2-3 tbsp (shredded)
  4. Cilantro     1 tbsp (finely chopped)
  5. Ginger      2 tsp(finely chopped)
  6. Oil     as needed 
To Temper
  1. Oil     1 tsp
  2. Mustard seeds     1/2 tsp
  3. Urad & Channa      1 tsp each
  4. Onion     1 medium (finely chopped)
  5. Curry leaves     few
  6. Hing      a generous pinch
Method
  • Wash n roughly chop spinach and microwave it for 2 minutes and then blend it in a blender to a smooth puree and keep ready.
  • Heat oil in a pan, add the tempering ingredients one by one and fry well and add it to the idly/dosa batter.
  • Then to the same batter add spinach puree, shredded carrots, finely chopped ginger, cilantro and give it a nice mix.
  • Now the batter is ready to make palak paniyaram.
  • Heat paniyaram pan, when it gets really hot add few drops of oil in each groove and pour batter to each groove and cook in medium heat for 2 or 3 minutes.
  • After that using skewer or spoon, gently turn other side and cook for another 2-3 minutes.
  • Once done remove from the pan and serve hot with chutney or sambar.

Notes:
Instead of puree, u can also use finely chopped spinach and saute it along with onions n add it to the batter.
With the same batter u can also make Palak Dosa n Palak Idly(if its a fresh or 1st day batter).
