Poha upma / Aval upma ~ Easy breakfast Recipes!

Aval Upma is one of the easiest breakfast recipe that can be done in 10 minutes or less. Me & my kids most favorite breakfast. I like my Poha with more onions & peanuts but my kids doesn't like it much so I reduce or skip it. But more onions and peanuts adds lovely flavor and taste to the Poha/Aval Upma. We love this simple Aval Upma for our evening snack too, make it little spicy with ground chillies, would be perfect with a warm drink. Only thing, this Aval upma should be served immediately, if its cooled it will be chewy. So this Aval upma should be served piping hot. To make it even more filling and healthy you can add finely chopped veggies like carrot, beans, cabbage & even peas also. Here I added only carrot. Ingredients
  1. Poha(THICK)   1 cup
  2. Onion    1 medium(finely chopped)
  3. Green chillies   3no.s (chopped or coarsely ground)
  4. Ginger       1/2 tsp (finely chopped)
  5. Carrot     1-2 tbsp (finely chopped)
  6. Curry leaves   few
  7. Coriander leaves  few(chopped)
  8. Turmeric powder  a pinch 
  9. To Temper
  10. Oil  2-3 Tbsp
  11. Cumin seeds    1/4 tsp
  12. Mustard seeds 1 tsp 
  13. Peanuts   3-4 Tbsp
  14. Cashew nuts 5 no.s 
  15. Urad dal   1/2 tsp 

Notes:
Do not soak aval/poha in water for long time.
Just wash poha and drain it in a colander and keep aside.
But if you want too soft little mushy poha upma then soak it water for 2 minutes then drain well and keep aside.
If you like, in the end you can also drizzle some lemon juice and serve it.

Method
  • Wash and drain it and keep aside. 
  • Heat oil in a wok and add mustard seeds and allow it to splutter, then add Peanuts, urad dal and cashew nuts fry till golden brown.
  • Then add chopped onions,ground green chillies, ginger, carrot and curry leaves, saute for 2 minutes or until onion turns soft and light brown.
  • After that add poha and turmeric powder, enough salt and stir fry 1-2 minutes in low-medium heat.
  • Finally Add some finely chopped coriander leaves, mix well.
  • That's it...Tasty Aval Upma ready. Serve hot. If desired add few drops of lemon juice to the upma before serving.
