   Chilli Garlic Noodles Recipe

Chilli Garlic Noodles is a simple, little spicy and flavor rich Veg Hakka Noodles Recipe. Fresh finely chopped garlic & red chilli fried in sesame oil gives lots of flavor to the simple veg noodles. IF you haven't tried spicy hakka noodles, give this recipe a try and am sure you gonna love it. A must try recipe for who love spicy and garlic flavored foods. I made this noodles for my little son's Birthday Party few years back and everyone loved it including kids. Little spicy for them but they still loved it with some tomato ketchup & some butter on noodles. 

Chilli Garlic Noodles Recipe

I recommend using sesame oil for this recipes, since it adds flavor and also minimizes the heat from garlic and chillies. I used chilli flakes, Guntur Dry Red chilli, fresh Serrano Pepper and for nice color added Kashmiri Chilli Powder. The Guntur Chilli variety was spicy compared to normal variety, so use accordingly. Using Serrano pepper is optional you can skip or replace with green chilli or Jalapeno Pepper

Chilli Garlic Noodles Recipe

Ingredients
  1. Hakka Noodles    150 gm
  2. Spring Onion   1 small bunch
  3. Garlic    3 fat cloves(finely chopped)
  4. Chilli Flakes   1/4 tsp
  5. Dry Red Chilli   2(broken)
  6. Ginger   1/4 tsp(finely chopped)
  7. Onion    1 small(thinly sliced)
  8. Cabbage  1/2 cup(thinly sliced)
  9. Carrot  1/4 cup(cut into thin strips)
  10. Capsicum   1/4 cup(cut into thin strips)
  11. Yellow Bell Pepper   1/4 cup(cut into thin strips)
  12. Red Bell Pepper     1/4 cup(cut into thin strips)
  13. Cilantro   1 Tbsp(finely chopped)
  14. Kashmiri Chilli Powder    1/2 tsp
  15. Soy Sauce    1 tsp
  16. Red Chilli Sauce    1/2-1 tsp
  17. Salt    to taste
  18. Black or White Pepper Powder     1/2-3/4 tsp
Notes
After cooking the noodles, drain it using colander and rinse it in cold water, this is to stop its cooking and also prevent noodles from sticking together. No need to mix it with oil etc, just run in cold water immediately after cooking.
Use any desired vegetables or even without much vegetables this tastes great with plain garlic and chilli flavor.
IF you want to add protein, add some Paneer or Tofu Cubes or scrambled eggs too.
I used Ching's Dark Soy Sauce & Chilli Stir fry sauce.
If you increase noodles quantity, increase vegetables, oil, spices and sauce quantity also.

Method
  • Cook noodles as per package instructions. Mostly it requires only 3 minutes cooking in boiled water.
  • Then drain the noodles using colander and rinse in cold water and keep aside. 
  • Chop vegetables, Spring onion white parts and green parts separately and keep ready.
  • Heat oil in a pan or wok, add finely chopped garlic stir fry for half a minute, then add dry red chilli and chilli flakes and stir fry well.
  • Once the garlic turns light brown add sliced onion, serrano pepper(if using) and stir fry for few seconds.
  • And then add carrot and cabbage stir fry for a minute.
  • Then add colored bell peppers and stir fry everything nicely, add some salt, white pepper powder and mix well, stir fry the veggies for a minute and no need to cook for long time.
  • After that add cooked noodles, chilli powder, soy sauce, chilli sauce and toss everything nicely.
  • Once all the sauce, veggies gets mixed well with the noodles.
  • Check for salt and pepper, if needed add extra and mix everything nicely using tong.
  • Lastly add some finely chopped cilantro and spring onion leaves and switch off the stove.
  • That's it Spicy & Tasty Chilli Garlic Noodles ready.
