Today's recipe is an Easy to Make Lunchbox Recipe - Cilantro Potato Rice. Coriander Flavored Potato Rice is a mildly spiced, flavor rich Rice recipe which is perfect for Kids LunchBox along with some Fryums. My kids love Sabudana Khichdi a lot mainly because of the Potatoes in it. So I combined their most favorite potato with their least favorite cilantro and made this Super Tasty Rice with more cashews and peanuts for extra crunch.  Also, this rice recipe can be done in no time if you have cooked rice ready. Cilantro Potato Rice Recipe
Prep Time : 20 Minutes(Rice Cook time) | Cook Time : 10 Minutes

Ingredients

  1. Cooked Rice 2 cup(I Used Basamati Rice)
  2. Aloo/Potato   1 medium(chopped into small pieces)
  3. Jeera/Cumin Seeds    1/2 tsp
  4. Cashew Nuts   5 whole(broke into 2 halves)
  5. Peanuts, roasted   3 Tbsp
  6. Jeera Powder/Cumin Powder   1/2 tsp
  7. Sugar    1/4 tsp(optional)
  8. Salt   to taste
  9. Lemon Juice   1/2 -1 tsp
  10. Cilantro   few finely chopped(for garnishing)
  11. Peanut Oil    1-2 Tbsp
To Grind Coarsely
  1. Ginger  1"  wide piece
  2. Green Chilli   4 or 5  or to taste
  3. Cilantro/Coriander leaves   20 stems or 1/4 of a small bunch
Notes:
Instead of Basmati Rice you can also use regular cooking rice.
Adding 1/2 tsp sugar enhances the flavor and taste, you can also replace with powdered jaggery.
Skip Peanuts if you don't like. 
You can also fry the potato first for 2-3 minutes, then add ground ginger-chilli-cilantro mix fry for 2 minutes then add cooked rice and proceed the same process in the recipe.

Method
  • Cook Rice and spread it in a wide plate and cool down completely.
  • In a blender, add ginger, green chilli and cilantro, do not add water just run pulse mode for few seconds and that's enough.
  • Crush roasted peanuts using pestle & mortar and keep aside.
  • In a cast iron wok or heavy bottomed pan/kadai, add oil when its hot add jeera and cashew nut fry until jeera splutter completely.
  • Then add ground ginger-chilli-cilantro mix and chopped potato and stir fry for a minute.
  • Using spatula or ladle, Spread the potato pieces all over the pan and allow to fry in medium heat for a minute.
  • Then sprinkle little salt, mix well and cook covered for only 2 minutes.
  • And then open the lid, now the potatoes must have cooked soft and crisp and not mushy.
  • Now add crushed roasted peanuts, mix well and then add cooked and cooled rice, add jeera powder, turmeric powder, salt  and mix the everything with the cilantro potato masala gently.
  • Once done, add sugar, lemon juice and mix the rice well.
  • Lastly add some cilantro and switch off the stove.
  • That's it..Tasty Cilantro Potato Rice ready. Serve warm or Pack for Lunchbox along with some Fryums or Chips or Raita.
