Instant Oats Dosa
I like oats any kind quick cooking oats, thickrolled, steel cut oats in any form from porridge, dosa, pongal, overnight oats etc but V doesn't like oats and don't even have heart to try it for once, so have to sneak oats in his favorite dosa or adai like Oats PesarattuOats AdaiOats Paniyaram. As I wanted him to have oats 3 or 4 days a week, I cook Adai or this Instant Oats Dosa for our breakfast or dinner. For him I even need to add some more toppings to this oats dosa like Onion Oats dosa(check notes) or Podi garlic Oats Dosa(with Idli podi and fresh grated garlic topping) or Keerai Oats dosa(batter mixed with fresh Drumstick leaves, pic in last collage).

This is one recipe that I cook often,  every time when I make it for breakfast I wanted to take pictures but during busy mornings I couldn't and I think myself why not next time as it is a easy recipe and I make it tomorrow or the other day and kept postponing it. Last weekend even though I had Idli Batter in hand I prepared Instant Dosa Batter to share it here. This is an instant version doesn't require curd or buttermilk, just 5-10 minutes resting time is more than enough. You can make super crispy oats dosa but it should be served hot as it will turn soft upon cooling. I like it even it is soft but V prefer it hot, straight from the tawa, crispy and spicy, so i add 1 or 2 chilli along with oats while grinding.

Ingredients
  1. Rolled Oats   1 cup
  2. Rice Flour   1/4 cup
  3. Sooji/Rava   1 tbsp
  4. Wheat Flour/Atta   1/4 cup
  5. Cumin Seeds   1/2 tsp
  6. Green Chilli  2 no.(optional)
  7. Salt   to taste
  8. Oil   as needed
Method
In a mixer jar, take rolled oats and green chilli and grind it to a fine powder and transfer it to a mixing bowl.
To it, add rice flour, sooji, wheat flour, salt, cumin seeds and mix well.
Then add water to make it to a smooth free flowing thin batter. The batter should be thin like Buttermilk.
Now the batter is ready and you can make dosa instantly but I prefer to rest the batter to rest for 5-10 minutes.
Then Heat  a tawa, when it is hot drizzle few drops of oil and smear it with a piece of damp cloth or paper towel.
Then pour the batter randomly all over the tawa(do not spread oats dosa batter like we do for regular dosa) and drizzle oil in and around the dosa and cook in medium high heat until the edges turns crispy.
And then flip dosa and allow the other side to cook until oats dosa is crisp and done.
When done, fold the dosa and serve immediately with Chutney & Sambar.
Notes:
You can use Oat Flour also, I have also tried with thick rolled oats.
If you want you can also add some finely chopped cilantro, curry leaves to the batter.
For Onion Oats Dosa, first sprinkle some finely chopped onion to the hot tawa, then pour the batter over it and cook it.
Adding sooji is optional, i have tried without sooji also.
Oats Dosa are crispy and tasty when it is hot even kids will love it.
The above measurement was enough to serve 2 kids and 2 adults(4 of us).
The tawa should be hot enough before you pour the batter, then turn the heat to medium and cook until crisp and done.
