Kara Chutney or Hotel Style Red Chutney is one quick & easy to make chutney that pairs well with many South Indian Tiffin recipes like Idli/Dos, Pongal, Chapathi, Paniyaram, Adai, etc., This Chutney tastes similar to the hotel red chutney, mildly tangy and spicy chutney without coconut. It requires only few basic ingredients and can make it in a jiffy. This is one of my favorite chutney and I love it with hot Idlis and Paniyaram. The color of the chutney depends on the variety of tomato used.

Serves 4
Ingredients
  1. Onion  1 no.
  2. Tomato   2 no.
  3. Dry Red Chilli  3 or 4 no.
  4. Tamarind  a small piece
  5. Channa Dal/Kadala paruppu   2 tsp
  6. Oil  1-2 tsp
  7. Salt   to taste
To Temper
  1. Oil  1/4 - 1/2 tsp
  2. Mustard seeds  1/4 tsp
  3. Urad dal  1/4 tsp
  4. Curry leaves   few
Method
  • Heat oil in a kadai, when it is hot add channa dal and fry till golden brown.
  • Then add roughly chopped onion, dry red chilli, tamarind and saute for 3-4 minutes.
  • After that add roughly chopped tomato and saute till tomato turns soft.
  • Then allow the sauteed ingredients to cool completely.
  • And then using couple ot tbsp of water, enough salt and grind it to a slightly coarse paste.
  • Then transfer the ground chutney to a serving bowl.
  • Heat oil in a tempering pan, when it is hot add mustard seeds allow to splutter.
  • Then add urad dal and curry leaves and fry well.
  • Add this tempering to the ground chutney mix well and serve as an accompaniment for Idli/Dosa/Paniyaram.
