Vegetable Rava Biryani / Rava Biryani - Easy & Quick One Pot Meal!


Today's Recipe is one easy & quick one pot meal with more satisfying taste & flavor - Vegetable Rava Biryani. Rava Upma is one such recipe which is not liked by most of the people, particularly men. Mr.V also hate Rava upma and never allow to me to cook it for him, i make it only for me and my kids. Upma is one of my fav breakfast/dinner menu. During my school days i even ask my mom to pack upma for my lunch box with sugar. I just love upma with sugar and plain yogurt.



Upma is one the easiest and quickest meal perfect for busy mornings or even best for Dinner.When Vardhini announced 30 minutes meal event, the first recipe came to my mind was this Rava Biryani, Biryani is loved by everyone and my family members are not exception, so i included the Biryani spices with the quick and easy to make Rava upma, the combo turned out so well, and the rava Biryani tasted so yummy than my expectation. Yep, so good than the Vermicelli Biryani. Mr.V had this for lunch without any complaining and he couldn't even judge that i made it with Rava, the spices and its flavor dominated and was so good. Definitely an interesting way to cook Rava/Sooji, and even you can impress your guests with this quick meal. Do give it a try and let me know how it turned out to you. Now off to the recipe..

Ingredient
  1. Rava/Sooji/Semolina  1 and 1/2 cup
  2. Mixed vegetables   1 cup chopped(carrot,beans,peas,potato & cauliflower)
  3. Ginger    1" crushed
  4. Garlic     2 fat cloves(crushed)
  5. Onion        1 medium (sliced)
  6. Tomato      1 small(chopped)
  7. Green chilli        3-4 (slit open)
  8. Curry leaves        few
  9. Mint Leaves       from 2-3 sprig
  10. Coriander leaves/ Cilantro      4-5 strings(chopped)
  11. turmeric powder    a pinch
  12. Chilli Powder    1/2 tsp
  13. Chicken Masala Powder    1/2 tsp
  14. Salt    as needed
To Temper
  1. Oil        1-2 tbsp + 1 tsp
  2. Fennel seeds     1/2 tsp
  3. Bay leaf       1-2 small 
  4. Cinnamon       1" stick
  5. Clove        2 no.s
  6. Cardamom   2 no.s

Method
  • Heat 1/2 tsp oil in a pan and roast the Rava/sooji/semolina till golden brown and transfer to a plate and keep aside.
  • Chop vegetables, crush ginger n garlic and keep other things ready.
  • Then In a pan/wok, heat oil and add fennel seeds,cinnamon,clove and bay leaf..fry well.
  • Then add crushed ginger, garlic, onions and curry leaves and mint leaves sprinkle some salt and keep frying till onion turn transparent.
  • And add chopped tomatoes, coriander leaves and stir well.
  • When tomatoes get soft and mushy add a pinch of turmeric powder, chili powder, chicken masala powder and add chopped vegetables.
  • Stir Fry for 2 minutes and then add 4 cups of water, enough salt, stir well and bring it to boil.
  • When its starts boiling add roasted rava and stir continuously. 
  • and when everything get mixed up well, (rava with water) and close it with a lid for a minute.cook in medium heat.
  • After that open the lid and stir well and finely add some finely chopped cilantro.
  • That's it...Tasty Vegetable Rava Biryani ready. Serve hot with Raitha.



Notes:
Instead of crushed ginger n garlic you can also use ginger garlic paste, if you have it in hand, or the crushed one makes the job simple and quick.
Use any desired vegetables.
Adding chicken masala powder is optional, but sure gives nice flavor. Or you can replace with garam masala powder also.
