Chocolate Mocha Cupcakes /Chocolate Mocha Cupcake with Chocolate Whipped Cream Frosting

After a long time I am sharing a Baking recipe, I did not bake anything recently and even not interested in baking. But when we friends planned for the Virtual Birthday Treat for Priya, decided to bake any recipe sweet or savory from her space. Since Priya loves baking and also her space is loaded with lots and lots of baked goodies, from sinful delight to healthy bakes. I have bookmarked many recipes too. As a part of her Virtual Birthday Celebration we planned to try her Baking recipe, preferably a Chocolate based ones. Since we know she love chocolates and anything with chocolates are her most favorite. So I  picked her Chocolate Mocha Cake and tried as a Cupcakes with Chocolate Whipped Cream Frosting.
This is a very simple and easy to make recipe with awesome result. The cake turned out so good, super moist and delicious cake my kids and V loved it a lot. Thank You so much Priya for this wonderful recipe. Now off to the recipe...

Ingredients
  1. All purpose flour   2 cups 
  2. Sugar      1 cup
  3. Chocolate bar / Baking Chocolate   200 gms
  4. Freshly brewed hot coffee  1 cup 
  5. Hot Water    3 tbsp
  6. Eggs        2 no.s
  7. Buttermilk    1 cup
  8. Baking powder   1 tsp
  9. Baking Soda    1/2 tsp
  10. Oil   1 cup
For Frosting
  1. Heavy Whipping Cream    3/4 cup
  2. Baking Cocoa     4 and 1/2 tsp( i added 3 tsp)
  3. Confectioner's Sugar/Icing sugar     3-4 tbsp ( i added 3 tbsp)
  4. Vanilla extract      1/2 tsp


Method

  • Preheat the oven to 350 F..Line muffin pan with cupcake liner and keep aside.
  • In  large bowl, beat eggs and sugar together until they turns pale.
  • In another bowl combine together all purpose flour, baking soda,baking powder and keep aside.
  • Now add buttermilk and oil to the egg-sugar mixture, beat well.
  • Add the chocolate chunks to the freshly brewed hot coffee, mix until the chocolate get well mixed.
  • Gradually add the chocolate-coffee mixture again to the egg-sugar mixture,whisk everything.
  • Finally add the dry ingredients to the wet ingredients, mix gently with a spatula well.
  • Now Pour this cake batter to the lined muffin pan, fill 2/3 rd  and bake for 25-30 minutes or until a skewer inserts comes out clean. (makes about 12 cupcakes plus 6 oz cup)
  • This can be done in a 9" round cake pan also.
  • Once done remove from the oven and allow to cool in a wire rack. Once it gets completely cooled frost the cake or simple dust with confectioner's sugar/icing sugar and sprinkle with sugar sprinkles or chocolate sprinkles. That's it ready to relish.
