Rajasthani Thali

I am glad to be a part of the Event, South Vs North Challenge started by Divya Pramil of You too Can Cook. In which there are two teams, South Team, members belong to the Southern Part and North Team members from Northern Part. Every Month a member from each will Challenge recipe to the opposite teams - A South team member who is hosting will give a challenging Traditional South Indian recipe to the North team and vice versa. I am belong to the Southern Team and this Month Challenge was Rajasthani Thali, hosting by Manjula of Desi Fiesta while Sowmya of South team challenged north team members with Vendhayakeerai paruppu urundai morkuzhambu.
Rajasthani Thali, have once enjoyed this rich and delicious spread in a restaurant years back. And i never thought that i will try those recipes at home and it happened because of this Wonderful Event, so Thanks a ton to Divya & Manjula for Challenging us with Traditional recipes. I enjoyed cooking and eat this Thali Meal. But still i could not make the entire Thali given by Manjula, skipped Goond ki Ladoo, Makki Roti & Panchmel Sabzi. Definitely making it sometime soon. Thanks again Manjula for the yummy recipes. Here;s my Rajasthani Thali :)




Thali Menu i prepared...
  • Green Gram Dal 
  • Baati
  • Bajra Roti
  • Boondi Raita
  • Dhana Mung Wadi
  • Gatte Ki Kadhi with Rice
  • Malai Lassi
Baati
Ingredients

  1. Wheat flour  1 cup
  2. Salt    to taste
  3. Butter or ghee    1 and 1/2 tbsp (melted)
Method
  • Mix all the ingredients n make a stiff dough . Then take a small ball of dough and divide in to equal portions and roll it . 
  • Preheat the oven at 375 degrees and place the baati's on a baking sheet for about 15 minutes or till they turn brown on the surface. 
  • Once done remove from the oven and brush it with ghee or butter.
  • Baati is Served with Dal / Mung Dal.
Mung Dal
Ingredients
  1. Green mung or yellow mung dal    1/4 cup
  2. Salt   to taste
  3. Turmeric powder   1/8 tsp
  4. Chilli powder    1/2 tsp
  5. Coriander powder   1 tsp
  6. Cumin powder   1/2 tsp
  7. Hing    a generous pinch
  8. Garam Masala powder    1/4 tsp
  9. Oil    2-3 tsp
  10. Cumin seeds    1/4 tsp
  11. Onion     3 tbsp(finely chopped,optional)
  12. Ginger   1" piece (crushed)
  13. Garlic    2 flakes(crushed)
Method
  • Take mung dal in pressure cooker, add 2 cups of water and pressure for 2-3 whistles.
  • Once done slightly mash it keep aside.
  • Heat oil in a kadai, add cumin seeds when it splutter add ginger garlic and saute it then add all the dry powders and stir fry.
  • After that add cooked dal, enough salt and stir well.
  • If u want can add 1/4 cup water now and bring to boil.
  • That's it...Delicious mung dal ready, Serve with baked baatis.

Boondi Raita
This is served as an accompaniment with rotis/ Paratha & Pulao/Biryani. Simple and easy to make delicious side dish. I used store bought Spicy Boondis.
Ingredients
  1. Yogurt / Curd     1 cup (beaten well)
  2. Water     1/2 cup
  3. Boondi    4 tbsp
  4. Chilli powder    1/4 tsp
  5. Cumin powder   1/2 tsp
  6. Garam masala powder   a pinch( or chaat masala)
  7. Cumin seeds    1/8 tsp
  8. Cilantro    few finely chopped
Method
  • Take a bowl add all the ingredients except boondi beat well. 
  • Then add boondi to the beaten masala curd/yogurt .
  • That's it..Boondi Raita. Serve Boondi chaas/ matta chilled.
