Whole Wheat Corn Roti / Adai N Carrot Raitha

        Day 2 of Blogging Marathon Under the theme "Whole Grain Dishes" and today's healthy and fiber rich recipe, Whole Wheat Corn Adai. More than Adai dosa i like this Wheat Adai and Ragi Adai more. My grandmom makes this wheat/godhumai adai often and give us for evening tiffin/Dinner. These adai are very tasty n wholesome perfect for light Dinner. To make it more healthy, i added sweet corn to my regular wheat adai that turned out so soft and flavorful adai. I made Carrot Raitha to go with this adai, on the whole it was so satifying and yummy dinner. Now to the recipe...


Ingredients
  1. Whole Wheat Flour    2 cups
  2. Cumin seeds    1 tsp
  3. Turmeric powder    1/4 tsp
  4. Cilantro   2 tbsp(finely chopped)
  5. Salt    to taste
To Temper
  1. Oil   1-2tsp
  2. Mustard seeds    1/2 tsp
  3. Urad dal    1-2 tsp
  4. Curry leaves    few
  5. Onion   1/3cup(finely chopped)
  6. Green chilli   1 (finely chopped)
  7. Ginger    1tbsp(finely chopped)
  8. Hing    a pinch
To Wet Grind
  1. Sweet corn Kernels    1/2 cup ( i used Frozen)
  2. Green chilli   3 no.s
  3. Cialntro    1/4 cup(roughly chopped)

Method
  • Microwave sweet corn for 2 minutes and then allow to cool for a while.
  • Then grind along with chilli n cilantro using 1tbsp water to a coarse paste n keep ready.
  • Heat oil in a tempering pan, add mustard seeds wait till pop and add urad dal fry golden brown,then add hing,curry leaves,chilli,onion n ginger and saute for 1 minute and turn off the stove.
  • Now take wheat flour in a wide bowl, add salt, cumin seeds and turmeric,mix well.
  • After that add tempered ingredients and combine well and now add the ground corn paste and knead it to a very smooth dough using very little water.(the dough should be little thick then the chapathi dough).
  • Let the dough rest for 20-30 minutes.
  • Then again sprinkle 1-2 tsp of wheat flour and keand the dough again for a minute and divide it to 8 equal parts.
  • Take one part,roll and on a greased plastic sheet/ziploc pat the dough to a little thick adai.
  • Then flip the adai dough on the heated tawa and toast on both sides till golden brown spot appears.
  • That's it...Tasty Whole Wheat Cron Adai ready. Serve hot along with pickle or Raitha.
  • I served with Carrot Raitha...

Carrot Raitha

This is very easy,simple and my fav one. I like to have this Carrot Raitha mainly for Parathas n Palak Rice.

Ingredients
  1. Fresh Yogurt/Curd    1 cup
  2. Carrot    1/2 or more(shredded)
  3. Tomato   1/8cup(finely diced without seeds)
  4. Salt   to taste
  5. Cumin seeds   1/2 tsp
  6. Cilantro    1-2 tbsp(finely chopped)
To Temper
  1. Oil   1/2 tsp
  2. Mustard seeds   1/2tsp
  3. Urad/chana dal    1/2 tsp each
  4. green chilli   2 (slitted)
Method
  • Take a bowl,add curd n salt beat until smooth  n cream.
  • Add shredded carrot,chopped tomato n cilantro,cumin seeds mix well.
  • Heat oil in a tempering pan, add mustard seeds n dals n chilli fry well and add it to the prepared raitha.
  • Mix well...That's it...Carrot Raitha ready to serve.
