Onion Bell Peppers Pull Apart Rolls / Whole Wheat Pull Apart Rolls

     
  Today for Day 5 of Blogging Marathon, I chosen Onion Bell Pull Apart Rolls using Whole wheat flour and Cracked wheat for the theme, "Whole Grain Dishes". This is purely another experiment with whole wheat flour and cracked wheat. Actually i started to make onion bell pepper Foccacia Bread but fotunately ended with this yummy snack rolls :) Yes, its my long time wish to bake some spicy Foccacia bread, i love onion bell pepper foccacia which we order at Panera Breads. So i wanted to try myself but at the last moment my mind changed and i wanted to bake a savory snack similar to my Garlic Pull Apart Rolls. Then used the onion and bell pepper as a filling in two ways...yes 1 with Italian Seasoning and another one with Indian Masala mix. Guess which one tunred out so flavorful n yummy?? yes...the one with Indian Masala mix, bit hot and we liked it.          
        This time i wanted to add some cracked wheat also, long back have seen a bread recipe using cracked wheat but i forgot to bookmark it seems...so blindly proceeded to my own recipe and atlast it turned out to be super dooper hit. But i dunno the reason why my rolls didn't turn brown like My Garlic Pull Apart Rolls. Other than that it was fine...may be due to whole wheat flour or i dunno?! but tastewise it was perfect...Okk now to the recipe...



Ingredients
  1. Whole Wheat Flour    2 cups
  2. All Purpose Flour  1 cup
  3. Cracked Wheat  1/4 cup(purely optional)
  4. Rapid Rise Instant Yeast   1 tbsp
  5. Salt           2 tsp
  6. Water         as needed( i used 1 and 1/2 cup)
  7. Olive Oil           1-2 tbsp
  8. Milk   2 tbsp (for brushing)
For Onion Bell Pepper Filling
  1. Oil    1-2 tsp
  2. Garlic   2 cloves(finely chopped)
  3. Red chilli flakes    2 tsp
  4. Red onion     1/2 cup(finely chopped)
  5. Bell pepper   less than 1/2 cup(finely chopped)
  6. Italian seasoning    1-2 tsp
  7. Parsley flakes    2 tsp
  8. Pepper Powder    to taste
  9. Indian Masala     1/4 tsp each of Red chilli,Cumin powder,Garam masala,Curry powder
  10. Cilantro   1-2 tbsp(finely chopped)
  11. Sesame seeds 1 tsp or as needed(optional
rolls with Indian Masala Mix...

Method
  • Sift whole wheat flour n all purpose flour and add it to a mixing bowl. Then add cracked wheat stir well.
  • Add yeast and salt mix well and using water make it to a soft, smooth dough.
  • Now drizzle oil on the dough and knead for about 8 - 10 minutes. (when you press with your fingers the dough should spring back)
  • Then apply oil over the kneaded dough and cover the bowl using click wrap or wet cloth and keep it in a warm place for about 1 hour.
  • Mean while prepare the filling...
  • Heat oil in a pan, add garlic and chilli flakes wait till it sizzle and then add onions and bell peppers and saute it for 1-2 minutes.
  • That's it...allow this to cool completely before u add it to the dough.
  • Once the dough has risen to double its intial size,Preheat the oven to 350 degree Fahrenheit or 180 degree Celsius.
  • Grease the baking pan/tray with olive oil /cooking spray, n keep ready.
  • Now punch down the air and again knead the dough for few minutes.
  • Then divide the dough in to two equal parts, take one portion and on a well floured surface roll the
  • dough to 1/4" thick using a rolling pin
  •  Now apply 1tsp of oil all over the rolled surface and place 2-3 tbsp of onion bell pepper mixture and spread well and sprinkle Italian seasoning,parsley flakes and pepper powder.
  • Then start rolling from one end and completely.
  • Then cut the rolled roll in to 5-6 equal small rolls and arrange it on the greased baking pan.
  • Repeat the same procedure for the remaining portion but with Indian masala mix and cilantro leaves and arrange everything on the baking pan and brush the top with milk, sprinkle some sesame seeds and set aside for another 20 minutes.
  • After 20 minutes, the rolls had raised and bake it for 20-25 minutes or till the top turns golden brown and crisp. This time it took 19minutes for me.
  • That's it...Once done remove from the oven, cool it for a while then Pull Apart n Enjoy with hot cup of chai/coffee.


Notes:
I didn't even add butter , the role remains soft n flaky...instead of oil u acn use butter to spread on the rolled surface before adding the filling.
You can use any desired choice of filling with vegs/Paneer/Tofu/Egg anything.
Cracked Wheat makes the rolls bit crisp and bit dense.
It tastes best when it served hot...u can also reheat the rolls in oven by preheating it to 200 degreen F and keep the rolls for 5-6 minutes...Then enjoy!!
You can also make this rolls with All purpose flour alone w or w/o cracked wheat addition.
