Stuffed Paniyaram - Mushroom n Potato Stuffing


            Today Friday, Varalakshmi Vratham an Auspicious Day to Worship goddess Lakshmi.Varalakshmi vratham was observed on second friday of Shravana Masam.(Shravana Masam is the fifth month in a traditional Hindu Telugu calendar followed in Andhra Pradesh. Telugu Sravana Masam 2011 is from July 31 to August 29. )If one could not do Pooja on 2nd friday can worship in any Friday of shravana masam.Lakshmi is the goddess of wealth and prosperity. Worshiping goddess lakshmi during shravana masam was highly auspicious.To know more about Varalakshmi Vratham n pooja Click Here.. I finished my Pooja by morning itself n offered Sweet Pongal,Channa Sunda , Kachayam ,Inippu Aval,Coconut rice n Lemon rice along with some fruits to God.I wish n Pray God on this auspicious day to bless U All n Your Family with all happiness,good health n Peace in your life..


           Coming to today's recipe, stuffed Paniyaram...as i love Paniyaram more i would like to try something new with it.First time tried stuffed paniyaram with mushroom n potato stuffing.the result was so good ,flavorful n enjoyed a lot.My kutties also liked this paniyaram very much.Feeding them right things in right time is a very difficult task for us.Sometimes my kids will not have anything for 2 days no breakfast,bo lunch n no dinner ..only milk n chocolates ...in such cases i need to bring some interesting things in their food n get them attracted .one such dish was this stuffed paniyaram.. My lil' master really liked this very much n not even allowed me to take good pictures...some how managed them n caught some clicks for u :)
Here, will see mushroom n potato filling for stuffed paniyaram..Instead of plain mashed potato i used left over potato masal in this recipe...you can use any stuffing of your choice n enjoy this delicious n yummy stuffed

Ingredients
For Paniyaram Batter
  1. Dosa Batter    2 cups
  2. Cilantro   2 tbsp(finely chopped)
  3. Tempering 
  4. Mustard seeds    1/2 tsp
  5. Urad dal   1 tsp
  6. Chana dal    2 tsp
  7. ginger    2 tsp(finely chopped)
  8. Hing   a pinch
For stuffing :
  1. Mushroom   1 cup(sliced) 
  2. Onion   1 medium(sliced)
  3. Potato    1 large(boiled n mashed)
  4. Green bell Pepper   2 tbsp(finely chopped)
  5. Tomato   1/2 (chopped)
  6. Mint leaves   1 twig(leaves alone finely chopped)
  7. turmeric powder    a pinch
  8. Chilli powder   1/2 tsp
  9. Garam masala    1/2 tsp
  10. Salt  to taste
  11. Mustard seeds    1/2 tsp
  12. Fennel seeds    1/4 tsp
  13. Oil     1-2 tsp
Method
  • Heat oil in a pan,add mustard seeds n fennel seeds allow to splutter,then add sliced onions and saute it for a minute then add mint leaves n green bell pepper and fry for a minute.
  • After that add,chopped tomatoes n turmeric powder and saute lightly and add sliced mushroom n stir fry for a minute.
  • Then add chilli n garam masala powder fry well and cook till raw smell of the masala leaves.
  • Now add mashed potato( i used left over potato masal),enough salt and mix everything well and cook for a minute.
  • lastly add some finely chopped cilantro,mix well n turn off the stove.
  • That's all... mushroom potato filling is ready now.
Method 
To make Stuffed Paniyaram

  • Heat oil in a pan,and then add tempering ingredients fry well and add to batter mix well.
  • Now heat a paniyaram pan, add few drops of oil on each groove n when its get hot, pour batter 1/2 level to the groove and keep 2 spoons of filling and the pour batter like covering the stuffing.
  • Cover the paniyaram pan with lid and cook for 2 minutes and then turn other side gently  and cook till turn golden brown n crisp.
  • Once done...remove the stuffed paniyaram from the pan n serve hot with any desired chutney.
  • with the above quantity you can make 21 stuffed paniyaram.
