Carrot Kati Roll / Carrot Frankie

Carrot Frankie Recipe
  Kati Roll/Kathi Roll are famous street foods of Kolkata.Traditionally kati roll are made with one side cooked with beaten eggs and filled with kati kababs.But there are so many interesting way to make these yummy kati roll.Any yummy stuffing filled with spicy chutneys n spiced onions rolled up in paratha are very common  kati roll recipes. I tried kati roll with carrot as a main stuffing, this is also specially made for the event, Healthy Lunch box Idea - Carrot theme.Who will say no, if carrots are cooked and served in this way right??? Seriously this is so yummy and delicious to the core..I used less green chutney as these were made for my kids. You can use any kind of stuffing but this carrot masala stuffing so healthy n yummy...Try this!!

Ingredients
For Paratha
  1. Whole wheat flour   1 and 1/4 cup
  2. All Purpose flour    3/4 cup
  3. Salt   to taste
  4. Water    to knead
  5. oil   1 tsp
Method
  • Add flour n salt to a bowl,mix well and using water knead it to a soft smooth dough.Add a tsp oil and again knead the dough for few minutes , then cover it n set aside for at least 30 minutes.
  • After that divide the dough in to 8 equal lemon size balls, on a floured surface take one ball at a time and using a rolling pin roll to lil' thick 8" paratha and cook it lightly on a heated tawa/griddle and remove from the tawa and put them in a hot box until ready for other kati roll preparations.

Ingredients for Carrot Masala Stuffing
  1. Carrots   2 no.s(thinly sliced)
  2. Onion   1 no.(sliced)
  3. Ginger   2 tsp(finely chopped)
  4. cilantro   few finely chopped
  5. Cumin seeds   1 tsp
  6. Tomato    1/2 (chopped)
  7. Turmeric powder   a pinch
  8. Chilli powder   1/2 tsp
  9. Garam masala powder   1/4 tsp
  10. Salt  to taste
  11. Oil   1 and 1/2 tsp
Method
  • Microwave the sliced carrots for 2 minutes with 1/4 cup or less water and keep aside.
  • Heat oil in a pan,add cumin seeds  allow to sputter then add ginger and fry lightly.
  • Then add onion saute for a minute and add tomato and fry lightly.
  • After that add sliced carrots and fry for 1-2 minutes and thern add turmeric and chilli powder and stir fry till raw smell leaves.
  • After that add enough salt,garam masala powder mix well and cook for a minute.
  • Lastly add cilantro ,mix well and turn off the stove.
  • That's it..carrot masala ready to stuff.

For Kati Roll
  • Carrot masala
  • lightly cooked paratha
  • Spiced onion - 1/2 onion thin stripes spiced with chilli powder n few drops of lemon juice-mix well.
  • Green chutney- 2-3 tbsp green chutney mixed with 1 tbsp curd .
  • tomato stripes few
  • cilantro few finely chopped
Method
  • Heat a tawa,smear ghee/oil and toast the cooked paratha on both sides and remove from the tawa.Do for all the parathas n keep aside.
  • Take a plate,in center keep 2 tbsp of carrot masala ,pour 1-2 tsp green chutney,add some spiced onions,tomato stripes n cilantro .
  • First fold the bottom side and then both the sides ...yummy Carro kati roll is ready to serve.
  •  while serving or to pack for lunch box wrap it with a foil paper/butter paper

  6. Sangee, This is regarding your question on Chocolate muffin
    I took the basic recipe from joyofbaking.com and tweaked a lot to make it vegan and healthy
    I added flax seed powder to replace one egg and curd for another.
    You can replace flax seed powder by either adding egg or using All purpose flour instead of wheat flour.
