Garlic Spinach Snack Rolls


    I tried this snack for first time n its full n full my experiment.i was so excited while doing this n eagerly waited for the result...Ii tried this snack with APF n milk mawa powder....Yep i used the same dough preparation which we do for making Jamuns but little change i used water instead of milk to knead the dough.Actually i want to try crescent dough but the preparation n timing was lengthy so daringly tried in my own dough :).For filling i used garlic spinach puree n some sliced vegetables.After baking ,the snack flavor was similar to pizza dough with cheesy flavor without cheese.For my kids i sprinkled some Parmesan cheese also. My kids n my H also liked it very much.No exaggeration really tasted good use filling to your choice or the same...Try this snack born from my experiment n let me know h it turned out to U..Hope u all like this recipe :)

Ingredients
For Dough
  1. All Purpose Flour   1 cup
  2. Milk-Mawa Powder     1/2 cup
  3. Butter   2 tsp
  4. Baking powder   1/2 tsp
  5. Water    to knead dough
  6. Salt   a pinch
For filling
  1. Cumin seeds   1/4 tsp
  2. Garlic   3-4 flakes(finely chopped)
  3. Onion   1/2 (finely chopped)
  4. Spinach     2 cup(roughly chopped)
  5. green chillies   2-3no.s
  6. Mushroom   3 no.s(button mushroom) sliced
  7. Green Bell Pepper    1/2 sliced
  8. Onion   1/2 sliced
  9. Carrot   few sliced
Method
  • Take a bowl,add APF n milk mawa powder ,salt n mix well,then add melted butter and crumble it well n using water make a smooth ,softn pliable dough(not loose like chapathi dough but  little stiff like poori dough)
  • Then cover the bowl with plastic wrap and set rest the dough for 20-30 minutes.
  • Now heat oil in a pan,add cumin seeds n allow to sputter n add garlic fry lightly .
  • Then add onions n saute till turns pink n add chopped spinach n saute for a minute n turn off the stove.
  • Cool the spinach stir fry n grind it to a fine paste along with 2-3 green chillies and keep aside.
  • Now divide the dough in to 4-5 large balls.
  • Preheat oven at 375 degree Fahrenheit
  • On a well floured surface keep one ball n genlty flatten it using hands n roll it to 9-10" dia make it little thick.
  • Now keep 2 spoons of spinach puree n spread all over the rolled area  n to the spreaded spinach puree add sliced mushroom,onion n capsicum .(if you want can add some Parmesan cheese)
  • From one edge start rolling the filled dough n seal it with pressing them lightly.
  • Now cut in to 1 and 1/2" thickness. and on a lined or greased baking tray arrange the cur mini rolls.
  • Do the same for all the remaining dough ,arrange it on a baking tray n brush it with butter/oil lightly and bake it for 20-25 minutes. or till turn crisp n golden color.
  • Once it done serve the Garlic Spinach snack rolls with pepper powder on top n Relish with ketchup.
As this was my experiment i am not able concentrate on taking good pictures for pictorials..so sorry for that..This is so simple n you can try this with any of your desired filling.For my husband i sprinkled some red chilli flakes along with the filling since he love spicy snacks more.I forgot to brush the rolls thats the reason my rolls looks so dry.but it doesn't make a change in taste ..really so good.

Broccoli Idly Upma


            Another interesting n neat way to use broccoli, adding it to Idly Upma. Idly upma are very quick ,simple n yummy breakfast with left over idlis n even perfect for kid's lunch box too. Simple upma turned out healthy n more flavorful with the addition of broccoli n peas. No need for any special side dish simple ketchup is enough. So you also try adding broccoli or any desired veg to your Idly upma and enjoy!!!

Broccoli Sesame Flavored Rice


         Now-a-days i myself wonder about my cooking :) making so many changes to usual cooking recipes.This recipe was my grandma's Kathirikkai Ellu Sadham, made some changes n tried with Broccoli n lima beans.this is easy,simple n one pot meal..Very yummy n flavorful rice. For this recipe i recommend to use freshly prepared ground spices ,This broccoli event makes me to cook more broccoli recipes n now my kids totally loved this veg in any form  happy na :) Try this interesting sesame seeds flavored one pot meal,perfect for your lunch box.

Spinach Vegetable Idli N Oothappam


Ingredients
  1. Idly batter    2 cups
  2. Spinach    1 and 1/2 cup(finely chopped)
  3. Carrot   1 medium(dinely chopped)
  4. Beans   3-4 (finely chopped)
  5. Garlic   3-4 flakes(finely chopped)
  6. Ginger   1" piece finely chopped
  7. Mini Red n Orange Peppers   each one (finely chopped)(optional)   
  8. Onion   1/2 (finely chopped)
  9. Turmeric powder   a pinch
  10. Mustard seeds    1/4 tsp
  11. Urad dal    1 tsp
  12. Curry leaves    few finely chopped
  13. Oil    1-2 tsp
Method
  • Wash n finely chop all vegs n spinach n keep aside.
  • Heat oil in a pan,add mustard seeds wait till sputter n add urad dal, ginger n garlic fry lightly ot till urad dal turns golden color. 
  • Then add onions n curry leaves ,saute till onion turns pink and add all the vegs n stir for a minute. 
  • After that add turmeric powder,litle salt n stir everything well. 
  • Lastly add chopped spinach n stir well and turn off the stove. 
  • Now add the spinach n veg misture to the idly batter and mix well. 
  • Take idly mould n grease the mould with oil/ghee,and pour a ladle of batter and steam for 10-15 minutes or till done. 
  • Serve spinach vegetable idly with any chutney/sambar. 

Spinach Vegetable Oothappam

   I tried oothappam also with the same n same spinach veg topping...that was newly named by my kids as "Pizza Dosai" :)  they love the oothappam than Idly.
Heat a tawa/griddle,Pour 2 ladleful of batter and spread lightly n make thick crepes..and apply the same veg toppings all over the oothappam ,drizzle oil n cover it for a minute and open the lid and turn other side cook till crisp or done.Serve hot with desired chutney/sambar.

Note: you can also make puree of spinach n add to the batter along with sauted vegs.I didnt add so because my kids wont like the green color idly :)

Brown Beans n Black eye Peas Tikki


             Hello friends.hope you all enjoyed your weekend..wishing you all a great week ahead.Coming to this recipe,Getting bored with sundal for a change made this Tikki with brown beans n black eye peas.I made this in hurry so not able to cook this tikki with patience...just like that i prepared fast n presented fairly.As my kids were goin to their swim class for the past 2 weeks so evening  i don't find time to spend in kitchen.some how i managed ..thats the reason..my previous post also don't have step wise or enough preparation pictures.
But the recipes are so simple, easy n yummy.Brown beans n black eye peas are rich in proteins,fiber,calcium n other  minerals too.My kids are not fond of sundal but they had more than 2 tikkis ..was so happy .So u also try to feed legumes in an interesting way like this ...Try this !!!

Ingredients
  1. Brown beans/Kashmiri Beans    1 cup
  2. Black eye peas   1/2 cup
  3. Potato   1 no.(boiled n mashed)
  4. Carrot   1 no.(shredded)
  5. Onion   1/2 (finely chopped)
  6. Cilantro    5-6 twig(finely chopped)
  7. Ginger   2" piece(finely chopped)
  8. lime/lemon   1/2(squeeze the juice)
  9. Chilli powder   1/2 tsp
  10. Amchur powder    1/4 tsp
  11. Cumin powder   1/2 tsp
  12. Hing powder    a pinch
  13. Salt   to taste
  14. Bread crumbs     1/4 cup
  15. Sooji/fine rava   2 tbsp
  16. Maida    1 tbsp(mixed with  1/2 cup water)
  17. Oil    to roast the tikkis
Method
  • Soak the beans n peas for 6-8 hours and pressure cook with enough water to 2-3 whistles.
  • After that drain the water completely and mash then nicely using potato masher or in processor.
  • then transfer the mashed beans n peas to a wide bowl/plate,add all other ingredients "from potato to salt" n mix everything well.
  • divide the mixture in to 10-12 lemon size balls
  • Now heat a tawa ,meanwhile take one ball gently flatten them using your palm n dip in maida water n roll in bread crumbs n rava mixture .do the same for all the balls.
  • On hot tawa add few drops of oil n place 3-4 tikkis at a time(based on the tawa size) and cook in medium heat.
  • Cook for 3-4 minutes and turn other side gently and cook till crisp n brown on both sides.
  • Then remove from the tawa ,drain on paper towel and serve hot.
  • Garnish the tikki with ketchup,finely chopped onions n lemon wedges or to your choice.

Note: If you feel the beans mixture is too sticky n not able to roll n pat it, just add 2 spoons of bread crumbs n mix it well.

Mushroom Paneer Gravy


           Recently saw this mushroom gravy in one TV cookery show,this gravy was made with coconut paste..the recipe was so interesting ..soon I tried this gravy ...this is a delicious n spicy gravy with coconut paste..I added some home made Paneer also to it.Both Mushroom n Paneer are rich in protein n other minerals n vitamins.to know more facts about vegetables n legumes rich in protein content ..click Here.I served this along with multi grain Paratha..on the whole our Dinner was so healthy n filling.

Broccoli Lemon Poha

       
             Now-a-days my kids love poha more and they feel more comfortable ..for me also its easy n quick to prepare..its really a very tough job for me to feed them vegs..now they become Toddlers and started saying big "NO" to all vegs n greens. Particularly a strong hatred towards Broccoli,becoz of its green color..Sanjay use to say its green color Mummy, so it will be spicy.. i don't want that :) So i have to try n experiment new varieties n combo to feed them easily.Mango poha n Spinach Poha were fruitful,they loved it ..so this time tried lemonee poha with broccoli florets ,nuts,raisins n few mini sweet peppers. Result was awesome n they eat broccoli also. Hope you too like this recipe...

            Stuffed Bread are our fav snack cum breakfast.I tried so many stuffing with bread.On seeing Sobha's event Cook It Healthy-Proteinicious theme first ingredients came to my mind was "Soya"..As Soya/Soy Beans/Soya Chunks are rich in proteins when compared to milk, meat, egg. Potato Spinach Stuffed Sweet Peppers


        Few days back my H bought this mini sweet bell peppers from grocery shop n asked me to do some snack with it. These peppers little sweet in taste. I tried stuffed peppers with potato spinach n garlic. I made the filling little spicy so the outer sweet pepper with inner spicy potato spinach filling paired very well and tasted so delicious. Pigeon Peas Tomato Bath


             Pigeon peas/Tuvarai  fresh vegetable form of Tuvar Dal.This recipe is nothing but the same Arisi Paruppu Sadham of my mom's recipe .She use to make this simple one pot meal more delicious by adding more tomatoes and garlic.She use to make it with tuvar dal,for a change i tried with frozen Pigeon peas/Tuvarai...taste was same like Arisi paruppu sadham with mild tangy n garlic flavor.Brinjal poriyal,potato fry,vazhakkai varuval or a simple mango pickle are best combination for this rice.
           As I am sending this recipe to the event My Mothers's Kitchen..i would like add very few words about my mom's cooking... As I already told that i learnt My cooking from my Mom only..she is my Guru.But she leant her cooking only after her marriage :) I love her cooking a lot..mainly rasam n biryani.I proudly say that my mom's Rasam is the bestest rasam i tasted.Even all my relatives are a big fan of my mom's rasam.She use to cook very fast n doesn't like to be in kitchen for long time..Now after marriage that too after coming here(US), i miss my mom n her great cooking a lot :(  ok lets move on to the recipe...

Interesting facts about Pigeon Peas:It is rich in protein, minerals and is recommended for growing children.Pigeon Pea is rich in potassium, phosphorus, magnesium and calcium. It has good amount of iron and selenium and small amount of zinc, copper and manganese.Pigeon Pea has good amount of Vitamin A, Niacin and small amount of thiamin, riboflavin, Vitamin B6, folate and pantothenic acid.Pigeon Pea cures cough, poisoning effect, gas troubles, acidity, stomach pain and piles. It makes a balanced human food, quells swelling of internal organs and with water it cures intoxicating effects.

Ingredients
  1. Rice    1 and 1/4  cup
  2. Pigeon Peas   3/4 cup
  3. Onion    1 large (sliced)
  4. Tomato    2 large (chopped)
  5. Garlic   6-7 flakes(peeled n cut in to small pieces)
  6. Curry leaves   2 sprigs
  7. Green chillies   4-5 (adjust acc. to your taste)
  8. Sambar powder   2 tsp
  9. Turmeric powder   1/4 tsp
  10. Salt to taste
To temper
  1. Oil    2 tbsp
  2. Ghee   1 tbsp
  3. Mustard seeds   1/2 tsp
  4. Chana dal   1 tbsp
  5. Jeera/Cumin seeds   1/2 tsp
  6. Hing powder  1/4 tsp
  7. Dry red chillies   2-3 no.s(broken)
Method
  • Wash rice and pigeon peas and soak rice separately for at least 15-20 minutes.
  • Heat oil + ghee in a pressure cooker,add the tempering ingredients and wait till sputter and fry them lightly.
  • After that add sliced onions n garlic and saute till onion turns translucent.
  • Then add tomatoes and saute till soft n mushy.
  • Now add the pigeon peas stir fry for a minute,then add turmeric powder n sambar powder stir well .
  • And add enough water (to cook  rice) and enough salt mix well and bring it to boil.
  • When it starts boiling add soaked n drained rice ,stir well and close it with a lid and pressure cook for 1-2 whistles.
  • then wait till pressure downs,and open the cooker and add some finely chopped cilantro and give a gentle mix.
  • Thats it...tangy n delicious Pigeon peas Tomato Bath is ready.

Raw Red Banana Roast/Sev Vazhalai Varuval


               For the first time i tried recipe with Raw Red Banana(Sev Vazhai).My H bought Red banana which was raw and doesn't have any symptom to ripe even after 10 days .So i wanted to do some experiment with it.So i tried roast with boiled raw red bananas.To make it more interesting and yummy i tried adding Pitali Podi to it.I came to know this flavorful spice powder recipe from Nisha's Potato Pitali Roast...I liked that spice powder recipe so i bookmarked it and tried with this red banana..result was awesome ,very flavorful goes well with any variety rice,rasam sadham etc.We had this with Arisi Paruppu Sadham ..

Ingredients
  1. Raw Red Banana   2 no.s
  2. Onion   1/2 (sliced)
  3. Curry leavs    few
  4. Mustard seeds   1/2 tsp
  5. Urad dal   1/2 tbsp
  6. Hing   a pinch
  7. Oil    1 tbsp
For spice Powder
  1. Oil    1/2 tsp
  2. Hing   1/4 tsp(i used hing powder)
  3. Chana dal   1 tbsp
  4. Dry red chillies    4 no.s
  5. Coriander seeds   2 tbsp
  6. Dry grated coconut   2 tbsp
Method
  • Heat 1/2 tsp oil in a pan,add chana dal,red chillies,coriander seeds fry them lightly in medium heat.
  • Then add hing powder and fry well and lastly ad coconut powder and stir well and roast them for a minute and remove from the stove.
  • Cool completely and grind it to a little coarse powder and keep aside.
  • Pressure cook the raw red bananas with a pinch of salt .(do not over cook or too mushy)
  • Once the bananas get cooked,Peel the skin and cut the bananas in to bite size strips and keep aside.
  • Heat oil in a wok,add the tempring ingredients and fry the urad dal till turns light bown and add hing,curry leaves and onions.
  • Saute the onions for a minute and add boiled cut bananas ,pinch of turmeric powder and enough salt.
  • Stir everything well and add about 2 tbsp of spice powder and fry them for 2-3 minutes or till turn lightcrisp .
  • Thats it..serve as a accompaniment for any rice varieties.

Assorted Veggie Fry


        For the first time i am posting the recipe which was not cooked by me...thn who?? its my dear "H" who made this mixed veg fry and also named it as "Assorted Veggie Fry" :) very interesting right??? I love to cook only on week days...on weekends its a tough task for me i hate to enter kitchen...in case of chicken i love to try some new recipes from other blogs..other than that i hate to cook on weekends :( So sometimes my H rocks in the kitchen with his cooking talents.Few weeks back one Saturday he prepared this fry along with Rasam n microwave papads...yet simple but was a great tasty lunch for me.As soon as he entered the kitchen,my house was fully filled with spicy aroma and was irresistible so i want this recipe to be in my blog and asked him what else he used for this fry n made a note of it..For this fry He used 2 frozen vegetable packets,...1 cauliflower,broccoli,carrot another one onion all color bell peppers...He didn't ask me for recipe he himself made stir fry with his knowledge and the result was so yummy n the only bad thing was he used more oil :( If you want to taste to eat something aspecial,easy and very tasty try this assorted vegetable fry...

Ingredients
  1. cauliflower   1/2 cup (cut in to small florets)
  2. Broccoli    1/2 cup(cut in to small florets)
  3. Carrots   2 no.(sliced)
  4. Onion  1no.(sliced)
  5. Bell Peppers    1/2 cup sliced (red,yellow,green each)
  6. Garlic   3 no.s(crushed)
  7. turmeric powder   1/4 tsp
  8. chilli powder   to taste
  9. curry powder    to taste
  10. Crushed Pepper    1/2tbsp or to taste 
  11. Salt     to taste
  12. Oil    2 tbsp
  13. mustard seeds    1/2 tsp
  14. Chana dal   1 tbsp
Method
  • Heat oil in a sauce pan,add mustard seeds and allow to pop then add chana dal n fry lightly and add crushed garlic n onions fry for a minute.
  • Then add all the vegetables,dry powders n enough salt stir well and cook in medium heat.
  • Do not cover n keep stirring ,cook till vegs get cooked n turn little crispy..
  • Serve as a side dish for any rice,pulav/biryani or rotis.

Mango Poha


             My recipe for this Mango season,yes for the first time i tried mango with Poha.Same recipe like Mango Rice/Maangai Sadham.Tangy and delicious rice,very special in all Vazhaikappu(Baby shower).This Mango Poha is very simple 2 step recipe all you need is raw mango.I liked this very much as i love raw mango more.Try this !!!

Ingredients
  1. Poha   1 and 1/2 cup
  2. Raw Mango  1 no.shredded( leave seed part)
  3. Ginger   2" piece(finely chopped)
  4. Dry red chilli   2-3 no.s(broken)
  5. Curry leaves   few
  6. Cilantro   few finely chopped
  7. Chana dal   1 tbsp
  8. Urad dal   1 tbsp
  9. Salt    as needed
  10. Turmeric powder    a pinch
  11. Oil   2 tsp
Method
  • Wash Poha well and drain it and keep aside.
  • Wash the mango,peel skin and shred it and keep aside.
  • Heat oil in a wok,add  mustard seeds when it pop add chana dal,urad dal and fry lightly.
  • And add broken dry red chillies,curry leaves and ginger fry it and add the shredded mango and turmeric powder stir fry the mango for 1 minute and add the drained poha,enough salt and mix well.
  • Lastly add some finely chopped cilantro and mix well.
  • Thats it ready to serve.
NOTES:
Instead Poha use can also use cooked plain rice...n enjoy it as Mango rice/Maangai Sadham :)
Instead of sauteing the ginger, you can also add it in the last along with cilantro for more fresh flavor n taste.

Moongdal Palak Paratha


            I can say that dal parathas are the softest parathas ever i tasted...just love it a lot..so soft,fresh n very tasty parathas.Few days back i tried Moongdal n Spinach Paratha..the perfect combo and the parathas turned out so flavorful,soft and delicious one.My Kids loved this parathas a lot..they finished the parathas without troubling me. My Hubby too liked it very much and he requested to make it often, so happy with my cooking.
 Addition of Garlic n Ajwain makes the paratha makes more flavorful n also garlic -spinach combo works really very good...I made this parathas for dinner...before my marriage i never had any greens for my dinner..My Mom use to say that greens are not to take for dinner as it won't digest soon..is it?? Dunno but simply will obey them but, after coming here everything has changed..I use to make palak paratha, palak paneer, methi mutter curry, aloo methi etc with greens for dinner...To avoid such problems i use to add cumin, garlic, ginger, hing to the greens whenever i cook especially for dinner.
